Goan Cuisine

The two main rivers of goa are Zuari and Mandovi, which flows
through the Sahyadri range of the Western Ghats.
Goan cusine = Portuguese + muslim + hindu style cooking.
Goan food items are mostly made from rice, fish, kokum, tamrind,
toddy vinegar and coconut. Rice and fish are the staple food of goa,
and the two basic necessities of goans are fish curry and rice.
The Spices and flavors of goa are strong due to the tropical climate.
Baked breads and bakeries are famous in goa which are influenced
by Portuguese. The Portuguese also brought potatoes, tomatoes,
pineapples, guavas, and cashews from Brazil to Goa.
Seafood in goa are famous such as prawns, lobsters, crabs, pomfrets,
clams, mussels, squid, oysters, shark, tuna, pork, beef, game
dish(wild animal and birds that are hunted legally) and mackerel.
Kingfish is the most common delicacy.
• Delicacies such as the prawn balchaw and sorpotel, which have
become famous around the world
• Chicken Xacuti- It is curry made out of white poppy seeds,
coconut and dried red chilies.
• Chicken Cafreal- Goan Chicken Cafreal is a curry made with
coriander, cumin, cardamom, chillies and cinnamon.
• Pork Vindaloo- pork is marinated with vinegar/wine and garlic
• Pork Sorpatel- it is spicy pork gravy prepration eaten after a few
days and served with sweet bread
• Veg Caldeen- A Portuguese influenced
Goan vegetarian stew/ caldeen made of
mixed vegetables cooked in a mildly spiced coconut milk gravy.
• Prawns Balchao- Balchão has been described as "a fiery dish
from Goa which is almost like a pickle". It is a spicy seafood or
meat dish in Goan cuisine.
• Pomfret Recheado- Fish recheado is a Goan dish but the
word recheado means stuffed in Portuguese. Here is a masala
stuffed pomfret.
• Sana- These are soft and steamed rice cakes that are similar to
idli from South India.

Special Ingredients
Red Rice- It is also known as Asian rice/ ukade rice, its texture
and slightly nutty grains make it ideal with coconut milk based
curries.
Coconut vinegar - The vinegar is obtained from coconut sap.
(toddy vinegar)
Lemon berry (tefla)- Tefla berry is a ash coloured berry which
are also referred as a variety of Sichuan pepper
Bimblim (bilimbi)- Bimblim are sour and juicy fruit. They are
used to make chutneys and pickle(gherkins).
Palm jaggery- It is sweetener derived from palm tree.
Goan sausages- It is a Indo-Portuguese cuisine from Goa. Which
is made out of pork and it is extremely spicy.
Dried fish- Drying is a method of food preservation that works
by removing water from the food, which inhibits the growth of
microorganisms.
Tamarind (Kokum)- it is dried fruit used in culinary it has a sour
taste.
