THE FOOD SERVICE INDUSTRY

I – SUBJECT MATTER:
“Defining, What is Food and Beverage Services”
God bless students!
Food and beverage service covers the knowledge and skills
necessary for those studying and/or working a variety of levels in food
and beverage service. Foodservice operations are continuing to
improve and develop, together with advances in quality. The demand
of food and beverages away from the home has increased and, with a
boarder spectrum of the population eating out, customer needs are
continuing to diversify to meet the challenges of the demands being
made by increasingly knowledgeable and value-conscious customers.

II – OBJECTIVES:
At the end of this topic, students learned:
 The wide meaning of the food and the beverages according to its
types and

Let us define:
What is FOOD:
 Is a wide range of styles and cuisine types. These can be
classified by country. (Traditional British or Italian) by type
of cuisine, for example oriental; or a particular specialty
such as fish, vegetarian or health food.

What is BEVERAGE:
 Includes all alcoholic and non-alcoholic drinks. Alcoholic
beverages include wine and all other types of alcohol drinks
such as cocktails, beers and cider, spirits and liqueurs.
Non-Alcoholic beverages include bar beverages such as
mineral water, juices and aerated waters, as well as tea,
coffee and chocolate milk, milk drinks and proprietary
drinks such Bovril.

In a hotel and restaurant industry food and beverage services has a big
role and functions, since it is somehow the heart of the industry it
covers a huge responsibilities where people in charge should in good
coordination and in harmonious relationships. Bear this in mind, the
most important person in this industry is YOU being a front liner, one
single mistake can ruin the whole business functions.

Good Benefit Towards the Guest”

It is important to recognize that the specific reasons behind the
customer’s choice will often determine the customer’s satisfaction,
rather than the food and beverage service by itself. The customer who
is not able to satisfy his or her needs will be dissatisfied customer.
The customer may, for instance, be satisfied with unhelpful staff,
cramped conditions or the lack of available choice. These aspects are
the responsibility of the food and beverage operation. However,
sometimes the reasons for the customer being dissatisfied might be
beyond the operation’s control, for example location, the weather,
other customer or transport problems.

II – OBJECTIVES:
At the end of this topic, students learned:
 The value of being polite, which the only weapon for our
customer to keep on coming back.

What is CUSTOMER SERVICE:
 Is to meet the customer’s expectations and satisfactions,
enhanced their meal experience in the foodservice
operation and determine the level that the customer should
expect within that operation.

The value of the food is one of the factors that we need to consider in
this industry. We make sure that every food we offered is always
available and every customer’s wished and requests must be attained
as soon as it is needed. Be pleasing in dealing and be polite in
answering any objection by the customer and that is the secret in this
industry to let them keep on coming back.
