I'm writing this letter In regards of your concern of our product CAFÉ COMBATE.

Please allow me to describe the process that follow the production. This process is approved and
certified by HAACP to assure the quality and safety of our products.

The process is as follows:

Reception of ingredients from the grower Green (Raw) coffee beans on 68 Kgs Sack
• Storage of the raw beans on 20 sacks pallets and usage on FIFO principles
As we receive our clients order productions proceeds as follow:

1. Screening and cleaning (destone) of raw beans. To remove foreign materials like
wood, stones, metal, etc..
2. Transportation to green bean silo by ducts.
3. Metal attraction. With magnets as the beans fall to the roaster
4. Roast. Depending on the roast type the roast time is between 19 —20 minutes at
2300 C next between 11-12 minutes at 2700C. Checking every minute the color
until desired shade is attained. When shade is attained the roasting is stopped
with cold water for about 15 seconds.
5. Cooling. The coffee is transported to the cooler and water is added for about a
minute. It waits about 8-10 minutes and is quality sampled to check characteristics
like density, humidity, color.
6. Screening. The coffee is screened for foreign materials
7. Transportation to grinder silo.
8. Grinding. With a rolling grinder the coffee is grounded to the desired
specifications. And quality verified.
9. Packing. The coffee is packed on the desired bag on this process the bag is
perforated with a pinprick to allow degassing to prevent that the bags inflate with
the coffee gas. On this step is also codified, labeled and packed on cases for
storage.

The perforation is made because the roasted coffee release important quantities of C02. This is a
slow process of about 2 to 4 weeks. This is because the coffee beans holds this gas from the
roasting process. This is why the bags must have a release for this gas.
