Chicken Pot Pie

BACKGROUND INFO:
This recipe is very simple and easy to remember. It is the quick version of a traditional
dish. The result is crunchy and delicious.
INGREDIENTS:
For this recipe you need: 2 onions, 600gr of chicken thighs, some mushrooms, thyme,
olive oil and all-butter puff pastry.
STEPS:
First, chop the onions and heat a pan with some oil. When the oil is hot, add the onions
and caramelise them to add some sweet flavour.
Second, cut the chicken thighs into big chunks and small pieces to give texture to the
recipe. When the onions are brown golden, join the chicken and fry together.
Third, take another pan and heat without oil. After, slice the mushrooms and put them
on the pan. If fry with no oil, you get the wild flavour of the mushrooms.
When the mushrooms are ready, mix with the onions and chicken in one pan. Now add
150ml of water, some red wine vinegar and leaves of thyme. Let it cook some minutes
in the pan.
While it cooks, take the pastry and give it shape with a rolling pin. Then, cover the mix
with the pastry and make a hole in the middle with the thyme to let the steam out.
Heat the oven at 220ºC and bake the pie for 15 minutes. Finally, you can slice the pie
and taste this lovely dish.
