Introduction
Café Geneva is a restaurant situated in Faisalabad. It is a single operation restaurant that
offers multiple dishes including within continental cuisine. The café has a simple and quite
elegant structure and elevation. From friendly staff to great ambiance, from gracious
settlement to mesmerizing interior, the café has got amazing reviews from the visitors since
its opening. It was opened in 2019, and as a young business in the competitive market of
Faisalabad, it has been doing great up to date, providing dishes in the competitive prices. The
location is prime, Kohinoor City area of Faisalabad, as several popular eateries are operating
in the region. It is located at 14-A Kohinoor City Rd, Kohinoor City Faisalabad, Punjab that
has a lot of famous restaurants located there.

Layout
Café Geneva covers relativity a small area. The café has two floors and the ground floor is
spread at around 1000 square feet and the first floor is similar. The ground floor has around
five tables which can seat around 15 people in total while there are about eight at the first
floor. So, the total café area can accommodate approximately 50 to 70 people at a time. The
layout is fixed-positioned, as seating and tables are fixed and the customers move around and
the food is served on their tables. When one enters the restaurant on the ground floor there are
stairs on the right side of the restaurant that leads to the first floor of the restaurant. The
greeter takes the visitors to the table according to the number of customers and seats them on
an empty table. A waiter that is responsible for the table takes care of serving the menu cards
to each member on the table and then takes their order. The tables placed in lines on the right
and left of the restaurant have sofas along with them and the tables in the middle area of the
restaurant has chairs with it. The layout of the chairs can be changed accordingly if there are
no more sofa tables available to seat people more than 5 then they are adjusted on the tables
with chairs and more chairs are added up. That is an easy way to tackle the situation without
making it awkward for the customers. The order is taken by the waiter on the table and the
customers do not have to move to the counter to place the order. The kitchen of the restaurant
does not allow customers to come inside it but is placed in the right side of the counter. The
layout is the standard layout that is used by most of the restaurants and the transport is easily
possible and the tables and sofas are not easy to move from one place to another. In a fixed
position layout the seating arrangement of the place has to be decided in advance while
deciding the architecture of the place and how to plan the place in an efficient way and utilize
the space so that the customers can have a good experience and also the staff can easily
manage and do the working. Fixed position layout is an advantage for the places that are not
very spacious so the decided setting of the restaurant helps to accommodate more people and
knows how many people can dine in at a time that does not cause chaos.
The drawback in the layout is that the location of stairs is not appropriate as it is on the
opposite side of the kitchen so, waiters have to pass through all the customers to serve the
customers sitting upstairs and passing through the hall multiple times causes disturbance and
invades the private space of the customers. The opening and closing of the door causes
disturbance to the customers near the door because the outside atmosphere disturbs the inside
air conditioned atmosphere. The wall of the first floor is of complete glass that provides the
complete side of the outside area.

model
The four Vs of operational management are volume, variety, variation and visibility

4V Model
Volume: Café Geneva maintains appropriate levels of stock for all the ingredients required to
serve the dishes mentioned in the menu. The raw materials for the food have to be present in
an appropriate amount so that they do not run out of the ingredients if the demand increases.
It has not been quite a time that the business came into operation so it is difficult to predict
the demand and maintain the volumes due to non-availability of past-year records. The café
does not know that what dish is in most demand and what will be the choice of the customers
because the records are not available for the management so they have to keep in stock
everything that is a challenge for them to keep the name of café high. However, Café Geneva
keep the meat supplies up to date as the meat has an expiry that has a long time span so it
does not cause any trouble to store the chicken and beef. Volume predicting is an important
factor in running a restaurant successfully and that also includes keeping in mind the flow of
customers on public holidays. It requires extra ingredients that requires pre planning of
things.
Variety: Café Geneva has a large variety of dishes available and gives a wide variety to
customers to choose whatever they want to eat without restricting them to one type of dish.
Café Geneva is very famous for its rice products and its dish that has a fusion of desi and
Italian rice and tastes the best is very famous among the masses. It provides a wide variety of
sandwiches, burgers, rice and chicken dishes. The sweet dishes are also a must to try if you
visit Geneva. The presentation of the food and sweet dishes is extremely good and attracts a
lot of people that are fond of food photography.

Variation: Café Geneva has a demand variation during the week, as during week days, the
number of visitors is high on the lunch time, while on weekends, the dinner time is full of
customers. Particularly, the Friday is busiest with 8 pm to 10 pm have the highest number of
customers. The working staff of Café Geneva is very well trained, skilled and has an
extremely professional attitude for dealing with the customers and managing any situation of
chaos etc. They can easily manage any kind of flow of customers whether it be a huge
amount for example on weekends. They also have to manage how to keep the restaurants
closed during the day time in Ramadan and manage a large amount of customers at the time
of iftar.
Visibility: While the kitchen of Cafe Geneva is closed and the customers cannot see their
food being prepared however, the drinks counter or bar is visible. Customers can see while
their drinks including coladas, shakes, margaritas, or juices are prepared. The bar not only
seems clean and hygienic but also sorted and set in a disciplined manner. The proof to the
hygiene of the restaurant is the certificates of the hygiene control of the area as the customers
of the city are a bit phobic about the hygiene because of the news of sub-par conditions in
some restaurants. Even the waiters serving the food are wearing proper aprons and hand
gloves.

Quality
Café Geneva provides a great experience of good taste, quality food along with presentable
dishes that uses fresh and healthy ingredients. The creativity is considered as an important
ingredient in making the food and it is prepared very ingeniously. The serving of the food is
very limited but that can be considered as a marketing strategy to provide food with such
great taste that the consumer has to order it again or eat the same when they visit the café
next time. The café is famous for its brown ball desert that is served on the table and then the
hot filling is poured on the top of it that melts the custard ice-cream below it and provides a
very imaginable scene. The dish is very famous in the food bloggers and is renamed as the
Instagram dish as it is definitely posted on Instagram by the customers that visit it. Café
Geneva not only shows its artistic side in the making of food but also in the décor of the
restaurant. The color theme of the restaurant is light while the lights used are flashy to
compensate it and both of them complements each other. One wall of the café is painted pink
that and has a beautiful textured designing on it. It has frames that has pictures of famous
paintings. The pink color of the wall is in contrast with the other brown colored walls of the
restaurant. The other wall has two racks of brown color that has displayed a lot of vases and
pots that seem to be antique and are beautifully maintained. Stair case is also beautifully
designed and has a textured wall of golden color along with a decoration of the china plates.
The roof is also designed artistically. There are lamps installed in the walls in between every
table that when lit at the night provides a great ambiance. Price of the food is considered a
little high comparing them to the serving of the dish but the taste and environment of the café
recompenses it and the food is considered to be worth the money.
The taste of food is delicious and up to the mark. The food offered is very inimitable and
attracts the foodies. The presentation of the food and its taste makes the experience of the
customers memorable. However, the quantity is less for one person in single-serving dishes
as it does not completely fulfil the appetite. The ambiance is filled with aroma of delicious
food and adds to the overall atmosphere of the café. The staff is trained and friendly.
7 Wastes
Overproduction is one of the mainstream wastes in the restaurants and so is the case with café
Geneva. Because stocking too much causes storage costs and excessive capital tied up in
inventory. Wasteful motion is caused when the waiters have to cross through the entire hall to
reach the stairs from the kitchen. Also, the waiters can get tired in the busy hours particularly
because of this up and down movement.

Proposed improvements

Increase the serving of dish:


Café Geneva has a large customer fan base and a lot of customers visit it on daily basis. The
only drawback learned as the feedback from the customers was the quantity of the dish as it is
not even enough for one person. Where some restaurants provide a dish enough for 2 people
in the same price, this is a major drawback for café Geneva and they should make
improvements in order to make it the first choice for customers.
Discounts:
The regular customers of the restaurants should be given discounts or the customer discount
should be provided on special occasions in the form of deals or something like that. The food
bloggers give a lot of business to the restaurants so they should be given a complementary
dish or share their pictures on the page of the restaurant giving them the same recognition
they give to the restaurant.
