Steps to cook yangnyeom chicken

Hi everyone, my name is Ridho Arfiliando and today I would like to explain to you all
about how to cook yangnyeom chicken. There would be 5 main points in this presentation, they
are introduction about yangnyeom chicken, ingredients, preparation, frying the chicken and mixing
the chicken with the sauce.

Before goint to the cooking parts , we need to know first what is yangnyeom chicken.
Yangnyeom chicken (양념치킨) is a crispy and tender Korean fried chicken smothered in a
sticky, spicy red sauce. It literally translates to seasoned chicken, it’s one of many variations of
spicy chicken dishes that are made popular by fast food chains in Korea.If you like deep-fried
chicken, you should really give this Korean fried chicken recipe a try, especially if you haven’t
tried “the other KFC”. The thin crust is extra crispy from double frying, and the sweet and spicy
sauce is simply amazing!

If you want to cook yangnyeom chicken, you will need to prepare 14 things. They are:

1. 1,5 kg of chicken chunks

2. Kosher salt

3. Ground black pepper

4. Potato starch powder

5. Flour

6. Sweet rice flour

7. Egg

8. Baking soda

9. Vegetable oil
10. Garlic

11. Ketchup

12. Hot pepper paste (gochujang)

13. Corn syrup

14. Apple vinegar

After you prepare all the ingredients, we can start the cooking. First you need to rinse
chunks of chicken in cold water and drain them. After that out the chicken into mixing bowl and
add 1tsp ground pepper, 1 tsp kosher salt, half cup of potato starch powder, a quarter cup of all-
purpose flour, a quarter cup of sweet rice flour, 1 tsp baking soda and an egg.

Mix them well by hand and completely coat the chicken. After mixing, let the chicken set
for about half an hour. While that, you can prepare the frying pan by adding 6-7 cups of
vegetable oil and heat it up.

When the chicken is set and the frying pan is ready, you can start frying the chicken. If
you want to check the oil ready or not, you can test it by dipping a sample chunk of chicken into
the oil. If the oil bubbles, then it is the right temperature to start frying.

If you want to make the best crispy chicken, you need to double fry the chicken. Fry the
chicken for about 10 minutes over high heat. Take them out of the oil and shake them in a
strainer. Let them sit for a few minutes. After that fry them again for another 10 minutes until all
pieces look golden brown and crunchy outside. Strain them again.

After that you can start making the sauce. Put 1 tbsp of vegetable oil and 4 cloves of
minced garlic into a heated pan. After the garlic smells good, add 1/3 cup of tomato ketchup, 1/3
cup of corn syrup, ¼ of hot pepper paste, 1 tbsp of apple vinegar, and simmer the mixture for
about 7 minutes. Keep the heat low so the sauce doesn’t get burnt. Turn off the heat and pour the
fried chicken into the pan and mix it with the sauce. For garnish, you can add a sprinkle of
sesame seed. Your yangnyeom chicken is ready to be served.
