HOW TO DO IT…
1. Preheat the grill to medium-high and
line a grill pan with kitchen foil.
2. Thread the salmon onto 2 skewers.
Mix the oil with the turmeric and chilli
powder and brush the mixture onto the
salmon. Cook under the grill for 2-3
minutes on each side.
3. Meanwhile, to make the chickpea
saag, heat the oil in a medium pan and
cook the shallot, garlic, ginger and chilli
for 2 minutes over a low heat. Add the
tomato, chickpeas and spinach and

 165g skinless chicken  ½ teaspoon clear honey

HOW TO DO IT…
1. Put half a teaspoon of the lemongrass paste into a
shallow bowl, add the ginger and half the lime juice, then
stir until a paste forms. Add the chicken and rub all over
with the paste. Mist with cooking spray and set aside to
marinate for 10 minutes.
2. Heat a nonstick griddle pan to medium and cook the
chicken for 10-12 minutes on each side until cooked

HOW TO DO IT…
1. In a medium bowl, mix together the mince, courgette, spring onion,
spices, herbs and enough of the beaten egg to bind the mixture (you’ll
need about 1 tablespoon). Season and shape into 3 meatballs, then mist
all over with cooking spray.
2. Heat a small nonstick frying pan and cook the meatballs over a
medium heat for 12-15 minutes, turning until cooked through and golden.
3. Meanwhile, to make the ragout, heat the oil in a medium nonstick
frying pan over a medium heat. Add the shallot, pepper and courgette
and cook, stirring every now and then for 5 minutes. Add the garlic,
oregano and chilli flakes and continue to cook for 1 minute. Stir in the
chopped tomatoes and lentils and bring to a simmer. Cook for 5-6
minutes, until thickened. Season to taste.
4. Serve the vegetable ragout with the meatballs on top, garnished with
the extra mint and parsley.
