Cookie Cake

Ingredients (9 inch Pan)


🥣2 1/4 cups flour
🥣1 teaspoon baking soda
🥣1/2 teaspoon salt
🥣1 1/2 teaspoon corn starch

Whisk these ingredients together in a bowl, and set it aside.

IN A SEPARATE BOWL:
🥣3/4 cup melted butter (unsalted; if you use salted butter or margarine, cut the additional salt)
🥣1 cup brown sugar
🥣1/4 cup granulated sugar

Whisk together until there are no sugar lumps.

IN THE SAME BOWL, ADD:
🥣1 egg + 1 egg yolk
🥣2 teaspoons vanilla extract

Whisk together for a thick mixture. Once that’s all incorporated, mix in the dry ingredients (flour,
baking soda, salt) and mix until it’s fully combined. I usually mix until I can’t see anymore of the
white ingredients — but be careful not to over mix!

You should now have a thick dough that’s also soft. Grab your chocolate chips and fold them into
the dough. I used my hands and would put in a few chocolate chips at a time to each side I
folded over.
The recipe calls for 1 cup of (semi-sweet) chocolate chips but let’s be real, you can put as many as
you want in there... I know I did 😅

Transfer the dough over into your baking pan. Once it’s in, spread it out evenly across the pan so
it can evenly bake. Finally, bake for 30-35mins or until it passes the toothpick test.
I used a 9” brownie pan and had them in for 30mins and they came out perfectly soft & chewy!
You can bake them for a max of 35mins depending on the pan.
