Easy Chicken Rendang

Ingredients
6 Chicken Drumsticks
150 g Turmeric Powder
20 g Ginger
60 g Gula Melaka, chopped
100 g Shallot
4 tbsp Desiccated Coconut
1 tsp Lemon Chilli Sauce
270 ml Coconut Milk
5 tbsp Cooking Oil

Method
1. Marinade chicken drumsticks with 1 tablespoon Turmeric Powder. Set aside.

2. Finely chop ginger and shallot using Turbo Chopper.

3. Add red curry paste, ginger, shallot, lemon chilli sauce with 5 tablespoons of cooking oil in UltraPro™.
Mix thoroughly to ensure the spices are well coated with oil.

4. Cook mixed spices in Microwave on High for 5 minutes, stirring once during interim.

5. Add in Desiccated Coconut, Coconut Milk and Gula Melaka. Mix well.

6. Add in Chicken Drumsticks and ensure all drumsticks are well coated with spices.

7. Cook it in Microwave on High Heat for 10 minutes.

8. Remove from microwave oven and let it rest for at least 10 minutes before serving.

TIP: Adjusting the Cooking Time

If stack cooking method is used, add 5 more minutes to the cooking time on High Heat. This is to
allow for better heat distribution to cook the two dishes together.

Size of the chicken parts used also plays a factor in the cooking time.

TIP: Rendang is actually best eaten the next day as the chicken will be immersed totally in the sauce, making
it more avorful. You can keep it in the refrigerator, re-heat it the next day and serve with hot Nasi Lemak.
