Plan a sensory evaluation test so that you can quantify whether individuals
can differentiate between two different brands of orange juice. Devise a
sensory evaluation test. Make ballots and data sheets for selected test.

Blind labelled sensory evaluation tests are conducted to inform product developers whether
they have met their sensory performance targets in terms of perception of product
characteristics. Such a sensory evaluation test should be selected that is able to predict
preferences of the consumers related to the available different brands of orange juices on the
basis of flavour; so that developers can focus on improving flavours to make them more
desirable to gain profit.
Suitable Test:
Paired Preference Tests involve making choices between two products. It is the simplest and
most popular type of test that looks at the appeal of products to consumers. Paired preference
tests are some of the oldest sensory tests. Paired preference test is a simple task for testers and
can be used with populations that have minimal reading or comprehension skills. The method
does not directly determine the magnitude of preference.
Paired preference testing can address overall preference or preference for a specified sensory
attribute. The test could be extended by asking consumers to indicate the reason for their
preference through the question. The primary goal of a preference test is to find a winner that
product which has significantly higher appeal to consumers than other products in the test.
Materials required:
2 different brands of orange juices that are to be evaluated by the consumers. Samples need to
be presented to the testers according to standard protocols for test conduction.
• Nestle Fruita Vitals Orange Juice
• Pure Country Orange Juice
Test Procedure:
In paired preference tests the participant receives two coded samples. The two samples are
presented to the panelist simultaneously and the panelist is asked to identify the sample that is
preferred. Consumers must be recruited and screened so that they are suitable for the test; all

of the testers need to be users of the product category in order to elicit appropriate responses
related to the flavor of samples.
The paired preference test has two possible serving sequences (AB, BA). These sequences
should be randomized across panelists with an equal number of panelists receiving either
sample A or sample B first. Samples need to be served according to standard protocols for
test conduction. Samples may be placed on trays ahead of time and served at room
temperature
All samples should be labeled with random three-digit codes. Paper labels on trays are
recommended. If a marker is used, it should be odorless. In this test, consumers are forced to
make a choice between the two given samples; responding with no preference or equally
preferred is not an option.
Fill in sample identification and assign each sample with a random 3-digit code.
Determine order of sample presentation for the testers and write it on the master-
sheet; this is done to ensure randomization and counterbalancing of the presented
samples.
2. Write the random codes on the sample containers. Code numbers on sample containers
should match the appropriate code number on the master sheet. Blind labeling of samples is
essential to gather true responses of testers towards product characteristics without forming
judgments. There are two possible serving orders for testers that are AB and/or BA.
3. Prepare ballot score sheet. Fill in the date, the tester number, and the random code numbers
for samples to be evaluated. Instructions are also provided to testers.

Samples should be presented according to a balanced design, i.e., half of the
consumers try first sample A and then sample B and the second half of consumers
tries first sample B and then, sample A.
5. Assemble samples for each tester on a tray in the sequence that they are to be evaluated.
Also, place the score sheet on the tray and water for rinsing the palate. Serve samples
simultaneously to testers for effective sensory evaluation.
7. Collect ballot sheets from testers and compute the data into a response sheet to analyze and
interpret the outcome of sensory evaluation test and develop future course of action related to
which brand of orange juice is preferable.
