1. INTRODUCTION

1.1 Overview of the Resort

The comfortable Boracay Sands Hotel is a 4-star properly set 1050 meters

from Boracay White Beach. Behind the luxurious façade of Boracay Sands Hotel

lies Mediterranean interior.

Bulabog Beach is about 15 minutes’ walk away. The properly boasts

location within 3 km from Boracay Island city center.

1.4. Objective of the OJT

1.4.1. General Objective of OJT

The program aims to:

1. Provide tertiary students enrolled in Aklan State University the opportunity to

acquire practical knowledge, skills, and desirable attitudes and values in

reputable establishments/industries in our country and abroad;

2. Enhance the students work competencies band discipline as they relate to

people in the workplace.

3. Promote competitiveness of students for their training;

4. Strengthen and enrich the degree programs of ASU;

5. Provide opportunities to learn and network with experienced professionals;

6. Enhance student’s abilities to face challenges and complex task or problems

and

7. Clearly establish the roles and responsibilities of involved parties and provide

for protocols regarding different situations that may arise during the OJT.

1.4.2. Specific Objectives

To provide well-rounded, highly competent, technically-prepared, and

morally-upright technicians and entrepreneurs who will be the prime movers of

social, economic and technological progress in; Food Technology

Food Technology Objectives:

1. To produce students who have sufficient knowledge and technical skills

and various areas of food technology.

2. To develop in the students the necessary competencies, attitudes and

desirable values for development as leader and professionals.

3. To enable students to become entrepreneurs in specific fields/area of

Food Technology as solution for Unemployment and for economic

upliftment.

2. STRATEGIES AND METHODS

2.1. Pre-OJT Activities

October 25, 2018

The student trainee should have passed all academic requirements

prior to enrollment of OJT. The OJT Coordinator together with Ms. Ledgie

Magdaluyo conducted a first orientation for all of us fourth year students who are

going out of the campus for our On-the-Job Training. Dr. Harley P. Arboleda, the

Campus Director shared some advices that we should remember and consider in

our On-the-Job Training. Prof. Dionisio explained about the parents’ waiver or

consent for OJT and shared some advices based on his experience.

Also, Prof. Richard Dionisio invited Ma’am Gennibe De Pedro to orient us

about our medical examination, on what are the medical examinations we should

take and about our medical certification. She explained to us the things to

consider, on how it is done and the duration of time of our stool and urine.

I prepared the documents that are needed to be signed. I also got my

medical examination. I contacted Sir Jonathan about the requirements needed to

the hotel I will be applying for my On-the-Job Training. I also processed my

medical certificate as well as my barangay and police clearance, for the

requirements of the hotel.

November 13, 2018

Prof. Dionisio called a second meeting to all of us fourth year students

together with a parent or a guardian. Dr. Harley P. Arboleda, the Campus

Director gave a brief opening remarks about how is OJT done and what are the

things to be considered.

Also, Dr. Welfredo F. Cabelite Jr. shared some pieces of advice and

instructions for us to remember while we are on our training. Prof. Dionisio

tackles to the parents and guardians the things that they have to know about

their son or daughter. He also explained to the parents about the practicum fee

and that the On-the-Job Training requires financial assistance. He also

mentioned the students who haven’t yet able to complete their OJT requirements

to be able to prepare and complete it.

2.2. Orientation by the Cooperating Agency

The day before our training started; it was Nov. 21, 2018. The hotel

conducted an orientation for us trainees to familiarize ourselves about the hotel

and its policies. Mam Julie conducted the orientation and told us the things that

we have to while we are in our training. Here are the things that Mam Julie cited

to us:

 Body system in the first day of training.

 1 hour break. You can use your phone in your break time.

 Cleanliness, well-groomed, and always smile.

 Always repeat the order of the customer when getting the order for

clarification.

 Always put the signature/name and time in the OS.

 White form (OS) is for the kitchen/bar, blue form for the cashier.

 Customers can pay by credit card (master card or visa card) or cash

basis.

 Happy hour – 2 P.M. to 10 P.M.

 Morning shift is 5 a.m. to 2 p.m. and the evening shift is from 2 p.m. to 11

p.m.

 Day off is once a week.

 Don’t be shy to ask. Don’t be afraid if made a mistake; just learn from your

mistakes.

After the orientation, we had a tour inside the hotel and introduced us to all

the employees with the help of Sir Roberto.

Nov. 22, 2018, before we started our first day at the hotel, Mam Selina

conducted a short orientation about the hotel, its regulations and to familiarize

ourselves about the menu.

In my first day of training, Chef Reynan taught me what are the dos and

don’ts in the kitchen, all the tools and the equipment that they are using and the

name of all the ingredients and where it was designated to put.

2.3. Actual On-the-Job Training

On-the-Job Training is a part of college curriculum where we develop our

skills through hands-on experience. On-the-Job Training is a very important

teaching tool not only to develop the skills of the students, but to expose their self

in an actual work related to the course they are taking up.

On November 22, 2018, I started my On-the-Job Training at Boracay

Sands Hotel, where I am with my only classmate Steben Zausa and the rest are

all from University of Antique. The Hotel accepted 10 trainees. I was assigned in

the evening shift in the kitchen. Steben was assigned in the dining in the evening

shift.

My immediate supervisor and the rest of the people in the kitchen are very

welcoming and very down to earth. Chef Reynan taught me what are the dos and

don’ts in the kitchen, all the tools and the equipment that they are using and the

name of all the ingredients and where it was designated to put.

They taught me what are the right procedures in every dish that was

served, and they also taught me what to put on the plate; the side dishes,

dressings and garnishes.

Later on, spending my third week of my training at the hotel, Chef Ricky

encourages me to cook desserts for the breakfast buffet. And since then I have

been the one who makes desserts for the breakfast buffet. Or sometimes Chef

Ricky would be the one cooking, and I am observing and at the same time

helping him. It was actually a great feeling when someone fully trusted you to do

a task. The pressure is on because of the responsibility, but once you made it

and the people love it, all the pressure that you felt turns into a warm feeling

which is inestimable.

I was also assigned at the egg station. Cooking pancakes and eggs for the

breakfast buffet together with Mam Laura. These are the task that I was assigned

or I usually do:

 Cooking desserts

 Cooking different kind of dishes

 Pizza making

 Egg station

 Dish washer

 Preparing for breakfast buffet

We were also able to attend a seminar about Food safety; the proper

handling of food, proper washing of hands and sanitation.

It’s sad that I wasn’t able to experienced being in the dining because I

spend my 800 hours straight in the kitchen, but the experienced that I gain

during my 800 hours training in the kitchen inspires me to learn more, explore

and develop my potential strength which I can turn into kinetic ones.

Three months was not easy, there are many challenges that was

encountered, but that made me strong enough to take those challenges into

opportunities which I could train myself to become the person I wanted to be in

the future.

3. RESULTS, OBSERVATION AND LESSON LEARNED

3.1. Problems Encountered

There will always be obstacles and hurdles along the way. Difficulties and

challenges are always present and you cannot evade it. First time is not always

that easy like how I was on my first day in the training. I have encountered a lot

of challenges and difficulties on my three months of training, it’s difficult but you

have to overcome it and handle it professionally. Here are some problems I

encountered:

1. New to the environment and you are not familiar to the people

around you.

2. I feel shy to ask something on the first day of my training.

3. I feel awkward because I was the only girl at the night shift.

4. I find it hard to adjust on their speed while preparing a dish.

5. I find it difficult to operate heavy equipment

6. I find it hard to communicate to other people with different

nationality like Chinese and Korean.

7. It’s hard for me to adjust on the schedule especially in the morning

shift.

8. Lack of transportation going to the hotel early in the morning.

9. Burns and cuts on my hand.

10. When there is a cruise ship and there are a lot of orders piled up in

the kitchen.

11. Lack of manpower.

3.2. Action Taken

In every problem, difficulties or obstacles there’s always a solution to

surpass it all. It depends on the person on how he/she will handle it. At the end of

the day, you can learn from those challenges. Here are some solutions I adopted

and applied:

1. There’s a huge adjustment because I am new to the environment and to

the people but because of patience I learned how to deal with it.

2. I reminded myself that it’s not that bad to ask questions and it is also a

way to learn more.

3. At first, it was awkward, but as the day passed by I learned how to

associate with them and later on Mam Laura was transferred to our

group.

4. I reminded myself to be patient. To be able to catch up with their speed in

cooking, it takes time and practice and that’s what I did.

5. Heavy equipment is a bit difficult for me, so I ask for assistance and help.

6. To be able to communicate to the people with different nationality I tried to

explain it with gestures or in action. I also tried to learn their basic words

and greetings in their own language. If I wasn’t able to understand them, I

ask my superiors for a help.

7. Every morning shift I have to wake up early in the morning, mostly 3:45

a.m. or 5 a.m.

8. Every morning shift, I wake up and prepare early so that I can catch up

with a motorbike or an etrike. But sometimes there’s a lack of

transportation, so I have to walk from the house to the outpost.

9. Since I was cooking and baking, I cannot avoid burns and cuts. So even

it’s painful, I always remember this quotation, ”No pain, no gain”.

10. When there are a lot of orders, presence of mind is needed. I have to be

calm and don’t be nervous, so I can avoid confusion and mistakes.

11. Sometimes there’s a lack of manpower so you have to do more than two

to three or more tasks. Just like the staff in the kitchen, I learned how to

multitask and be patient.

3.3. Lesson Learned

Experience is the best teacher, they say. That’s actually true. The training

I had at the hotel made me realize a lot of things not only the things that are

related to the career that I’m taking but also the things that contributed and

molded me for who I am today.

For three months of training at the hotel, I learned the valuable meaning of

teamwork and it is not only that you are working and helping each other, but also

working with care for each other, accepting each flaw and filling up the flaws of

everyone to make a better workplace.

As the day passed by as a trainee, I learned to be a hard-working person.

Finishing your task is important, but finishing it in the right way is momentous. I

also learned to conquer my shyness. Being vocal and not being shy about asking

anything to your superiors is also important to learn and also to evade accidents

or mistakes.

Welcoming the guests with benevolent smile is also important. Greeting

them and accommodating them with pleasant appearance makes them happy to

know that they are welcome.

Working with awesome people who love their work also gave a big impact

on me. Not only that they are good at their work, but they also prove that they are

loving and caring people. Being passionate in your work makes the people

around you love their work too.

The three p’s truly makes an unbeatable combination for success;

patience, persistence and perspiration. Without it this on-the-job training won’t be

that successful. Punctuality is also an important aspect to an employee.

Although, I am sometimes late with some reasons, I’m trying my best to wake up

early or go to the hotel earlier than the assigned time.

Hard work also is one of the best values I learned while I was in the

training. As my father told me, “Your burns and cuts will always heal and fade,

but the knowledge you learned from your superiors will always be a treasure you

can keep in the rest of your life”.

I also learned to appreciate even the smallest act that we do, and we learn

at school that we actually applied in the training. You always swept the floor or

mopped the floor to maintain the cleanliness like we always do at school in our

classroom. And it’s important to always clean your station after cooking or

preparing food.

All the lessons that Chef Ricky, Chef Romeo, and Chef Reynan taught

me, added a new layer into my personality which helped me, molded, developed

and improved my crafts. There’s always a room for improvement and each new

day is a new opportunity to improve, so always make the most out of it.

4. SUMMARY, CONCLUSION AND RECOMMENDATIONS

4.1. Summary

Three months as a trainee is difficult. You’re new to the environment. You

are not familiar with the people and you are away to your family. There’s a huge

adjustment. You wake up early not because you’re going to school, but because

you have a work. From being a student, your daily routine changed into

something tiring and unusual to you. But because of this a lot of realizations hit

you. You came to realize what’s the true essence of OJT is.

I am blessed to be one of the trainees at the Boracay Sands Hotel where

my weaknesses turned into strengths and that I was exposed to the reality of

what really work means.

This training taught me about what is the true meaning and essence of

teamwork. It also taught me about what is the importance of passion to our work.

Punctuality was also one of the aspects that a worker should take care.

Respect is also a big word that we should apply every day to all the

people we associate with. Whether we know them or not, they should be

respected.

Humbleness and kindness makes you a better person. So be humble and

never forget to treat people with kindness, it doesn’t make you less of a person.

Show your benevolent smile all the time, even to the guests in the hotel, it makes

them feel that they’re welcome.

All in all, this On-the-Job Training developed me and inspires me to

become a better person as I take the journey to reach the summit of my dreams.

4.2. Conclusions

Every experience makes you grow. This training gave me the impetus

feeling to do the best I can to achieve my dreams. This also serves as a stepping

stone for me to become a chef someday. It inspires me to discover and explore

more about myself and what can I do in the future.

This experienced enriched my knowledge and created a good foundation

of confidence to face the challenges to the path I am taking in the future. I felt

renewed to all the lessons and knowledge that I learned.

Despite all the challenges that I encountered during my training, there’s

always a silver lining along the way which will help surpass the problem.

This On-the-Job training also made me realize to be more determined and

be competitive to the new challenges and opportunities I’ll be dealing with in the

future. This training also taught me to have a positive outlook in every task that I

do.

Training has a huge impact not only on my skills but also to my

personality. Nothing beats experience as the perfect learning tool and I will

always be grateful that I was able to experience this training and I will treasure

and cherish every lesson of it whenever and wherever I go.

4.3. Recommendations

 Spending three months of my training at the hotel, I recommend the

hotel to provide enough ingredients for making desserts and

pastries as well as the tools and equipment.

 Also, based on the three months that I experienced in the training, I

recommend the University to provide enough tools and equipment

that the students can use for their learning and so that they can

practice, and they can familiarize their self on how to use it or

operate it.

 I also recommend the University to have a foreign language subject

added to the curriculum of BSIT major in Food Technology so that

they can understand the people that have a different nationality

even just the basic words.

 I also recommend the University to let the students who are taking

courses that is related to foods to have their own chef’s jacket as a

cooking outfit uniform, because there are some hotels that require a

chef jacket as their uniform.

 To the future trainees who will soon be going out of the school, I

recommend you all to love your work. Loving your work means that

you’re giving effort, the best that you can to complete the task you

were assigned to. Also, be punctual, and show respect to all the

people you associate with. Always smile and be friendly. Mostly, do

all things with a happy heart.
