Mille feuille : Layered puff pastry, vanilla and cognac mousseline cream

Ingredients:

Puff pastry already made


1 egg beaten

Pastry cream :
 6 egg yolks
 ½ cup of Sugar
 4 tbs flour
 2 cups of half and half
 1 Vanilla pod split in half, scraped seeds inside
 4 tbs butter
 1 pinch of salt
 2 tbs Cognac

 1 cup Heavy whipping cream, whipped: soft peak

 White chocolate melted


 Dark chocolate melted

Directions:

To make the pastry cream, pour the milk and the vanilla extract to simmer. In a mixing bowl,
beat the egg yolks and the sugar with a whisk until the mix start to slightly foam and become
whiter. Then sprinkle the flour and continue to stir with a spatula or wooden spoon. Once the
flour incorporated, slowly pour the milk over the batter and incorporate it.
Once all the milk is mixed well, pour the mix in the pan you used for the milk. Cook it while
stirring constantly until the cream thickens. Once the cream starts to boil, keep it simmering for
2 minutes then incorporate the butter off the stove.
Transfer the cream into a sheet pan then cover the pastry cream with plastic film. Cool it off 15
min room temperature then refrigerate it until you need it.

Pre heat your oven at 375.


Cover a sheet pan with parchment paper, lay down the puff pastry, cover with another sheet of
paper, then cover it up with another sheet pan and bake it off.
Once baked and cooled on a rack, cut in some rectangles 5 inches X 2 inches. For four people
we need twelve rectangles. Reserve on the side.

Once the pastry cream cold, put it in a mixing bowl and whisk it so it look homogeny, then add
the whipped cream then add the brandy to taste. This is a mousseline cream.
Lay 9 of the rectangles and cover them up with half inch of the mousseline cream using a small
spatula.
The next step is to build the mille feuilles. Put two puff pastry filled with cream on top of each
other and top it with a plain rectangle of puff pastry.

Grab the melted chocolates, and cover each tops with the white chocolate, then use the dark
melted chocolate and drizzle it with a spoon on top the white chocolate layer to create a
design.
