Baked Steel Cut Oats and Vegetables

Spice pattern: ‘The Usual’ Indian

This is a middle of January, below-zero windchill type seriously warming dinner. Use McCann’s
Irish Steel-cut Oats if you can find them.

1 c steel cut oats (McCann’s preferred) 2-3 tbsp oil and/or butter
4½ c water ½ tsp turmeric
1 tsp salt 1 tsp ground coriander
1 med onion chopped ½ tsp ground cumin
1 carrot grated ½ tsp allspice
1 zucchini chopped ½ tsp black pepper
1 apple chopped

Combine all ingredients in an ovenproof dish, cover and bake at 425 degrees for about 45 minutes
to an hour. Stir and check texture - if it is too watery for you, return to oven uncovered for
another 5 minutes. If desired, serve with Miso-Onion Gravy.
