“ELECTRONICS MANUAL”

This manual provides information and procedures to help technicians in setting up
and repairing the machine. This is the reason why this manual is addressed to
TECHNICIANS, only.
When turning power on to the machine, it carries out an operation self-test of the
display and all LEDs light up.
The display shows a software version and the machine sets back to the function it
was in when power was switched off (see BLACKOUT).
For clearness sake, all functions are also described in Italian, but English is the only
language that can be set.
ABBREVIATIONS
For the sake of convenience some abbreviations have been included in this manual,
namely:

SOFTWARE VERSION
When turning the machine on, the display shows the software version.
FOR EXAMPLE
CARPIGIANI 193
ver.193bartc14 means sw version= 14
If the machine fails to work, the Technician shall always specify this number
(software version), as well as the machine serial number indicated on the data plate,
so as to take the best advantage of Carpigiani Technical Service.

CONTROLS
As an alternative:
Note
When a key is pressed and the relevant function is accepted, the machine keyboard
will emit a sound signal.
All data relevant to the Pasteurisation function (key included), are disabled
in non-Pasteurising machines.

DAYLIGHT SAVING TIME
From MARCH 30th to OCTOBER 30th included, the daylight saving time is active.
The machine clock will automatically be set forward one hour in the
above-mentioned period. This means that when passing from 01:59 on 30th March to
02:00 on 30th March, the clock will automatically be set forward one hour. One
minute after 01:59, the display will show 03:00 (daylight saving time).
Passing from 01:59 on October 30th to 02:00, the time will be set back to Greenwich
mean time. When the clock reaches 01:59, it will be set backward 1 hour and time
displayed will be 01:00.
The clock will be set to Greenwich mean time until next March 30th.
The daylight saving time is only active when the step Daylightsav Time is set to
Yes.

FUNCTIONS
STOP
In this function the machine is stopped and the relevant LED (backlighted) is ON.
From the Stop status it is possible to select any other function. To change a function
IT IS ALWAYS NECESSARY to first return to Stop.
The display shows:
- ENGLISH - - ITALIAN -
To set the machine to Stop from Production, Storage and Pasteurisation modes,
press the Stop key and hold it down for 2”. This is to avoid unintentional pressures
by “touch”.
If machine is left in Stop mode with mix covering the level sensor, the message
“Why in STOP?” will be displayed to remind the user to set the machine to
Production, Pasteurisation or Storage.

MA – MP HOUR COUNTER RESET
Once the power supply has been restored, press Stop for at least 5” to reset the
number of total and partial (daily) cones.
The display will show:

EVENTS
The machine is provided with a large memory to store the events (log).
To read the stored events, set the machine to STOP.
Press Stop and hold it down for 3”. The display will show:
- ENGLISH- - ITALIAN -
Events can then be scrolled with the Next (for the next event) and Previous
To leave the “Read events” mode, press Stop or do not touch any key for 30”.
The stored events concern Pasteurisation steps, alarms, function changes, blackouts.
The Autosetup procedure does NOT erase events from the memory.
To erase events:
- gain access to “Read events” by pressing Stop until the “**READ EVENTS**”
message is displayed;
- keep the Cleaning key pressed until the “Reset Events” message is displayed.

TEMPERATURE CONTROLS
When the machine is in Stop mode, the TEV temperature is checked and when it
reaches or exceeds 15 °C, a Pasteurisation cycle is forced. By pressing the
Production key the machine will automatically switch to Pasteurisation, unless the
front lid has been opened and then closed again (Spigot Opened). In this case, the
test on TEV ≥ 15°C will be disabled for 60 minutes and the Production key is
enabled.
If TEV remains <15°C in all events, all functions will be allowed with no time limits.
If the mix level is covering the level sensor and the machine is in Stop mode, a time
will be counted.
If this time exceeds 24 hours, the display will show:
and the Wash procedure will be started and the Production mode disabled.
The Reset conditions are the same as Wash (IMS opening and closing).

PRODUCTION
The access to Production is only enabled when the mix is above the
minimum level sensor.
The product is cooled down in the cylinder until Hot set in step HOT (see
programming table) has been reached.
After the desired consistency has been reached (Hot), the beater continues working
for 3 more seconds (or for the time set in step Delay Beater) and then it will switch
off.
If necessary, tank storage will be started, provided that
TEV Storage Temp.
After reaching the Hot value, if no cone is dispensed, the beater will start every 10
minutes (Cyclic Timer) and run for 10 seconds to check the ice-cream consistency:
should it be below HOT –Hot Different.), the compressor and the relevant
solenoid valve (EVFC) will also start until ice-cream reaches the set consistency.
All above-mentioned actions will be performed on both side 1 and 2.
If HOT has already been reached and the machine is in Production stand-by mode,
as soon as a cone is dispensed the beater motor will start running for 15 seconds to
check the consistency.
During the ice-cream distribution, when the mix in the tank is below the minimum
level sensor, the display will show the message Add Mix, and it will only be possible
to dispense the number of cones set in step Last Cones.

As soon as you gain access to the Production mode, a menu will give the possibility
to set the type of product you want to serve from both sides, i.e., Soft (soft
ice-cream) or Fruit (water ice); the display will show:
In this window, the display shows the type of product dispensed from each side:
Soft/Yo (left) = on side 1 Soft ice-cream or Yogurt is dispensed.
Soft/Yo (right) = on side 2 Soft ice-cream or Yogurt is dispensed.
The screen above is the first menu page; by pressing the Production key it is possible to gain access to the following
combinations:
Fruit Soft/Yo (Fruit on side 1 and Soft/Yogurt on side 2)
Soft/Yo Fruit (Soft/Yogurt on side 1 and Fruit on side 2)
Fruit Fruit (Fruit on both sides)
Once the desired production combination has been displayed, wait for 3’’ without pressing any key the machine
automatically switches to the selected type of production and loads the relevant settings.
Now, the production mode is activated and the display will show:
- ENGLISH- - ITALIAN -
The first top line refers to the sundae if ready to be served (Sundae Ready!) or proper consistency not yet
The second line refers to the TEV temperature and the days to the next necessary wash. In the example above there
are still 14 days to the next wash.

In this window, the first line (on top) displays the tank temperature:
= ON when the tank is cooled +014°C= tank temperature (TEV)
In this window the display shows the daily cones (from 0:00 to 23.59):
To reset them, switch the machine off and then on again. Soon after switching on (approx. 1 minute),

To change cycle in the 193 Lait, press the Production key for 2” from the Production
function.

FRUIT PRODUCTION
When selecting Fruit production in one or both sides, the machine carries out the
production cycle described below:
The HOT (HOT 1-2 Fruit) to be reached is set in steps T49 and T50 of Technician
Programming. In particular these steps refer to the HOT values to be reached in
Cylinder 1 and 2.
Furthermore, in Programming Technician mode it is possible to set the ON and OFF
times (EVFC Fruit T ON - EVFC Fruit T OFF) that represent the opening and
closing times of EVFC1 and EVFC2 (depending on the selected side) during the fruit
production.
After reaching the HOT value, if no cone is dispensed, the beater starts working
every 3 minutes (T48 Cyclic Timer Fr.) for about 10 seconds to check the ice-cream
consistency: if it is below HOT 1-2 Fruit – Hysteresis Hot 1-2 (Hot 1-2
Different.) the machine starts both the compressor and the solenoid valve (EVFC) of
the active fruit side, to reach the set ice-cream consistency.

DO NOT SERVE (WAIT)
When selecting Production, the display shows Wait ! and this means that the ice-
cream is reaching the ideal consistency, therefore it is necessary to wait until the
message is no longer displayed:
For example, on left side:

Once the Hot value has been reached (the first time you access to Production,
whereas for the next times the Hob value will apply) the machine will pass to the
standard operation.
The display will show:
In particular:
If the consistency falls below the value set in step Hot Block, Wait! will be
displayed. This means that the ice-cream is not ready to be served.
The display will show Sundae Ready ! ONLY after reaching the Hot Block on BOTH
sides.
If a cone is served the display will show Wait ! (MIR engaged), and all outputs will
be cut out (MA, MC, EVFC OFF).
In particular, if the consistency is reached on one side only, and the ice-cream is
dispensed from that side, the relevant MA, MC and EVFC ON outputs will remain
active; if, instead, we try to serve ice-cream from the side where the correct
consistency has not been reached, all relevant outputs will be cut out (MA, MC, EVFC
OFF). If we dispense product from the central spigot, provided that the Hot Block
value has not been reached yet in one of the two sides, both side outputs will be cut
out to avoid non-homogeneous distribution of the product.
If Storage must be activated in the tank, MC + EVFV will remain active.
As soon as the photocell is disengaged, the Production will restart and MA and MC +
EVFC will be reactivated.
If the consistency value goes below Hot Block – 5 points hysteresis, the display
will show Wait!.

MIX OUT
In case of low mix in the left tank, the first line will display: Mix Out 1. In case of low
mix in the right tank, the first line will display: Mix Out 2. in case of low mix in both
tanks, the first line will only display: Mix Out 1!. in the latter case, if we ONLY refill
the left side until the correct level is reached, the message Mix Out 1 will no longer
be displayed and it will be replaced by Mix Out 2.
In all cases above, the tank low level LED will turn on on the keypad and the
buzzer plays continuously.
The second line displays how many cones we can still serve (Last Cones) before the
machine automatically sets to Storage mode.
The number of cones we can still dispense is set in a machine programming step.

Note:
When Mix Out is displayed, it means that no access to Production or Pasteurisation
screens is allowed.

ICE IN THE CYLINDER
In Production, if the TE temperature of one of the two cylinders reaches a value less
than or equal to the one set in step Ice Cylinder, the Ice Cylinder alarm will be
triggered and will be stored among the events, ONLY.
The display does not show this alarm.
Under this condition, all cylinder outputs are cut out and the machine cools the tank,
if necessary.
When the Production Timer is out, the consistency will be checked again if, in the
meantime, the cylinder TE has become higher than Ice Cylinder.
TIMEOUT PRD
In Production, if consistency does not reach its set point within the time set in step
Timeout Prd., the cycle will be forced to end as if HOT had been reached and the
alarm will be stored among the events (not on the display).
If Hot Block is not reached within 15 minutes after production MANTECAZIONE start,
the machine will switch to Stop and the Timeout Prd. alarm will be displayed.

PASTEURISATION
- for the PSP version only-
No Pasteurisation process can be started if the mix inside the tank is below
the minimum level sensor. If both sides are active, the mix must reach both
levels.
If, step Start Pasto Time is set to “no”, the automatic Pasteurisation is disabled
and it can only be started manually (General Market).
Warning: 5 seconds after the access to the Pasteurisation mode, the cycle must be
completed.
If the Pasteurisation is not successfully completed, the machine will NOT enter into
the Production mode until the execution of a full Pasteurisation cycle.
To force the access to Pasteurisation even though the machine is in reserve (mix

The product in both tank and the cylinders is heated up to 65°C, kept at this
temperature for 30 minutes (fixed time), and then cooled down until the storage
temperature is reached.
At the end of the cycle, the monitor displays “- End of Pasteurisation -”,
followed by date and time, meaning that the pasteurisation process has been
correctly executed.
The beater in the cylinder turns cyclically during the Heating, Pause and Cooling
phases (from +65 °C to +20 °C in the cylinder) and when the cylinder reaches the
storage temperature; whereas while cooling, from+20 °C to cylinder storing
temperature, the beater works continuously.
Also in the event that the tank reaches the storage temperature earlier than the
cylinder and TEC>20 °C, the beater in the cylinders is forced to be ON (continuous
operation).

When TEC reaches 20°C, MA is always ON also when cooling the tank:

HEATING
Heating is carried out with “positive hysteresis”: this means that if a temperature of
65 °C has been set, heating will be disabled at 67 °C and will restart at 65 °C.
If you want to skip the heating step and the 30 minute pause, press the Storage key

In this window, the first line (on top) displays:
- Heating – i.e., heating step of Pasteurisation process.
In this window, the first line (on top) shows the Tank temperature (TEV), whereas the second line shows the Tank
anti-ice temperature (TGV).
: The arrow up indicates that the Tank is being heated.
During the heating cycle, the compressor heats cylinder and tank alternatively.
The default times of the heating step are, as a rule, 15 seconds for cylinders and 30
seconds for tank.

ACTIVATED UNITS
Upon start, MP is activated for a fixed time of 30 seconds, whereas MMV runs for the
entire cycle.
In Cylinder Heating the following units are activated: MA, MC, EVRC for 15 seconds
(see the table below). The following units are activated: MC, EVRV, for 30 seconds
(see the table below).
EVRC, MP and MA are referred to sides 1 and 2.
If the tank reaches the Pasteurisation temperature earlier than the cylinders, the
beater in cylinders will run continuously.
If TEV < TEC by: >= 4°C ON EVRV 46” / ON EVRC 15”
If TEV < TEC by: >=3°C and <4°C ON EVRV 38” / ON EVRC 15”
If TEV < TEC by: >=2°C and <3°C ON EVRV 34” / ON EVRC 15”
If TEV < TEC by: >=1°C and <2°C ON EVRV 32” / ON EVRC 15”
DELTA TGV-TEV
(Belt Alarm)
In Pasteurisation Heating, if TGV temperature becomes > than the TEV temperature
by the value programmed in step Delta TGV-TEV, Alarm Belt will be displayed and
the machine will set to Stop.
Check the driving belt or if the rotor is in its seat.

PAUSE
If you want to skip the 30 minute pause after the temperature of 65°C + hysteresis
temperature has been reached, press the Storage key for 2 seconds; in this
way it is possible to set the machine to the Cooling cycle by skipping the 30 minute
pause.
In this window, the first line (on top) shows the Tank temperature (TEV), whereas the second line shows the Tank
anti-ice temperature (TGV).
: The arrow indicates that the Tank is being heated in case its temperature falls below 65 °C.

ACTIVATED UNITS
If only the tank needs to be heated during the pasteurisation pause, MC and EVRV
will be activated.
If cylinders and hopper need to be heated at the same time during the pasteurisation
pause, the heating will be cyclic: 15 sec. MA, MC and EVRC and 30 sec. MC and EVRV
(the times given in the previous table relevant to ON-OFF times according to TEC and
TEV temperatures still apply).

COOLING
The product is cooled down to the cylinder and hopper Storage temperatures
(Storage Temp.).

In this window, the first line (on top) shows the Tank temperature (TEV), whereas the second line shows the Tank
anti-ice temperature (TGV).
: The arrow indicates that the Tank is being cooled.
ACTIVATED UNITS
MMV runs for the entire cycle, until TEV reaches the Storage temperature.
In Cylinder Cooling, the following units are activated: MA, MC, EVFC, MV for 15 sec.
(see table).
In Hopper Cooling, the following units are activated: MC, EVFV, MV for 30 sec.
(see table).

Upon cycle end the machine sets to Storage and displays - Pasto End - with the
relevant time and day of the week.
ACTIVATED UNITS
When the Storage set-point has been reached and the tank needs to be cooled, MMV
is activated for the tank cooling duration (in parallel with EVFV).
In Cylinder Cooling (side 1 and 2), the following units are activated: MA, MC, EVFC,
MV.
In Hopper Cooling, the activated units are MC, EVFV, MV.
Anti-ice (defrost)
When the TGV temperature reaches a value lower/equal to –18° (step Hopper
Defrost) EVRV is activated (and EVFV stays on). The display shows the arrow up.
When TGV increases by the value programmed in the step Hop. Defrost Hys., EVRV
switches off.

STORAGE
Storage is used to get the product temperature both in tank and cylinders at 4 °C
(this value can be programmed in Storage Temp.).
As far as the tank is concerned, storage is checked by TEV whereas cylinders are
checked by the probes TEC1 and TEC2.
Every time you set the machine to Storage, the values of TEC probes (temperature
in the cylinders) and TEV (temperature in the tank) are read.
If both cylinders and tank need to be cooled at the same time, the tank has the
priority.
In this case, the Storage will be carried out cyclically.
When Storing the tank, EVFV + MC are activated for 30 seconds.
When Storing the tank, MA + MC + EVFC (side 1 and 2) are activated for 15
seconds.
ACTIVATED UNITS
MMV runs during the entire cycle, until TEV reaches the Storage temperature.
Active units in Cylinder Cooling: MA, MC, EVFC, MV for 15 seconds.
Active units in Tank Cooling: MC, EVFV, MV for 30 seconds.

CLEANING
In this function MA with MP are enabled for 30 seconds. Then the machine
automatically switches to Stop mode to prevent cylinder early wear.
After entering the Cleaning function the display shows what follows:

In this window the display shows in the first line (on top) the temperature values detected by the probes of the two
Cylinders: TEC1 and TEC2.
In this window the display shows in the first line (on top): TEC1 and TEC2.
MA is disabled whereas MP remains active.
In this window the display shows in the first line (on top): TEC1 and TEC2.
MA is re-enabled and MP is disabled.

Press Cleaning to pass to Heated Cleaning, where both MA and EVRC+MC are
enabled until the cylinder temperature reaches the value Set TEC Cleaning set in
step T85 in the Programming Table:

In this window the display shows in the first line (on top): TEC1 and TEC2.
MA and EVRC are enabled until TEC reaches the Set TEC Cleaning value.
Once the Set TEC Cleaning value in both cylinders is reached, the machine switches
back to Stop mode.
By pressing the Pasteurisation key from Cleaning, you will enter in the display
of side 1 MA and MP hour counter.
By pressing Pasteurisation key again, MA2 and MP2 hour counter will be
displayed.

WEEKLY CLEANING WASH DAYS
The first screen in Production displays the number of days to next wash:
- ENGLISH - - ITALIAN -
The second line refers to the number of days to next wash. The example shows that the wash cycle will be executed
in 14 days.
If, on wash day, the ice-cream Production function has already been set and you
serve ice-cream, everything works as if the machine were really in Production mode,
so MP, MA and MC are enabled and run until reaching the proper product
consistency.
The display shows what follows:
The Ice-cream Production function is instead inhibited and, if you enter in another
function, such as Stop, Storage, Pasteurisation or Cleaning, the machine does not
accept it.
The display indicates what follows:
To set the number of days back to the programmed value (Wash Days) it is
necessary to wash your machine or to remove the front lid and reassemble it (or yet,
disconnect and re-connect the IMS).
Note
The Wash day starts decreasing from 23:53 to 23:56.

CLEANING THE DISPLAY
Keypad lock
By pressing the Cleaning key for 3 seconds from any function, all keys are
disabled and Cleaning LED will blink.
This allows cleaning the capacitive keypad without causing any unintentional function
changes.
The machine will remain in the same function.

ALARMS
The machine displays any possible alarm message and makes it blink.
In case an alarm has been reset, the relevant message will be displayed in a fixed
way (it will not blink).
The machine can be used in ice-cream production mode also when an alarm is
active, unless it is a critical one; in this case, press STOP and do not use the machine
until it is repaired.
Here below is the alarm list:
ALARM DESCRIPTION
Mix Esaurita 1-2 The display shows Mix Out when the mix is below the level
Mix Out Left - Right sensor. When the mix is low and in Production you dispense
a number of cones same as/or higher than the value set in
step Last Cones, not only will “Mix Out” be displayed, but
your machine will also set to “Hot reached” position, so
disabling all outputs from the side where cones are out.

IMS opening also resets the Pasteurisation flag, so that if
the machine was in Pasteur. mode, you can directly enter in
Production by opening and closing the lid.

Ice Cylinder In Production, if one of the two TE becomes lower than the
(ICE)
value set in step Ice Cylinder, the machine sets to position
“HOT reached” and stores the alarm Ice Cylinder 1 or 2
among the events.
The alarm might be caused by an insufficient feeding to the
cylinder.
Check the pump efficiency.
The alarm reset will follow as soon as the temperature in
the cylinder raises back.

L -nn g In Production mode, if “TEV +4°C L- nn” is displayed it
W -nn g means that nn days remain until the machine must be
(Wash)
washes. The Wash Alarm might also be caused by leaving
the machine 24 hours in Stop mode with mix above the
level sensor.
See WEEKLY CLEANING.
Pastorizzare ! When machine has been set to Stop with mix above low
Pasto needed ! level sensor for over 60’, TEV temperature is checked and
if it is 15°C or higher, Pasteurisation is needed. If you press
the Production key, the machine will automatically set to
Pasteurisation, unless you open its front lid and close it
again. In this case, the test on TEV ≥ 15°C will be cancelled
for 60’ and the Production key will be enabled.
If in all these cases, TEV<15 °C, all functions will be
allowed with no time limits.
Perchè in STOP? If the machine is left in the Stop mode with mix covering
Why in STOP ?? the level sensor, the message “Why in STOP?” will be
displayed after 30 seconds and an intermittent beep will be
emitted. This is to remind the user that the machine must
be set to Production, Pasteurisation or Storage.
The above-mentioned message will be deleted by entering

All.Pist. aperti The “Piston opened” alarm (active only if T79 = Yes) signals
Piston opened that a piston is open or a piston is missing in the lid. To
reset the alarm, close the pistons with the lid assembled to
confirm the effective presence of the pistons. The alarm can
be triggered again after an IMS or in case of power
blackout.
This alarm blocks the access to all functions.

BLACKOUT
In the event of a blackout, if the machine was in Cleaning mode, when the power
supply is restored, it sets to STOP.
If, instead, the machine was in Pasteurisation Heating or Pause mode, upon power
supply restoration, it switches on in the same function where it was before the power
blackout (with Power failure on the display).
If the machine was in Production or Pasteurisation Cooling mode, upon power supply
restoration, it checks the TEV temperature and how long the power blackout lasted;
if a blackout lasts longer than what indicated in the table below, the machine will
repeat the pasteurisation completely and alarm “Power failure” or “Power On” will
be stored in the “events list“.
Otherwise, if blackout time is shorter than the one indicated in the table below, the
machine will return to the function where it was before blackout.

AUTOSETUP
CAUTION: After an autosetup, the probe offset values are zeroed. Before executing
it, it is advisable to refer to the Programming Table.
The procedure sets all programmable values according to the ones indicated in the
column “typical value”.
To do that, switch machine off and on again.
WAIT for 1 second after switching on, and then press the key .

EVENTS LIST
The machine has a large memory to store most of the events (selected function,
alarms, etc...).
To read the stored events the machine must be in STOP mode; then press
and hold it down for 5 seconds.
The display will show the last occurred event with the relevant date and time.
For example:

The first line displays date/time and the second one the event.
Events are scrolled with the Next (next event) and Previous keys
(previous event).
If you do not press any button for 30 sec. or if you press STOP, the machine will
switch to STOP.
The event list helps us to understand when and how many times an alarm has
occurred.
Moreover, we can have a report that tells us about the pasteurisation cycle while
checking:

T03 Hysteresis Hot 1 (Hysteresis side 1)
A lower value makes HOT more sensitive when serving ice-cream. With
machine in Production and MIR 1 or 3 being energized, after the compressor
cuts out by HOT, the compressor is connected again when the consistency
value displayed is lower than HOT minus value set in this step.

T09 Lock Hot 1
Hot value under which everything stops (MA, MC and EVFC1 OFF) if you try
to dispense a cone.
As soon as MIR re-opens, Production starts again and MA, MC and EVFC1 are
ON again.
The keypad displays: “Wait!”.
If consistency exceeds the Hot Lock value, “Ice-cream Ready!” will be
displayed.
If consistency lowers below Hot Lock – 5 points hysteresis, you return to the
lock condition with message “Wait!”.

T12 Trimmer Hot 1 (side 1)
It’s a number automatically set after Autosetup procedure.
If the number is increased, ice-cream consistency will decrease at the end of
a production cycle.

T17 Last Cones
It is the number of cones the machine can dispense in Production when LED
of low level sensor switches on.
The machine will then automatically set to Storage.
T19 Pasteurising
Depending on the set value, one can choose whether to have a
pasteurisation cycle (YES) executed or this function disabled in case of non-
pasteurising units (NO). Storing occurs after opening the front lid (IMS).
T23 Storage Temp.
Cylinder/tank temperature storage.
It is controlled in Storage, Production and Pasteurisation.

T26 Tank Anti-ice Hyst.
Tank anti-ice hysteresis.
193 PSP:
In tank cooling, when the TGV temperature reaches a value which is less
than or equal to the one programmed in step Tank anti-ice, hot gas
solenoid valve energises for tank defrosting, until the TGV temperature raises
by the value set in this step.

193 PG:
In tank cooling, when the TGV temperature reaches a value which is less
than or equal to the one programmed in step Tank anti-ice, MC, EVFV and
MV are cut out until the temperature exceeds the hysteresis (the value is set
in this step).

T33 TEV Setting
TEV tank temperature setting.
In this step you can set the real temperature of the mix in the tank.
It is necessary to set the sensor after setting the machine to Storage mode,
at a temperature of (4 °C).
Thanks to this electronic CPU, the machine must not reach the room
temperature for the probe setting.
With an accurate thermometer check the temperature in the hopper; if the
reading is not (4°C) (value indicated on display), press the increase or
decrease keys until the temperature matches with the one read by the
thermometer.
T40 Fahrenheit
Display of the temperature in °C (No) or in °F (Yes).
The temperature will be displayed in °C or °F.

T48 Fruit Cyclic Timer
Cyclic Timer in Fruit Production.
The beater starts every 3 minutes (programmed in this step) to check the
ice-cream consistency.

T71 TESC2 Alarm
It enables (YES) or disables (NO) the Cylinder Safety thermostat alarm on
side 2.

If an alarm is enabled, the machine will be protected by that alarm.
When an alarm is disabled, the machine will not be protected by the alarm and you
will be working on your own risk.
Example:
Disabling an alarm can be useful when a component is broken, for example, if safety
thermostat is broken and its contacts are open, the machine will never heat up.
To bypass that status temporarily, disable the TESV alarm: the machine will ignore
the safety thermostat.
Caution: after replacing a safety thermostat, do not forget to enable the alarm so as
to protect your machine.

SOFTWARE UPGRADE
For a CPU software upgrade, it is necessary to use the special serial cable supplied
by Carpigiani connect it to the CPU through the Serial port (see electronic card
layout) and to serial port RS232 of any Personal Computer (PC).
The software can be updated by transferring the new software from the computer to
the CPU and using the M16C Flasher.
Once you have connected your PC (RS 232) to the CPU (Serial port) with the special
cable code 577.400.032, connect the machine to the mains.
