COCONUT MACAROONS

INGREDIENTS:

1/2 c. butter 1 c. flour

1 1/2 c. sugar 4 c. desiccated coconut

4 eggs 1 tsp. vanilla

2 can (14 oz/397 g) condensed milk

PROCEDURE:

1. In a bowl, cream butter using a hand mixer on low speed. Add sugar and bear together until
well blended and fluffy.

2. Add eggs one at a time, beating continuously.

3.  Add condensed milk and vanilla extract.

4. In a medium bowl, combine flour and desilicated coconut. Add to the egg mixture and beat
until combined.

5.  Scoop in paper-lined mini muffin pans and bake in 350 F oven about 15-20 minutes or until
golden brown. Let cool for about 5 minutes.

BANANA MUFFIN
Ingredients:
3c. APF 2 eggs
2 tsp. plus ½ t. BP 1/2 c. butter
2 tsp. plus ½ t. BS
1 tsp. salt
6 large bananas, mashed
1 1/2 c. white sugar
 
PROCEDURE:
1. Pre heat oven to 350°F. Coat muffin pans with non-stick or use paper liner.
Sift together the flour, baking powder, baking soda, and salt. Set aside.
2. Combine bananas, sugar, egg, and melted butter in a large mixing bowl. Fold in
flour mixture, and mix until smooth. Scoop into muffin pans.
 
3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to
30 minutes. Muffin will spring back when lightly topped.
