BriesSweet™ Tapioca Solids 28DE is a pure, all natural enzyme-produced, low conversion tapioca syrup solid. During
drying,tapiocas solids are agglomerated for increased solubility and dispersability. This syrup supplies solids with increased
nutritive value compared to refined, highly processed corn starch products. Neutral flavor, low sweetness and low
hygroscopicity make it ideal for bulking, coating and spray drying applications. It enhances body, texture and chewiness along
with excellent binding in formed bar products. In sports beverages, it provides nutritive solids while its higher average
molecular weight reduces osmolarity and aids in proper water absorption. It increases viscosity, gloss and body in a wide
variety of products from dressings to glazes to jams. Acts as a natural humectant to extend shelf life.
