For those of you who know me, youll knaw I don't lie too much hassle in the kitchen.
don't follow cooking ‘methods’ and recipes with too many stages; | ike to keep cooking
easy. That doesrit mean my meals are any less flavoursome or tasty than anyone that
cooks really fancy meals. For me, cooking is not only about wholesome meals, its about
practicality for parents too ~ they have to be quick and easy.
For this reason I prefer to stick with a range of aromatic spices | keep in my cupboard and

keep at home. You's be surprised how different you can make a meal taste just by
removing one spice or by adding a new one.
So the recipe Im going to share today isa really simply Chicken and Dhal recipe using my
favourite dhal ~-masoor dhal (aka red lentils). | always keep this dhal safely tucked away in
the kitchen cupboard along with my other food cupboard spices.
‘And boys this meal protein-rich! As you probably know, chicken and lentils are both
bursting with protein, Protein is essential for healthy growth because it lives in every cell
and tissue in our body ie, hair, muscle, skin, nails. So protein is great for growing children
and for parents.
‘Total preparation and cooking time: 35-40rnins
Serves family of &
Dhat:
Som
oll
1 onion - peeled, chopped
1 thsp minced garlic
1 thsp mined ginger
‘Small handful of curry leaves
1 Wetsp of mustard seeds
1 ve tsp of cumin seeds
Handful of coriander leaves - fresh, washed, chopped
6 baby plum tomatoes (or 2 normal tomatoes) - washed, chopped
11% tsp ground coriander
150g (Sez) masoor dhal (red lentils) - washed, soaked for 10mins
500m! (154102) of water
Salt to taste (optional
Red chilli powder to taste (optional)
Chicken:
2 peeled plum tomatoes - tinned, chopped
1 tbsp lime juice
11 tsp ground paprika
‘little cracked black pepper
Salt to taste (optional
1 medium chicken breast fillet - cubed, fat-trimmed
Dra:
Heat the olin a pot and soften the onion. Then add the garli, ginger, curry leaves,
‘mustard seeds, cumin seeds and coriander leaves. Sti-fry continuously for a few minutes
on medium-low heat as you don't want to burn the spices.

‘Then add the tomatoes, ground coriander and continue to stir-fry for another few minutes
Unt! the tomatoes have softened,
‘Addl the lentils, water and simmer on low heat for 20-25mins until the lentils are tender
then set aside,
Chicken:
While the lentis are simmering, add alittle oll ina non-stick frying pan. Add the pecles
plum tomatoes (and a litle tomato juice from the tn), lime juice, paprika, black pepper and
cook the sauce on med-high heat for a few minutes. Then acd the chicken pieces and stir
fry for approximately 10 minutes until the chicken is tender
Finally add the chicken and sauce from the frying pan to the tender lentils and combine for
‘a delicious meal
Serve with freshly baked tiger bread from the supermarket (or rice).
