Below is the recipe for Kathirikai Sambar...

Ingredients needed:
Toor Dal - 1/2 cup.
Sesame oil - 3 tablespoon.
Kadugu - 1 1/2 tablespoon.
Brinjals - 3/4.
Onion Big - 1.
Tomato - 3. (else 2 tablespoon tamarind juice.)
Curry leaves - 1 bunch.
Turmeric Powder - 1 teaspoon.
Chilli Powder - 1/2 tablespoon.
Coriander Powder - 1/2 tablespoon.
Salt - as required.
Asafoetida - as required.

Procedure:
Soak Dal in water for atleast 3 hours.
Take a pressure cooker and add Dal.
Add water (4 times of volume of Dal) to it.
Add a drop of oil. (This ensures dal is cooked well.)
Keep the cooker on medium flame till 8-10 whistles. Remove it from flame. Let it
settle down for 7-10 minutes. Mash the dal with a mathu till dal becomes soft.
Take a big kadai. Add oil, once it gets heated add kadugu and let it splutter. Add
curry leaves, brinjal pieces, onion pieces and tomato pieces, asafoetida and saute
for 2 minutes.
Add Turmeric Powder, Chilli Powder and Coriander Powder and saute for 2 minutes.
Add 2 cups of water and salt (i added 1 teaspoon.)
Close the kadai with a lid. Let it cook for 3 minutes.
Open the lid, add the dal and adjust the water consistency. It should be slightly
thick.

Kathirikai Sambar is ready.
