Sarah Josephine Alarid

I am from Santa Barbara, CA and graduated from Cal Poly San Luis Obispo
in 2016. Before starting the internship, I worked for three years as a WIC
Nutrition Assistant and Lactation Counselor for Fresno EOC. In my free
time I enjoy reading, cooking, baking, and spending time with my dog, my
friends, and my family.

Community
Nutrition Rotations
WIC Administration/ Human Resources
o For this rotation, I developed my supervisory
skills by completing a mock coaching
&counseling session and a annual performance
evaluation
o I also improved my public speaking skills by
presenting on the topic of pregnancy and weight
gain (pictured). I also gave a presentation of the
transition from the paper vouchers to the WIC
card to the UHC WIC staff
o However, the biggest project was creating a
business plan for a new WIC clinic. This included
designing a floor plan and researching the
community the new office would be located.

Breastfeeding Services in WIC-Merced County Community Action Agency
o This rotation was a lot of fun because I
witnessed first-hand the potential WIC
has in providing ideal breastfeeding
resources and support
o I learned about all the programs
Merced County has in place to support
their breastfeeding moms
o This programs gave me some ideas to
bring back to my own WIC agency

Kaweah Delta Lifestyle Center
o During this rotation I completed assignments for a
clinical outpatient facility location in Visalia, CA
o I researched measuring body composition
through ultrasound body fat testing
o I researched easy, low calorie recipes for a
cooking class and created a presentation on
healthy tips for eating out designed for
developmentally disabled adults. You can see my

o My favorite assignment was creating a handout
on the Mediterranean Diet which can be found
here
WIC Education and Leadership
o I completed this rotation at the Merced
Community Action Agency WIC office. During this
rotation I experienced the day-to-day activities
and projects of WIC education coordinators and
RD supervisors
o I learned how to counsel high-risk WIC
participants, create concise nutrition education
handouts, design and present informative to WIC
employees, and how to lead employee health
initiatives
o Here you can find a handout I created on
gestational diabetes that will be used during
nutrition counseling at this WIC agency!
Head Start
o This rotation was completed with
Fresno EOC Head Start. I created
educational material on food
allergies and teaching intuitive
eating to children
o I also developed team building
activities for Head Start employees
o My biggest project was developing a
presentation for the Local Parent
Committee on how nutrition
supports the immune system. You

United Health Centers Outpatient
o During this rotation I learned about community-
based outpatient programs and how free doula
programs positively impact people in low-income
communities.
o I also researched ways to perform motivational
interviewing during nutrition coaching in the
outpatient setting. You can find my motivational
interviewing role play script here.
o I also created a 3-day menu for a Hispanic
pregnant diabetic woman in the outpatient
setting.
MNT/ Clinical
Nutrition Rotations
Veteran’s Home
o Veteran’s Home is a facility dedicated to
serving senior veterans. There is a Skilled
Nursing Facility (SNF) for veterans with
dementia and assisted living for more
independent residents
o During this rotation I performed annual, semi-
annual, and quarterly nutrition assessments
on residents but researching their file for
nutrition-related data. I also interviewed the
residents to discuss current goals to achieve
better health

completed on a newly admitted resident to

DaVita
o This assignment began during the middle
of the COVID-19 pandemic so I completed
my assignments remotely
o I completed assignments on peritoneal
dialysis, nutrition assessments for the renal
patient, bone disorders related to renal
nutrition, and evaluating lab values
o One of my favorite assignments was
creating a 2 day menu for a patient with
stage 5 kidney disease starting dialysis. You
can find my menu here
Adventist Health Hanford
o Due to COVID-19, this rotation was done
remotely with my Internship Coordinator
adopting the role as my rotation preceptor.
Beth gave me a variety of assignments
including case studies on heart failure, diabetes
wound care, sepsis, myocardial infarction
(heart attack), and cirrhosis in the clinical
setting.
o I also designed and delivered education
material related to heart failure. You can find
my heart failure handout here.
o During this rotation I learned how to effectively
perform and write nutrition assessments which
will be an highly valued skill in the clinical
setting.
Sierra View Medical Center Porterville
o Due to COVID-19, this rotation was done remotely. I
was fortunate in that the clinical manager was able to
oversee my rotation. I spoke with social workers,
speech therapists, and dietitians who worked in the
ICU, the acute setting, and the outpatient setting. I was
also able to listen in on outpatient counseling sessions
and multidisciplinary medical meetings with patients.
o During this rotation is worked with my preceptor to
design an in-service handout for clinical staff on how to
properly measure meal intake. You can find that
handout here.
o For this rotation learned about tube feeding practices
and the importance of providing high quality nutrition
support for critically ill patients.
Kaweah Delta Medical Center
o My rotation at Kaweah was my first in-person
clinical rotation
o During this rotation, I learned how to perform a
Nutrition Focused Physical Exam on a patient. I
also learned how to write concise, description
nutrition assessments in a timely matter. I also
encountered many COVID-positive patients and
learned the best ways to provide nutrition support
for them
o I also gained experience in the out-patient cancer
center run by Kaweah. Under the supervision of
the oncology RDN, I created a handout for
nutrition and cancer treatments. You can find my

Porterville Developmental Center
o For this rotation I learned about the role of
the California Department of
Developmental Resources (DDS) and what
resources are available to people with
disabilities, families/caregivers, and
professionals
o I also learned about the specific nutritional
needs of people with developmental
disabilities like Cerebral Palsy

Food Service
Management
Rotations
Nutrition Therapy Essentials
o I worked at Horizon Health & Subacute Center which
is a skilled nursing facility based in Fresno for three
weeks. In this setting, my role was to oversee the
kitchen to ensure food was safe to eat and delicious. I
closely worked with the Certified Dietary Manager to
guarantee that the kitchen met state regulations
o In this rotation I learned new skills like how to
complete a nutrition screen for new residents, how to
perform a sanitation audit, and how to write a
Continuous Quality Improvement Study and a Quality
Assessment for Performance Improvement (QAPI)
report.
o The Continuous Quality Improvement Study
contained a quality of meal service review, an
accuracy and acceptance of supplements review, a
test tray audit, an evaluation of the emergency food
supply, and a resident interview. My completed study

Fresno Economic Opportunities Commission Food Services
• During this rotation I enhanced my
knowledge of food service
management by designing menus,
estimating costs of menu items
per serving, and overall mastering
various skills needed in managing
food service operations.

• This rotation was especially useful
in that I enhanced my critical
thinking skills and gained more
experience solving common food
service prompts I would encounter
working in this field
Woodlake Unified School District
• During this rotation I enhanced my knowledge
of food service management in the school
setting. I attended California School Nutrition
Town Halls and learned how other school
districts are handling distance learning and
feeding their students.
• I was asked to create a flyer on exercise for the
students of Woodlake Unified. You can see my
flyer on the importance of exercise and
distance learning here.
• This rotation was especially useful in that I
enhanced my communication skills by
researching various food service topics and
writing reports summarizing my findings.
Madera Community Hospital
• During this rotation I gained more
experience designing and creating
nutrition education material for food
service staff and MCH patients
• I was asked to create a flyer on a topic of
my choice that would be placed in the
café. You can find my flyer here. I also
created a napkin holder flyer for staff you
read in the MCH breakroom. You can find
that here.
• I really enjoy creating handouts and other
education material so I found this rotation
very enjoyable and interesting.
