• “Food safety” means assurance that food is acceptable for human consumption according to its intended use.
Food safety testing is a technical method of producing, handling, and storing food to prevent foodborne diseases.
It is performed to supervise quality and prevent the occurrence of foodborne illnesses, toxicity, or poisoning.
• Genetically modified (GM) foods are foods derived from organisms whose genetic material (DNA) has been
modified in a way that does not occur naturally; for instance, through the introduction of a gene from a different
organism. GM food safety testing is defined as the detection of genetically modified organism for a specific trait in
food, at various levels of the food supply chain through genetic engineering techniques that need to comply with
the regulatory approval process and necessitate international trade and consumer awareness for safety.
• A food allergy is an abnormal, overstated reaction of the immune system to certain foods. It involves the production
of a particular kind of antibody which reacts to a specific food component and, in doing so, causes an allergic
reaction. Food allergen testing is used to detect allergens in finished products and raises alerts for areas of
processing facilities that are required to be decontaminated.
• Food pathogen testing is a food safety testing technique conducted to ensure food safety against pathogen
contamination and compliance of food products to safety standards set by the regulatory bodies across the globe.
The emphasis on the overall food quality and safety has led to increasing demand for food testing. Processed
foods and agricultural produce are tested to ensure high-quality end products.
• Pesticide residue could be defined as trace amounts of agricultural chemicals or their breakdown products that
remain in or on an agricultural product as a result of pesticide usage during cultivation. Pesticide residue testing
is the process of sampling, extraction, separation, detection, and identification of potential pesticide residues in

to the FDA, in 2012, it was anticipated that nearly 48 million people in the U.S. are affected by foodborne illnesses

around 1 million people suffer from foodborne illnesses and nearly 20,000 people receive hospital treatment for
the same. About 500 deaths have been reported due to food poisoning each year, which costs Euro 1.5 billion.
• There have been a number of product recalls in the food industry after the inception of safety regulations or
product defects at the consumer end. For example, in 2013, Fonterra Co-operative Group (New Zealand) had to
recall its products due to botulism-causing bacteria contamination. In the same year, an Australian dairy firm had
to recall its batch of products due to listeria contamination.
• According to the Food Standards Agency (FSA), campylobacter contamination is the most common source of
food poisoning in the U.K. An estimated 280,000 people per year are affected with campylobacter contamination
present in chicken. In 2014, in the U.K., a recent study by the FSA announced that most of the supermarket
chicken was contaminated with campylobacter bacteria. It also found that 59% of birds carried the potentially
deadly bacteria, with 16% being heavily contaminated. More than two-fifths of retail chicken fell into the medium
or heavily contaminated categories.
• According to a Centers for Disease Control and Prevention (CDC) report in 2011, about 48 million Americans
get sick, 128,000 are hospitalized, and 3,000 die each year from food poisoning/foodborne illnesses. Salmonella
is a major pathogen of concern for food safety. It is the most frequently tested pathogen in food products. It
is a bacterium that causes gastrointestinal illness and is often associated with poultry or eggs. It is one of the
most common bacterial bases of diarrhea in the U.S. and the most common cause of foodborne disease-related
hospitalizations and deaths. Salmonella still exists in foods, especially in meat and poultry.
• The prevalence of contaminants in food products responsible for foodborne illnesses has resulted in the

introduction of new legislations for implementation of food pathogen testing. Recently, melamine testing has been
added in food safety regulations, after contamination of dairy products with melamine. The food contact materials
legislation has also been emerging, placing more focus on unlisted substances (such as impurities, degradation
