6.1 Vacuum Micro-film Cooker
6.1.1 Structure Instruction
This vacuum micro-film cooker consists of storage tank, syrup pump, pre-heater,
vacuum micro-film evaporator, collector, unloading pump, condenser, water-
circulating vacuum pump, measuring meter and electric control box etc. All these
units are fixed on the mono-block structure and connected with different pipes and
valves.
6.1.2 Technological Process Instruction
The start of the cooker unit is the storage tank. The syrup in the storage Tank is
continuously pumped into the pre-heater by the syrup Tank is continuously pumped
into the pre-heater by the syrup Pump. In the pre-heater, the water of the syrup is
evaporated through the exchange between the steam pipes and the syrup. Therefore
the syrup’s density rises up, and then the syrup enters into the vacuum micro-film
evaporator. With the effect of the gravity and the leaves of the chin, the syrup forms
the microfilm on the inner surface of the heater. The water in the syrup is evaporated
once more during the period of the syrup film flowing down from the top of the heater

- 16 -
OPERATING MANUAL

by its heat exchanges with the inner surface of the heater. The final syrup forms a
syrup paste with the concentration of 97-98 %(The heater is one part of the vacuum
microfilm evaporator). Then the syrup paste enters into the collector and further is
pumped out into the mixer by the unloading pump and pipes. The two effected steams
formed by evaporating purpose in the pre-heater and the micro film cooker are
exhausted by the fan into the condenser and cooled down. The condensed water and
the uncondensed air are exhausted out by water circulating vacuum pump.
6.1.3 Operation Instruction
6.1.4 Preparation
Open the water- inlet valve of the condenser completely, and set the 3-way valve on
the condenser to the Exhaust Position. To fill the water into the vacuum pump to reach
its needed level.
A. Pump the hot water(over 90℃)into the storage tank from the dissolved cooker.
B. Start the metering pump and the roots pump.
C. Open the steam valve and regulate the pressure to 1x105Pa.
D. Start and stop the rotor instantaneously several times.
E. Close the steam, stop the metering pump and roots pump.
F.Exhaust the residual water left in the storage tank.
6.1.5 Syrup Cooking
A. Turn the 3-way valves of the condenser to “SYRUP COOKING ON” position.
B. Pump the syrup, which has been cooked to the temperature of 105 ~110oC in the
dissolved cooker, into the storage tank.
C. Open the steam valve, regulate every reducing valve respectively to make the pre-
heater’s pressure at 3x105 Pa, the evaporator’s pressure at 3x105 Pa, the thermal
insulating layer at 3x105 Pa, preliminarily.
D. Start the metering pump. When the syrup enters into the collector, start the roots
pump and the microfilm rotor.
E. Start the vacuum pump, regulate the vacuum reading at -2x105 Pa preliminarily.
F. According to the syrup cooking result, adjust the above parameters to the proper
values respectively.

6.1.6 Cleaned the machine

The depositor is one of the key machines for the central-filling candy production line,
and it is also a main part of the candy production line. It consists of flavor mixer,
depositing unit, main driving base, de-molding section and cooling tunnel (front fan
section, center section and back fan section) and the electric control cabinet etc.(see
drawing 1.)
In addition, this machine has two transportation circuits, i.e. the candy mould
transportation circuit and unloading transportation circuit. (See drawing 1.and 2.)

The process is as following:
The syrup paste well cooked by the micro-film cooker is pumped into the mixer to be
mixed with the flavors, then be filled in the depositing hopper. The mixed syrup or the
central-filling syrup will be deposited into the cavities of mould pate by piston-driven
filler, then the candy mould plate goes through a natural cooling stage with the circuit
and enters into the cooling tunnel for the forced cooling. When the mould plate fully
filled with the syrup paste enters into the de-molding section, the candies are pressed
out of the mould plate by a de-molding device automatically. Finally, the candies enter
on the unloading conveyor and are conveyed to the candy exit at the back fan section.
6.2.2 Operating instruction
After the installation of the machine, check carefully, check carefully if all the
mechanical and the electrical parts are in normal conditions, then make an adjustment
according to the following steps for the normal operating condition:

According to Drawing 3, adjust the position of all the cams (The machine has been
adjusted before the delivery) in order to guarantee the highest points of the center-
filling cams are at 450 in front and the crosser bridge cams are 75 0 lagging behind
while shell cams meet the rolling wheels at their highest reaching position, and adjust
the regulating screw 3(See Drawing 3.), to ensure the crossover bridge moving back
and forth on the center of the rail.

tightening nut, then, adjust it to the right position (Judge from the central-filling test).
Then, tighten the nut.
6.2.3.4 Adjustment (Fine Adjustment) of Candy Weight
There are 2 double offset ring handles on the upper side of the depositing unit of the
operating side. The left one is the shell (hard candy)weight adjusting handle, the right
is for adjusting the weight of central-filling material(jam) 2 grams.
6.2.3.5Synchronizing Adjustment of the De-molding Device (See Drawing
5.)

In order to obtain the highest de-molding rate, a fine adjustment should be done on the
de-molding mechanism. Adjust the de-molding cam 1, adjust the screw 4.and 5. To
ensure the de-molding plate 6 to press down the crow bar of the candy molding plate
3mm, and ensure the crow bar is hit twice effectively.
6.2.3.6 Synchronizing Adjustment between the Depositing and the
Moulding Plate Circuit
While the depositing of the syrup paste, the depositing jet (hard candy and central
filling candy) must be fitted to the candy moulding plate, so as to obtain the best
depositing result. If there is problem, the moulding plate circuit can be adjusted
according to the Drawing 3., i.e. to loose the tightening screw 6, to turn the screw 8.,in
this way, to ensure the synchronizing of the depositing and the mould circuit.
6.2.3.7 Synchronizing Adjustment between the Mould Lifter and the
Depositing
In order to reducing the dripping tendency under the depositing head, a pneumatic lift
is equipped on the rail of the mold chain. While depositing the syrup paste, in order to
ensure a certain distance between the surface of the mold and the depositing jet(2mm
for candy with central filling, 5mm for hard candy),adjust the screw height on the left
and right rails of the lift to control the distance. In this way to ensure that after the
depositing, the lift will go down rapidly and pull off the syrup paste to eliminate the

- 23 -

dripping.
6.2.3.8 Adjustment of the Unloading Conveyor Belt (See Drawing 2.)
Adjust the belt to the appropriate tension to ensure the rolling cylinders on the left and
right sides are at the same position. Check by manual if the automatic regulating
mechanisms are working normally. Start the motor of the conveyor belt to make the
belt moving error occurs. If the error occurs, adjust every tightening screw on the
rolling cylinder to ensure the belt moving smoothly.
6.2.4 Normal Conditions of the Candy (Central-filling candies and hard
candies) Production
The normal production can only be started after the above adjustments have been
done very well. Otherwise serious troubles might occur.
6.2.4.1 Putting the production Line in the State of Cleaning, which is the operating
handle of the mould plate circuit is in the lifting state, the front end of the mould plate
is in dumping state; all the cleaning plates are in position and ensure that the
depositing system is without any leaking phenomenon.
6.2.4.2 Switch on the power supply, to pre-heat the thermal insulating system. The
preset temperatures ate the shell (hard candy):120-130℃,the manifold:115-125℃,the
center-filling :65-75℃.For the only production of the hard candy, it is unnecessary to
pre-heat the manifold and the center- filling. The production can only start after the
pre-heating for half an hour, and at same time, turn on the main machine and fan for
the pre-cooling of the candy mold plate.
6.2.4.3 Switch on the motor of the mixer, when the qualified syrup paste is pumped
into the mixer from the syrup cooker, switch on the flavor dosing pump to make the
flavors and the syrup paste mixed in the mixer, then they are pumped into the shell
(hard candy) hopper. While the liquid level reaches 100mm(the jam hopper must also
reach 100mm when producing the central-filling candies), switch on the stop-start
handle of the piston pump rod bar. The syrup paste will be deposited into the cleaning
plate. Stop the stop-start handle of the piston pump rod bar, and withdraw the
cleaning plate, and press down the handle of mould plates circuit, loosen the pump
stop handle, then the machine enter normal depositing state. Just before the end of the
end of the production, stop the flavor dosing pump.
6.2.4.4 Switching off the Machine
Just before the material in the hopper runs out, stop the piston pump lever, lift the
mold plate handle. The machine enters into a cleaning state, loosen the stopping lever,
and continue the depositing till the hopper is empty. Fill hot water of 100℃ into the
hopper(If filled with hot water) to have a through cleaning of the depositing system.
The mixer is also cleaned through pumping into the hot water via cooker. After the
cleaning, ensure the candy molds have been de-molded completely, switch off the
power of the depositor and the conveyor, and then turn off the pre-heating device and
the flavor mixer.
6.2.4.5 All the above Operation Instructions are only for reference. The final standard
operations are subject to our technicians’ the demonstration, regulation and training at

site.
6.2.5 points for Attention
6.2.5.1 The machine must be maintained regularly and ensure that the machine is
kept in good condition. In order to keep high de-molding rate, a special care must be
given to the candy mold plate.
6.2.5.2 All the parts needing lubrication must be applied with lubricant or grease. Dry
running or too much oil is not allowed in case the damaging of the machine.
6.2.5.3 when the emergency occurs, re-start the running of the machine is forbidden
before the troughs are eliminated or the reason has not been found, in case the even
more serious accident will occur.
6.2.5.4 When turn on the main motor power, the speed meter must be adjusted to “0”
value position.
