materials, and extreme processing conditions. BRIFISOL® 270 mitigates these issues while improving both quality and yield in the finished
product. Succulence, natural fiber definition and moisture retention are all added benefits when BRIFISOL® 270 is used in meat, poultry
and seafood applications.

Suitable for all whole muscle, formed and comminuted meat, poultry and seafood products. Can be used in injected,
tumbled, or static marinated products.
When additional acidulants are utilized for extending the shelf life of meat or poultry products, the buffering capacity
must be considered as it impacts yield. Brifisol 270 provides improved buffering capacity when compared to other
phosphate blends or STPP.

Challenged Cook Yield Test : Deli Chicken, Sliced Solubility Performance

When highly concentrated phosphate solutions are prepared (5%), solubility


performance is equivalent between BRIFISOL® 270 and STPP at 41˚ F.

Application Results: Chicken Deli Slices


Chicken deli slices were produced in log format and sliced.
Product was cooked to an internal temerature of 180˚ F. Average purge weight (grams) from Slurries containing lean
ground meat samples containing STPP ground beef, water, salt
TESTED INGREDIENT YIELD (%) HARDNESS (kg) or BRIFISOL® 270 and either BRIFISOL® 270
or STPP were blended for
