Wild Rice Veggie Stir Fry

Wild rice is actually neither wild nor a rice! It’s the seed or edible
grain of an aquatic grass that grows in shallow water, mainly in
North America’s Great Lakes region. A fun fact… It’s native to the
Connecticut River Basin, and the stalks can reach up to 12 feet
high. The wild rice in this dish clearly had a firm texture and a
slightly nutty flavor. The hull is thick and rigid and therefore
required a longer cooking time (~45 minutes). The grains triple in
size so the 3 cups of dried wild rice that I used yielded 9 cups of
cooked rice. It can be used as a side dish, stuffing for meats, or in
soup.
