Thank you for checking out Bluebird Barbecue where we celebrate American
Regional Barbecue with a Vermont twist! Our all natural meats are slow
smoked on premises in our 1.5 ton Southern Pride Smoker and are paired with
traditional barbecue sauces and sides made from scratch. Relax, unwind, and
enjoy southern style barbecue in one of our many dining rooms that can
accommodate groups of all sizes. Our menu offers large "family style" platters
perfect for group gatherings. During the summer months dine out on our
screened, enclosed porch with Winooski River views. Our entire barbecue
menu is also available for take-out.
We are focusing our energy on the safety and well-being of our team. We will
then be reviewing our guest communications to make necessary adjustments

I have spent my working life in foam, beer foam that is, brewing beer,
conjuring up mixtures of malt and hops to ferment into a crowning moment of
beer. Great beer has always sat under foam.
 Our beers regularly rotate and we do not guarantee that this list is always
correct. We offer a rotating selection of beers that vary based upon the season
and our current inspiration.
It’s not one ingredient that gives stability; it’s many interwoven to create a
structure of strength pouring out visual excitement. As I sit for a time, I enjoy
that moment. All that remains is the lacing that adorns the empty glass and the

While it is always crowded, that's with cause. Because of El Cortijo is one of the
best restaurants in Burlington. Just be patient about getting a table, or come
on off hours. Good location to grab dinner after shopping in the Church Street
Market. Not a very big restaurant and it was very busy. Service and food were
very good. No frozen margarita though. The ingredients and combinations are
creative and tasty; the execution of the food is average. The corn tortillas were
rubbery and the kale in my veggie street tacos is really tough. The flavors are
great.

Pascolo is in a very nice basement room, has a great bar and lots of
atmosphere. Pascolo is one of the Farmhouse group of restaurants in
Burlington Loved the fresh pasta and the interesting combinations in the
sauces. Prices are just right, and the service is very good in a really busy place.
Good Italian food and reasonable prices. Portions are not large but certainly
adequate. Service was excellent. Nice atmosphere and decor. The restaurant s
located below ground level, but also offers outdoor seating. Food is authentic
Italian and is fantastic! Good wine selection. It is reasonably priced.

Pin gala is a Sanskrit word that is fun to say and it means "sun energy". Seeing
how all of the foods we prepare here feed on that energy, as do the hustle &
bustle food truck cultures of the world, it seemed rather fitting. Oh, and
Sanskrit is the language tied to yoga, and lots of us are into doing
yoga. Amongst fresh juices, smoothies, salads, and light bites, some of our
offerings resemble their more naughty counterparts (i.e. bacon, burgers).
Except at Pin gala, our menu is 100% plant-based and our ingredients are
packed with easily assimilated nutrients, so they nourish the body while
satiating hunger and delighting the palate. Vegan diets have been proven to
boost energy, improve digestion, and strengthen the immune system. With
everything from carrot cake whoopee pies and chewy cookies, to the "grilled
cheesiness" and the "ELT" (oh hello, did someone say eggplant bacon?!), our
menu offers a worldly array of classic comfort foods 4 with a creative twist.
Whether you're looking for something familiar or wanting to dip into new
territory (Cashew Cream Alfredo? Don't mind if I do), you'll feel right at home

Divine interpretations of Middle Eastern staples served tapas style. We
stumbled upon it without a reservation and were grateful for two open bar
seats. The cocktail menu was the most intriguing the lamb crackers and baba
ganoush were an excellent beginning. The chicken wings, pied, crispy potato
were all wonderful. Save room for the unique tahini sundae for dessert. Staff
was friendly, helpful and knowledgeable. This restaurant serves Mezze plates.
It might seem like a good idea to be able to get several small dishes instead of
one large serving, but be aware that you will end up paying a lot of money for
very little food. This is true at the Mediterranean places but Honey Road takes
it to extremes.

The owner, Earl (and his family) is proud custodians of this long-time treasure.
Enter as a customer and leave as a friend. Sit at the horseshoe shaped lunch
counter, sit elbow to elbow and enjoy the company of the other diners as well
as Earl and his family. The daily specials (patty melts on Tuesday) are

outstanding and a great value. The breakfast sandwiches are legendary and
large and they get everyone talking. This is not a place where people stare at
their phones. They actually engage with one another.
The diner is small and authentic; everyone sits at the counter area. The lady
who brought food is so nice and warm! The pancakes and of course maple
syrup are the best, big and fluffy! There is real traditional breakfast food and
some unique colossal breakfast sandwiches. A must stop if in the area. 
 It is simply decorated restaurant with a horseshoe counter.

We opened Hen of the Wood - Waterbury in October 2005. For me, it was the
opportunity to put together a restaurant that would be the culmination of
everything we had casually discussed for several years; a warm inviting
atmosphere, a historic and visually appealing setting, seamless service and
most importantly outstanding wine and beautiful food. We imagined a casual
yet professional staff and food cooked from as close to the source as possible.
For our team it would be the beginning of a commitment to the amazing
farmers, cheese makers and others who make Vermont so special.
Fast forward to today and now we also have Hen of the Wood - Burlington and
Doc Ponds Eat & Drink in Stowe. Our goal is to provide a true Vermont dining
experience at all of our establishments, and showcase the region’s most
vibrant foods.

At Bleu, we aim to provide a warm, friendly and refined dining experience in a

Chef Doug Paine celebrates the connection of Lake Champlain to the sea by
sourcing the finest, freshest quality regional seafood. Each morning, Doug
networks with local and regional farmers, purveyors, and fishermen to source
our menu, with daily deliveries from the ports.
Here in the heart of western New England, Doug draws inspiration and from
Montreal and the St. Lawrence Region, as well as selecting from the fresh
catches the cold Atlantic waters of the New England coast and the Maritimes.
Outside of our Region-Doug receives wild salmon directly from a sea captain
friend in Alaska.
At Bleu, we strive to source seafood raised in sustainable fisheries, and serve
simple, yet sophisticated preparations to present the inherently dramatic and
delicious flavors and textures of the harvest.

Citizen Cider

Justin Heilenbach, Bryan Holmes and Kris Nelson founded Citizen Cider in 2010
on a hunch and some good old-fashioned hard work. Kris was working as a
wine salesmen, Bryan as a chemist and Justin as a small farmer. All discontent
for one reason or another, they started pressing sweet cider in Kris’s barn and
fermenting test batches of hard cider in Bryan’s basement. As it happens, they
discovered that their ideas about hard cider translated into some pretty unique
and interesting finished products. Upon developing their Flagship brand,
Unified Press, these guys decided to give it a go and leased a production space
at Fort Ethan Allen in Essex, Vermont. They formulated a plan with Stan and
Mary Pratt of Happy Valley Orchard in Middlebury, Vermont to handle the
entire cider pressing. In the late fall of 2011 Stan pressed out 5000 gallons of

his best apples and handed it over (literally, because the boys had no money)
to Citizen Cider. The bulk of this work took place in less than ideal conditions;
out of doors, in the cold and wet November nights of Vermont. They were

building character.
Citizen Cider fermented the majority of this cider to produce Unified Press.
They sold the first keg on February 3rd, 2012 to the Farmhouse Tap and Grill in
Burlington, VT. In these early days Justin, Kris and Bryan lacked time,
equipment and money. All three had full-time day jobs and made cider in the
evening and on weekends. Needless to say, they weren’t exactly prepared for
the release party and as the story goes they delivered the keg in the back of
Kris’ car at the last minute. Because the keg had been agitated on the drive
over it poured poorly on the tap all night. Lesson learned. 
They have built enough character at this point to realize that so long as they
continue to work hard and make great fermented ciders, the character will
continue to be built. They will continue to be pushed as cider makers,
businessmen and as individuals. The alternatives are undesirable. Citizen Cider,
even in the early days, has always had a forward momentum bigger than the
guys. They have guided the boat but the river guides them both. A big idea yes,
but at the end of the day they remain present with a simple goal. Bring the
cider to the people.

Turkish food is a true fusion of many different cultures, a collage of different
cuisines so to speak. Turkey, geo-physically located as a bridge between
Europe and Asia, has been a melting pot of many civilizations since the
beginning of history. Once the land of Hittites and the Greeks, it later became
the home of the Turks, a nomadic peoples. Therefore, its cuisine is not only a
collage of all the cultures that lived in Turkey throughout history, but also a
collage of cuisines from all the lands Turks lived before settling in what was
then called Asia-Minor. Today's Turkish cuisine is a fusion of Turkic, Ottoman,
Greek, Persian, Arabic, Lebanese, and Armenian cooking that can be defined as
a true and unique Mediterranean food experience. Turkish food, as most
Mediterranean food, relies heavily on appetizers called "mazes" and especially
the freshest of ingredients. Although it has many meat specialties, it is
predominantly based on fresh vegetables. Therefore, it offers a perfect
combination of vegetarian and meat dishes, appealing to a broad spectrum of
the eating public.

My grandmother, Marguerite, was known to her family

nickname Margot. She passed away this past spring (2015) at the age of 100,
just months before I had the pleasure of opening my restaurant. She was
mother to nine children, of which my mother was the third daughter. She was

talented and adept in the kitchen, creating meals that were both of high
quality and could feed her large family. Before it was fashionable, she was a
foodie and local ore, harvesting fruits and vegetables from her own garden for
her kitchen and table. I still remember the aromas and flavors of her recipes
that she concocted on the fly, inspired only by her intuition and especially by
her desire to please her family. 
I have shared her passion since I was a boy. My grandmother was passionate
about her garden and flowers, and adored honey and the bees that made it.
When she passed away, a single bee floated into her room by an open window
and then left, no doubt taking with him my grandmother's spirit. It is my great
privilege to honor her memory and legacy.
Chef Mahé's appreciation and respect for fine food and wine was nurtured and
sustained by his large French family from an early age and remains his
inspiration and starting point for Bistro de Margot. Today his greatest pleasure
is talking to guests and noting their empty plates!

One of Burlington’s most beloved restaurants, Trattoria Delia has invited

friends and colleagues of Tom and Lori Delia. Like Trattoria Delia, Pizzeria
VERITAS has authenticity at its core, serving traditional Neapolitan pizzas
baked in an imported Acunto oven. Together with their sister restaurant, the

She left a photojournalism career in Taipei to attend culinary school. Today her

Rí Rá is located in an historic bank building, designed by Boston based Harper
& West, that was completed in 1931. The pub opened for the first time in
March 1999, and was extended in 2002 with the addition of the Library area. In
February 2012, The Whiskey Room opened its doors. As you enter Rí Rá, you
can imagine yourself walking through a door that leads you across the pond to
experience the best pubs of Ireland. The pub interiors were salvaged and
restored in Ireland prior to being shipped to Vermont. We are proud to
showcase a unique and genuine Irish pub in the heart of Burlington. The first
bar you encounter as you enter the pub is our Shop Bar. For centuries, people
throughout rural Ireland have gathered in these cozy pubs. The shop/hardware
items on display are available for sale. Purchase some light bulbs, enjoy a pint,
bite to eat, a chat and you will be transported back in time to the
quintessential Irish country pub. This area includes a lounge snug that has a
retro feel for the swinging sixties that is a perfect spot for a quiet drink. The
Victorian bar in the middle of the pub is a classic example of bars from that
period. Its etched glass mirrors, copper finishes and ornate chandeliers were
typical elements in pubs during 19th century Dublin. This bar was custom
made with salvaged materials imported from Ireland. With its large stage and
big TV screen, it is the perfect gathering spot for late night or a major sport
event.

Vermont Pub & Brewery

Prior to opening the Vermont Pub & Brewery, Greg Noonan enlisted the aid of
Bill Mares, then state legislator, to seek changes in the existing legislation
governing the on-site sale of manufactured beer. Greg, with Bill's help rewrote
the current language of law to allow manufacturers to sell their malt beverages
on-site. After a certain amount of drafting acrobatics, that idea found favor
with the Liquor Control Board, and then progressively with four legislative
committees, both legislative chambers, and finally the governor. In late 1988,
Noonan's Vermont Pub and Brewery opened its doors (and taps). Burlington
had its first brewery in ninety-four years. Today, every brewery that offers
their beer for consumption on their brewery premises owes a debt of gratitude
to both Greg and Bill for their efforts.  Below are Greg and Nancy Noonan with
Bill Mares cutting the ribbon on opening day at VPB? 
Now that they don’t have to sleep in the booths and work 80-hour weeks,
Noonan and Polewacyk can concentrate on outside interests. Noonan is
researching another book on a completely different topic: Irish history. He stills
enjoys brewing, and says his favorite beer is “the one in my hand.” Polewacyk
spends free time with his pre-teen son, a budding musician.
The partners enjoy planning special events at the pub, highlighting Vermont
products along with their beer. In January they hosted a Vermont cheese and
beer tasting in partnership with Montserrat Almena of the Vermont Institute
for Artisan Cheese. They host an annual Scottish night, featuring a selection of
single malt Scotch whiskies.  “We’re focused on doing what we do and trying
to does it better,” says Noonan. “I’m very proud of Vermont Pub & Brewery
and the care the people who work here have for our customers. The customers
are the important part.”
“Of all the lines of work you can be in, this one is very rewarding because it’s
geared toward helping other people have a good time,” agrees Polewacyk.
“There are no tricks, no hidden costs. Our job is to make sure people have a
good time when they come in here, and that’s it.” 20

busy. Prices are good for the location Ken’s Pizza and Pub is located in a great
location on the pedestrian Church Street. If you want an easy, non pretentious

they open an outdoor seating area in the pedestrian area. They have a good
selection of brews on tap. Vermont has some great IPA’s and lagers. I find as I
travel to different states, it has become pretty much a custom to ‘try a taste’ of
a local brew before committing to a pint.

Charles Reeves and Holly Clues opened Penny Clues Cafe in May of 1998.
Named after Holly’s childhood dog, Penny, the café serves up breakfast and
lunch every day, all day. Buttermilk biscuits with herb cream gravy, huevos
rancheros, gingerbread pancakes, roast turkey Reuben’s, tofu scram with
peanut ginger sauce -- everything made from scratch.
16 years later...Charles and Holly wrangled a way to buy the building inches
from Penny Clues. They renovated the building creating a cozy new space to
eat, drink and feel welcome. Charles' father had a favorite dog, a cairn terrier
named Lucky. In loving memory of Ned, Lucky Next Door became the sister to

The story of Dobra Tea begins in Prague during the last few years of
Communism, where as a group of young tea lovers began meeting to sample
rare Indian, Chinese and Japanese teas smuggled into Czechoslovakia. Because
of a shortage of foreign currency, high quality teas were then available
exclusively to the Party, State and Military elite.
Then come the “Velvet Revolution” and the Fall of35 Communism in 1989. In
1992, “The Society of Tea Devotees,” was formed and the following year our
first Bohemian-style tearoom, Dobra Čajovna, opened in Prague. The Čajovna
(tearoom) became a shelter, a place for safety, where likeminded individuals

idea and the company began to spread its tea concept to many small towns

It's an absolutely a hidden treasure. Asiana Noodle House came to be after the
co-owners went separate ways. All I have tried from sushi to sashimi to katsu,
bento boxes, you name it have all been phenomenal! They are world class in
Burlington. Food was fantastic, service fast and friendly. I had the Yuki with
spring rolls & tofu. Others had the noodle bowls (Tom Yum with extras).
Provided much needed respite from busy Church Street and they delivered.

It is a great destination for coffee or tea drinkers. They accept credit cards and
allow dogs to accompany the owner. The dogs did not bother. This was great
little local coffee shop we happened to come upon. Our kids loved petting the
dog lying by the counter and we loved the coffee. They are super dog friendly!
Seriously, going in, I didn't care about much else other than could I take my
dog in. The bonus was that the coffee was excellent and the service was super
friendly. Highly recommended for those visiting Church Street with a dog AND
highly recommended for those who want a really good coffee.

and so thick with yogurt and fruit that their straws stood up unassisted. The
cool liquid swaddled our tongues in tropical sweetness. But it did little to ease
the burn of chilies during a long lunch at Maya's Kitchen & Bar in Burlington's
New North End last week.
In late January, married partners Maya Gurung-Subba and Suk Subba opened
the restaurant at 1130 North Avenue — previously home to Nepali Kitchen
and, before that, Pho Nguyen. The couple were born in Bhutan but left their
homeland as young children in the early 1990s. Both grew up, along with
100,000 other Bhutanese in forced exile, in bamboo huts at a refugee camp in
eastern Nepal.
There, Maya knew Suk as her brother's friend. They were only acquaintances,
but they reconnected after they immigrated — separately — to New England
in 2008. Maya arrived in Burlington with help from the Vermont Refugee
Resettlement Program; Suk landed in Worcester, Mass., through similar
means. Two years later, they were married.
In 2018, Maya enrolled in the Vermont Food bank's Community Kitchen
Academy, a three-month culinary crash course aimed at giving would-be
restaurant workers professional cooking skills and food-safety knowledge.

NY-style pizza counter with linoleum tables and rock-and-roll on the radio. The
pizza is the most consistently high quality in town and the closest to the thin
crust, oil-dripping-down-your-elbow delicacies of my youth in Queens. They
also serve wings, heroes and pasta dishes. Most of their business is delivery
(Burlington is a college town), but the folks behind the counter are pleasant
and accommodating and I enjoy stopping in to pick up 2 slices and a fountain
drink for $7.
