Blueberry Crumble Experiment

1. Question

In blueberry crumble, which ingredient swap (flour or sugar) will cause the biggest change to the eating
experience?

2. Information
Flour Information (based on observation and ingredients)
 The mixed gluten free flour is more stiff than the oat flour
 The oat flour has more fat than the MGF flour
 There are 3 more grams of carbohydrates in the MGF flour
 There are only whole grain oats in the oat flour
 The MGF flour is a mix of beans, whole grain flours (like sorghum), potato starch, and tapioca
flour
 Both flours call for storing the flour in a cool, dry place

Sugar Information
 Both sugars have the same amount of carbohydrates
 For every two teaspoons of sugar (a serving size), there is one more gram of sugar in the brown
sugar than the coconut palm sugar
 The ingredients in the brown sugar are organic cane sugar, and organic molasses
 There is only organic coconut palm sugar in the coconut sugar

Hypothesis: I think that the sugar would make more difference than the flour because there is a greater
amount of sugar than there is flour in the recipe.

3. Experiment Steps
 Calculate how many tablespoons of each ingredient are needed for each of the 3 crumble
toppings (divide current fractions by 3, then convert from cups to tablespoons)
 Clean cooking surface
 Take out all ingredients
 Mix 3 different crumble toppings
 Assemble the crumble and mark the sections 1, 2, and 3 with raisins
 Examine the uncooked crumble (appearance, smell)
 Bake
 Examine the cooked crumble (appearance, smell, mouthfeel, taste)
 Record observations

Conclusion: The result is that the crumble that was the sweetest was number 2. There, there was a
change of sugar. Though the coconut sugar had 1 less gram of sugar, I suspect that the coconut’s
sweetness took change on crumble #2. The crunchiest was #3. On #3, I changed the flour from the oat
flour to the flour with many ingredients. Now, I know that we should make both switches to out next
crumble because of the good advantages that take place.
