Method of conche machine washing

Sodium hydroxide (NaOH)

After installing the conche machine in the factory, it is necessary to clean

the inside of the equipment before processing the chocolate mass.

Cleaning the inside of the conch machine should be done in the following

way:

Prepare a solution of 2 kg of sodium hydroxide, water (amount (half

tank), the water temperature should be more than 60 °. Add the

resulting solution to the drum of the conche machine and run the mixing

function for 1 hour. After 1 hour, empty the water and open the lid and

turn on the heat function to dry the inside of the drum.

Enter 100 kg of oil (based on the Cones 1000 model) and 50 kg of sugar.

Run the machine for 4-5 hours. Discharge the mass. If the mass is clean,

the machine is ready for use. If there are impurities in the mass, then the

procedure with treating the machine with raw materials from oil and

sugar must be repeated using new raw materials.

Raw materials produced after cleaning are not intended for food

production.
