Shawarma Platter

Contains: Shawarma style chicken, caramelised onions, falafel, spicy mayo,


hummus and store bought buns
For Falafel:
Ingredients:
● Kabuli chana 1 cup
● Onion
● Salt
● Garam Masala powder
● Jeera powder
● Red chilli powder
● Dhaniya
Steps:
1. Soak chana overnight
2. In mixer, chop one onion
3. Drain the chana and add to mixer
4. Add spices and dhaniya and mix till everything is combined. DON’T ADD
WATER
5. Form into small patties and keep in fridge until ready to cook

For Chicken:
Ingredients:
● Chicken leg (or any cut)
● Olive oil
● Lemon
● Salt
● Garam Masala powder
● Jeera powder
● Red chilli powder
● Pepper powder
● Cinnamon, Clove and cardamom
● Lemon juice
● 2 onion sliced
● Mint and coriander herbs
Steps:
1. Marinade chicken with all the ingredients (except onion and herbs)
overnight. I marinaded in a plastic bag so all the oil can coat chicken
properly
2. Next day, heat grill tawa and add little olive oil
3. Cook the onions a little and add the chicken + marinade
4. Grill on high flame from both sides till soft
5. Lower the flame, add the chopped herbs and cover. Cook for 5-7 minutes
more
For hummus:
Ingredients:
● 1/2 cup kabuli chana
● Sesame seeds (I did not have so I used roasted peanuts)
● Lemon juice
● Mint leaves
● Olive oil
● Salt
● Pepper
● Red Chilli powder
Steps:
1. Soak chana overnight
2. Drain the water and boil in fresh water (dont add too much water)
3. In a mixer, add sesame seeds and a few drops of olive oil. Crush
4. Add boiled chana (keep the chana water aside for later) and mix
5. Slowly add a spoon of water and a spoon of olive oil alternatively till it
forms a shiny paste
6. Add spices and fresh mint leaves and combine
7. Transfer in a jar and top with olive oil

For spicy mayo:


Ingredients:
● Capsicum
● Garlic
● Olive oil
● Vinegar
● Pepper
● Salt
● Mayonnaise
Steps:
1. Roast capsicum on gas flame (like begun for bharta)
2. Put capsicum in a bowl immediately and cover with foil tightly for 1 hour
3. Then peel the skin of the capsicum and remove seeds
4. Slice capsicum and garlic
5. In a pan, heat some oil and add capsicum and garlic. Cook a little till garlic
is cooked
6. Add vinegar and reduce flame
7. Cook till the liquid in the pan reduces
8. Blend in mixie
9. Once cool, mix with mayonnaise and add some salt pepper to taste
