- Introducing the new Executive Director –
Sam Herrera Jr. of DH Food & Beverage
which will cover Moon Knight and future
outlets.
- We have not emphasized on fully
attentive of security at parking lot, this is
important so must be outside visible
every time for customer
- In addition, shouls respect everyone’s
position and hierarchy
Mr. Sam C. Herrera Jr - Introducing himself and thanking the

team for joining on board.
- Practice proper hygiene daily, Good
grooming, Clean uniform, Good
appearance.
- Always greet the customer with a smile.

- Everybody should know the daily &


monthly promotions including Kitchen &
Security Staff. We are all sales persons.

- Practice cleanliness in our areas. Always
do clean as you go. Make sure that we all
clean our bar glasses, bar area, Kitchen
area, Kitchen plates and other utensils
before we go home and closing. Floors in
Kitchen should always clean and dry. We
will make the proper schedule of deep
cleaning for each department for our
reference and guideline.
- Staff must have good attitude.

- All staff must help each other and do


teamwork. Avoid fighting with each other
and especially fighting with guest.
- Staff must not wear slippers or flip flops
during at work.
- Playing games and watching youtube
during working hours are not allowed.
- Excuse late must be informed in advance
to the management. Excuse absent or
requesting for public holiday PH, leave
and change day-off must have the
approval by the management by filling up
a request form in advance.
- We will conduct 2-3 times a week briefing
with the staff – Monday, Wednesday,
Friday or Saturday.
- Security must always be attentive for
guest parking.
- Daily Inventories for Bar & Kitchen.

- We will make daily operational checklist


that we must follow daily. We will also
arrange the staff Team Building for at
least 1-2 times per year.
- We will organized Staff of the Month &
Staff Birthday every 2 months together
with the top management.

- We will arrange the 5% service charge. It
will be calculated properly as 3% for staff
and 2% for the Management. 2% is for
breakages of company assets and staff
privileges like uniforms and meals.
- The Chairman gave the year end bonus to
all the staff today worth USD100 each.
- Separate meeting for Bar Service, Kitchen
& Security department will be arrange
separately.
- All request, suggestions, recommendation
or problem from the staff must be
reported to the Executive Director c/o Ms.
Reaksmey for translation and should not
disturb our Chairman – Mr. Ly Oudam
anymore starting today.
Chef - Kitchen - Requesting for kitchen shoes protecting
for floor slippery. The management will
buy for them.
Security - Also requesting shoes for their use, but
the management will still thinking about
this matter. Normally they must provide
their own shoes when they work.
Ms. Reaksmey - Admin - Will make the updated staff schedules
with staff position and contact
information in English – Alphabetically.
- Will also make the form for staff that has
received the year end 2020 staff bonus.
