Sample Recipes from "Becoming Raw: The Essential Guide to Raw Vegan

1) ELEGANT GREENS with Strawberry, Almonds and Orange-Poppy Seed Dressing

ORANGE-POPPY SEED DRESSING

3 TBS extra virgin olive oil


3 TBS freshly squeezed orange juice
2 TBS maple syrup, or agave syrup
1 TBS chopped, fresh dill
1TBS Dijon mustard
2 tsp poppy seed

GREENS, STRAWBERRIES AND ALMONDS

1 pound leaf lettuce, or other tender greens, torn or chopped


2 cups sliced strawberries
1/2 cup sliced almonds

Combine all dressing ingredients. Pour on salad and toss.


Yields 15 cups

2) THREE MELON SALAD

MELON DRESSING

1/2 cup cantaloupe chunks


1/4 cup honeydew chunks
1/4 cup watermelon chunks
1 ripe banana
1 pitted medjool date
Juice of 1/2 lime

MELON SALAD

1/2 cantaloupe, peeled, seeded, and cut into chunks


1/4 honeydew melon, peeled, seeded, and cut into chunks
1/4 watermelon, peeled, seeded, and cut into chunks
1/2 cup pecans

Blend ingredients for dressing in a Vitamix or blender.


Pour dressing over melon chunks and sprinkle with pecans.
Yields 8 cups
3) RUBY RED SALAD

3 cups grated carrots


2 cups grated beets
1 cup chopped fresh parsley
1/2 cup dried cranberries
1/2 cup coarsely chopped walnuts
2 TBS sliced fresh chives

salad dressing of your choice

Salt
Fresh ground black pepper
Seeds from 1/2 pomegranate

Yields 7 cups

4) PINK CADILLAC SMOOTHIE

1 1/2 cups freshly squeezed orange juice


1 cup fresh, or frozen sliced mango
1 cup fresh strawberries

Combine all ingredients in a blender, and process until smooth.

Yields 3 cups
