Chickpea Flour Banana Bread


Servings: 10-12 slices Time: 55 mins Dif culty: easy

Ingredients

4 very ripe bananas (mashed)


2 large eggs at room temperature
1 tablespoon pure vanilla extract
1 teaspoon of apple cider vinegar
1 teaspoon of cinnamon
1 + 1/2 cups plus 1 tbsp of chickpea (garbanzo) our
1 teaspoon of baking soda
1/4 teaspoon of salt
1/3 cup of coconut oil (melted)
1/3 cup of raw honey (I love manuka, wild ower or buckwheat honey)
3/4 cups of chocolate chips (I use Enjoy Life, dairy-free ones)

Instructions

1. Preheat your oven to 350F and line up a medium loaf pan with parchment paper
2. In a bowl, combine the following dry ingredients: chickpea our, sea salt, and baking soda. Whisk well to integrate.
3. In another bowl, mash the bananas and add the vanilla and cinnamon. Mix well then add the 2 eggs, raw honey, apple cider vinegar
and coconut oil. Mix again. (by hand, no mixer required)
4. Add the dry ingredients to the wet ingredient bowl, slowly and mixing as you go.
5. Fold in the chocolate chips, you could also do blueberries or cranberries or raisins.
6. Transfer to the loaf fan and top with some more chocolate chips. Bake for about 45-55 mins (50 mins is the sweet spot for me (and
allow it to cool before taking it out).

7. I usually lift the parchment paper which brings out the loaf and transfer to a cooling rack. Slice into 10-12 pieces.

Enjoy with a cup of coffee, fresh almond butter, and berries! Heaven!
