DIY Isolation Salad

Need of the hour is to whip up delicious snacks or meals and to remain fit while we are at home under
self isolation. The idea is to use what’s in your fridge, shelf or cabinet and to make sure your meals are
exciting and they keep you going through the day ☺

Ingredients:

For dressing -

Olive Oil/ sesame/ peanut/ refined oil – 3 tbsp

Lemon juice/ Vinegar/Apple cider vinegar/balsamic vinegar – 2 tbsp

Honey/Maple syrup/brown sugar/powdered sugar/ sugar – 1 tbsp

Mustard/chilli flakes/Tabasco/chilli powder – 1tsp

Peanut butter/almond butter (optional) – 1.5 tsp

Mint/coriander/basil/oregano – 1tsp

Ginger chopped/ garlic chopped – 1tsp

Salt

Crushed black pepper

Salad ingredients:

1) Assorted salad greens (any one or two) 1 cup

clean them, tear them with your hands (does not have to be even) and soak them in ice water or keep
them soaked in the fridge.

Options

Spinach/Methi/Lettuce/Romaine/Arugula/Coriander/Mint

2) Any 2/3 assorted vegetables (blanched or sautéed, cut and chopped) 2 cups

Mushroom/Broccoli/Beans/Carrots/Cauliflower/Potato/Aubergine/Corn/Capsicum/ Olives

3) Chopped onion and tomato ½ cup


4) Dry roasted nuts any 1 or assorted (pine nuts, walnuts, almonds, cashew or peanuts) 1/4​th
5) Dry roasted white sesame or black sesame/fennel seeds/onion seeds/flax seeds/chia
seeds/pumpkin seeds (sesame is the best option else you can choose any one of others)
6) Raisins/Sultanas (optional)
7) Apple/Strawberry/grapes/pear/kiwi/pineapple/pomegranate (any one fruit is optional
If people have lesser stocks of veggies or greens -

Any pasta or noodles can be cooked and kept ready

Boiled Quinoa, Chickpeas, Rajma, Dal and Amaranth or any other grains can be used. Even rice can be
used to make a salad ☺ or oats.

Important:

1) Keep an empty jar with a tight kid eady with you to shake the dressing. (Even protein shake jars
or small water bottles can be used)
2) Keep you ingredients ready in a common plate maybe to avoid too many bowls to clean later
(cut chop, partially cooked if they need to be)
3) One large salad bowl to toss dressing and ingredients in
4) Don’t stress about it – do what feels easy!

Easy Butter Chicken sauce

Ingredients:

2 tablespoons oil

2 tablespoons ghee or butter

8 tomatoes (500g)

2 large onion, sliced or chopped

1 1/2 tablespoons garlic

2 teaspoons coriander powder

1.5 teaspoon chilli powder

1/2 teaspoon turmeric

Salt to taste

½ cup of cream or 1 cup of full cream milk (if cream isn’t available)

1 tablespoon honey

2 tbsp kasoori methi (or dried fenugreek leaves)

Whole spices (cinnamon + Bayleaf + cardamom (big and small) + cloves + peppercorn) or garam masala
powder 1tsp if whole spices aren’t available

100g Cashew nuts

Ghee roast makhana

Fox Nuts – 2 cups

Salt/black salt to taste

Pizza or pasta seasoning (optional)

Peri Peri or paprika powder – 2 tsp

Turmeric – 2 tsp

Ghee – 2 tbsp
