HEALTH AND SAFETY PROJECT

INTRODUCTION:
The health ,safety and security system at infinity
kitchen is been designed well for the staff and the customers who visit the
place too. There are cameras for video surveillance when running or opening a
property ,it also important to consider the health and safety of the staff and the
guests, it is the requirement of a restaurant.

1)Establish and maintain a framework for


health safety and security for infinity
kitchen.
The infinity kitchen is well designed for a easy access the kitchen is
massive which has a free way for the other staff passing through and the
kitchen is divided into three parts

a)this part is prepared for all the deserts, pastas, for fruit carving and ice
carving and this part is kept all the time neat clean and tidy and has the
emergency exit near to this part. the sign boards are mentioned
appropriately .

b) This part is were they make all the stocks , garnishing .cutting ,fillet of the
meat and sea food so on for nice en place for ready to use .

c) This part of the kitchen is the main part as all the cooking goes here like
most of the mise en placed and cooked here this kitchen is secured also with
the video cameras for not causing any theft.

Provide information on health, safety and security


relevant to kitchen operations.
According to the health and safety aspects the infinity kitchen followed
everything well they fire exit at a easy access from the kitchen and they have
good environment for staff to work in and they follow the strict OH&S policies
for every thing in the kitchen like when handling some thing like hot dishes or
when cleaning the equipment.

Monitor safe work practices at infinity kitchen


In the infinity kitchen the staff who work they follow all the requirements which are
kept by the organization like wearing the steel cap shoes while arriving to job.wear
gloves while touching the food item and when using the any chemical for cleaning
they make sure there is not food in the room if so it should be kept out of the reach
because there are also chances of the chemical going into food by the air in the
room.

Establish and maintain consultative arrangements


for the management of health safety and security
between the group and the management and the
staff of infinity kitchen.
The management has designed and invented lot of health and safety measures
considering the staff who is working in the infinity kitchen like assisting with the
templates for each and every thingand they also designed a log book for the staff to
make a note of the temperature of the fridges on every shift to make sure the food
inside is stored well to prevent the food poisoning.

Coordinate consultative arrangements for the


management of health, safety and security issues
,between the group and management and staff of
infinity kitchen.
The consultative arrangements are maintained by the head chef and the
management they design some health and safety measures according to the
environment and changing trends in the industry and they also design the security
systems like recording the the stock on hand and stock received and will make sure
about checking the food items periodically in the cold room this is also done by the
head chef

Establish and maintain practices for identifying


hazards ,assessing and controlling risks.
The hazards identification is done by like controlling and observing the control points
there is lot of hazards involved but if the critical control points are maintaind they can
be reduce easily thats what they do in the infinity kitchen so the points of the
occurring the hazards are less when compared to the other kitchens and this is also
good for the staff that they work in the good environment .

Implement and monitor procedures for identifying


hazards assessing and controlling risks.
monitoring the risks makes it easy to identify the hazarads for the next time and
control it so that we can make sure what hazards can be followed when this kind of
risk is faced this is usually done by the head chef or the next level chef in the infinity
kitchen.

Evaluate the organization health, safety and security


system.
The health and safety organization system in infinity kitchen can be done by
checking everything is going well or not and by finding out by staff in the staff
meeting and observe what happening during the the work like which places are not
safe for staff to access fast during the work period.

Implement and monitor health safety and security


training.
The health and safety training in this kitchen is provided to all the employees before
they join or on the first thirty days of their job by the team member of the kitchen or
head chef and also during the job some time organise training for health and safety
measures so that they remember it .conducting a staff training periodically so that
staff can able to know about the changes in the food industry.

Maintain OH&S records and reports


This is maintained by the head chef or sou chef or the head chef on the shift .it
contained the information about the records of the maintaining the temp of the
fridges and also the condition of the equipments and the reports include the incident
report if something take place on the shift like someone injured or getting a bad
complaint about the food so on all this reports are maintain and this is usually kept in
the chef’s office.
