Tang Yuan (Sweet Rice Balls with Black Sesame Filling)


Ingredients for 12pcs balls
For black sesame filling
1/2 cup toasted black sesame
1/2 cup sugar or as needed
1/8 tsp. salt
80 ml lard or butter
Tang Yuan dough
2 cups glutinous rice flour
1/4 cup hot water
3/4 cup cold water

2. Dou Hua (Soy Bean Pudding)


Ingrediets for 10 portion

Dou hua (soy bean pudding)


1 liter soy milk
1 packet (7 gram) agar-agar powder
Ginger syrup
1.5 liter water
75 gram ginger, peeled and bruised
200 gram palm sugar
4 tablespoon sugar
2 pandan leaves, knotted
Accompaniments
honey roasted peanut
candied orange peels

3. Jiang Zhi Zhuang Nai (Gingger Milk Curd)


Ingredients for 1 port
1 tablespoon ginger juice (from about 30g
ginger)
200ml/0.85cup fresh milk (see note 1)
2 teaspoons sugar
Honey and fresh berries (optional)
4. Loh Mai Chi (Mochi with Peanut Filling)
Ingredients for 20 pcs
250g glutinous rice flour
500ml water
80g sugar

Filling:
500g toasted peanuts, skin removed and
grounded
100g toasted sesame seeds, grounded (I omitted
this)

5. Feng Li Su (Chinese Pineapple Cake)


Ingredients for 20pcs
Pineapple Filling
1 20 oz can crushed pineapples ~1 1/2 cups drained
1/4 cup cane sugar
1/4 cup brown sugar
1 tsp lemon juice
Pastry/Shortbread Dough
1/2 cup softened butter 1 stick
1 Tbsp powdered sugar
2 Tbsp condensed milk
2 egg yolks
1 pinch salt
1 1/2 cup cake flour

6. Bai Tang Gao (Steamed Rice Cake)


Ingredients for 2 cakes (19cm diameter x 4cm high)

250 g rice flour , 2 cups+2 tablespoon


500 ml water
5 g yeast+20ml warm water , under 40℃
110-150 g sugar
1/8 tsp. several drops of oil
7. Zongzi (Steamed Sticky Rice with Red Bean Paste)
Ingredients for 10pcs
20 to 30 sheets dried or fresh bamboo leaves (or reed or
banana leaves) (*see footnote)
2 cups (400 grams) glutinous rice
1 cup homemade red bean paste (or a packaged one
from a Chinese market)
Cotton twine or narrow stalks to tie the zongzi

8. Xingren Doufu (Almond Agar Jelly and Fruits)


Ingrediets for 8 portion
1 Tbsp + 2 tsp agar agar powder 
2 cups water
3 cups milk (or unsweetened milk substitute
like almond or soy milk)
1 – 1½  tsp almond extract (depends how
strong you like the flavour)
¾ cups sugar
3 cups fruit mix of your choice: Papaya,
mango, pineapple, grapes, strawberries
1 ½ cups water
¼  cup sugar

9. Dousha Bao
Ingredients for 10 pcs
200 g red bean paste filling
300 g all purpose flour
40 g sugar
1.5 tsp. sugar tolerant instant yeast
150 ml warm water ,or 180ml to 185ml
warm milk, the best temperature for
liquid is around 35 degree C.
1 tbsp. vegetable oil ,corn oil
a tiny pinch of salt
