Introduction
Approximately from the sixties, vegetable oils have gained importance, because the
dietary requirements of people began the search for healthy nutrition, which would satisfy
the energy needs of human beings without causing harmful accumulations that lead to the
appearance of diseases with high incidence today, such as diabetes and cardiovascular
diseases.
However, the production processes currently used to obtain oilseed oils imply
strong attacks on the environment, mainly due to the emission of organic solvents into the
atmosphere, with hexane being the most used in this industry, a compound listed among the
main pollutants atmospheric by renowned entities in the field such as the Environmental
Enzymatic hydrolysis is based on the degradation of the cell wall of oilseeds, with
the use of enzymes as a way to facilitate the extraction of intracellular oil, thus reducing the
high temperatures necessary for the initial cooking of the seeds. In order to shorten the
extraction time, decrease the solvent consumption, increase the extraction performance and
improve the quality of the extract. Minimizing the costs of these productions and also their
risks.

Justification
The production processes used to obtain vegetable oils that are so good for health,
imply strong aggressions to the environment, for this reason we want to analyze the
