In recent years, it has become increasingly critical for food processors to implement an

effective hazard control program as both the U.S. Department of Agriculture (USDA) and Food
Drug Administration (FDA) have become more aggressive in implementing risk-based
preventive control procedures. Apart from the food-contact and non-food-contact surfaces
discussed earlier, air, water, and plant employees can also be potential sources of
contamination. Thus, periodic swab samples should be collected from the air, water, and plant
employee hands and monitored for indicator microorganisms as well as pathogens. When
developing an EMP, postprocessing environmental monitoring should always be considered,
because these are likely areas where pathogens can reappear and recontami- nate
postprocessed food products. Having an EMP does not guarantee food safety. However, it will
provide critical information needed to initiate appropriate corrective actions for preventing
contamination of finished prod- iirtc hv mirrnhial ha7arr1c.

*Level of Infestation with Insect Eggs (If Positive):

SLIGHT : eggs in singles; countable; eggs=around one-fourth (1/4) of the plate surface area
MODERATE : eggs in singles and aggregates; slightly countable; eggs=around two-fourths (2/4) of the plate surface area
HEAVY : eggs in aggregates; too numerous to count; eggs=around three-fourths (3/4) of the plate surface area

INTERPRETATION OF RESULTS

Potential INFESTED BINS due to presence of live adult or larva flour beetles / other beetles from underbin samples:
OM: Bin 406, 408, 451, 452 (also “positive” last month)
NM: Bin 401, 403, 404, 405, 406, 408, 451 (also “positive” last month), 452 (also “positive” last month), 453 (also
“positive” last month)

Potential INFESTED BINS due to presence (positive) of insect eggs from underbin samples, during filth analysis:
OM: None
NM: None

Potential infested bins are recommended for fumigation (for scheduling).

Infested underbins are also recommended for vacuum cleaning as soon as possible.
