Green Banana ice

Ingredients

 20 ripe banana

260 g rice flour

 26 g all purpose flour

 50 g caster sugar

 400 ml thick coconut milk

 330 ml water

 8 pandan leaves

 30 g rice flour

 330 ml coconut milk

 60 g caster sugar

 1t salt

 1 can condensed milk

 1 bottel cocopandan syrup


 step 1

 PANDAN JUICE

 Cut pandan leaves into small pieces. Put them in the blender along with water. Blend and squeeze. (Or, you can use pandan paste/ pandan extract diluted in

water )

 Step 2

 GREEN BATTER

 Put rice flour, glutinous rice flour, caster sugar, coconut milk and pandan juice into a bowl. Stir until there are no lumps. Steam the batter for 20

minutes .
 Step 3

 WRAPPING AND STEAMING

 Make the green blanket using plastic wrap, or parchment paper so it doesn’t stick. 3 tbsp of green batter for each banana. Steam again for

another 15 minutes. (I use pisang kepok or saba banana)

 step 4

 CUSTARD

 For the custard, mix all the ingredients and cook over low-medium heat, whisk constantly until it boils and thickens. It will thicken up when it’s

cool down .
 step 5

 SERVING

 Cut pisang ijo (tip:use a buttered knife), add some ice cube/ shaved ice and custard. Drizzle with cocopandan syrup and condensed milk. (That

red thingy cocopandan syrup is made from coconut water and pandan juice, it’s a common product here.)
