Different Types of Hotel Kitchen Cleaning

Agents / Chemicals (D1 to D10)

Different types of cleaning agents are used to keep the hotel kitchen and working
area in a neat and hygienic condition because there is no responsibility greater
than protecting the guests who eat the food which is produced from the kitchen.
When it comes to kitchen cleaning chemicals/agents Taski or Diversey or Suma
products are considered as the benchmark in the hospitality industry.
There are specific products which need to be used for each kitchen cleaning
requirement and these cleaning agents are given specific codes eg: D1, D2, D3,
D4, D5, D6, D7, D8, D9, D10 etc. And the letter 'D' Stands for 'Degreasers' for
ease of identification, recognition and use.

Suma / Diversey D1: Manual Dishwashing Concentrate

 
Description and Benefits: 
Suma D1 is a concentrated, high foaming manual dishwashing detergent for use
on pots, pans, utensils, equipment and hard surfaces.
 Hand dishwashing liquid.
 The concentrated formula gives excellent economy in the use.
 Cuts through grease and dried on food.
 ŒEffectively removes all types of grease and food deposits.
 Has a ŒPleasant Citrus fragrance.
 ŒBiodegradable ŒEnvironmentally acceptable.
  ŒFree rinsing ŒLeaves no smears or streaks.
How to Dilute and use:
For cleaning:
1. 20 ml of D1 in 20 ltr. water
2. For heavily soiled items, use higher concentrations.
3. Dilute into a suitable container.
4. Change water regularly.

Suma / Diversey D2: All-purpose cleaning agent

 
Description and Benefits: 
Suma D2 is a concentrated all-purpose detergent for cleaning of hard surfaces in
food premises, including floors, walls, doors, ceilings and general equipment.
 D2 is a powerful, fast-acting degreaser.
 Suitable for cleaning all kind of hard surfaces and materials like for e.g.
plastics, paintwork or polished metals etc.
 ŒD2 is Non-perfumed
 D2 is ŒNon-tainting.
 ŒLeaves no mineral deposits on drying.
 ŒRinsing is not normally required.
How to Dilute and use:
Spray Cleaning:
1. Use at a concentration of 20 ml to 750 ml of water into a spray bottle.
2. Spray surface with the solution and clean with damp cloth.
3. Rinse food contact surfaces with clean water and allow to air dry.
General cleaning:
1. Use at a concentration of 5-20 ml/L (0.5-2.0%) of hand warm water.
2. Clean surfaces using cloth, brush or mop system.
3. Rinse food contact surfaces with clean water and allow to air dry.
Floor cleaning:
1. Dilute product 10-20 ml/L (1.0-2.0%) in hot water.
2. Apply solution with the mop.
3. Remove dirt with the mop.
4. Rinse with clean water and allow to air dry.

Suma / Diversey D3: Heavy Duty Degreaser

 
Description and Benefits: 
Suma D3 is ready to use liquid degreaser for the removal of fat, carbon and oil
from kitchen equipment such as ovens, grills, cooker hoods, pans and interiors of
dishwashing machines etc.
  Safe on Aluminium and other soft metals.Œ
 Powerful multi-purpose degreaser.
 ŒEffectively removes baked-on grease, fat and carbon deposits.
 ŒD3 is Non-perfumed.
 D3 is ŒNon-tainting.
How to Dilute and use:
Spray:
1. Spray Suma D3 on the surface to be cleaned.
2. Leave for a few minutes depending on soiling.
3. Remove soiling with a sponge.
4. Rinse thoroughly with clean water and allow to air dry.
5. Do not apply to surfaces above 70°C.
Canopies, Hoods and Filters:
1. Clear area of food and protect food contact surfaces.
2. Spray directly on to the surface.
3. Leave for 10-30 minutes depending upon soiling.
4. Remove loose deposits with scrubber or sponge.
5. Pay attention to internal drain channels.
6. Rinse with clean water and allow to air dry.

Suma / Diversey D4: Sanitizer / Disinfectant 

 
Description and Benefits: 
Suma D4 is ready to use disinfectant spray for use on all hard surfaces.
 Easy to use trigger spray.
 Effective against a wide spectrum of micro-organisms, which improves
hygiene.

Suma / Diversey D5: Acid Descalers

Description and Benefits: 

Suma D5 is an acidic cleaner for the removal of limescale from all types of
kitchen equipment and utensils. Some example includes dishwashing machines,
bain maries, boilers, steamers, tea and coffee etc. 
 The combination of inorganic acid and nonionic surfactant assures
effective descaling of all kind of surfaces.
 Rapidly removes limescale build-up ŒIncreases equipment efficiency.
 ŒD5 has the Corrosion inhibitor.
 D5 ŒImproves lifespan of the machine.
How to Dilute and use:
Soaking application:
 Use at a concentration of 50-200 ml of Suma Calc D5 to 1L of hot water (5-
20%) dependent on the degree of scale.
 Fill the item or soak in solution until the scale dissolves.
 Scrub if required to remove heavy deposits.
 Rinse thoroughly with fresh water and allow to dry.
Spray cleaning:
 Apply the solution of 200 ml/L of warm water (20%) to surface or
equipment.
 Leave for at least 30 minutes and brush.
 Rinse thoroughly with clean warm water and allow to air dry.

Suma / Diversey D6: Glass Cleaner 

  
Description and Benefits: 
Suma Rapid D6 is a quick-drying glass cleaner for use on windows, mirrors,
display cabinets, tiles and other glazed ceramics.
 Suma D6 gives streak-free cleaning of glass.
 D6 also cleans other water-resistant hard surfaces.
 Simple to use application by quick spray-on and wipe-off action.
 ŒSuma D6 provides quick drying with no residues.
 ŒLeaves glass sparkling with no streaks and smears.
How to Dilute and use:
1. Suma D6 is ready-to-use; apply undiluted.
2. Apply by Spray lightly onto a soft, lint-free cloth and wipe the surface
clean.
3. Repeat application to spot remove stubborn soil.

Suma / Diversey D7: Stainless Steel Polish

Suma D7 is a specially formulated ready-to-use polish for use on stainless steel
surfaces, which are not used for the preparation of food, like the refrigerator,
freezer doors, trolleys and dishwashing machines.
 Cleans and polishes ŒStainless steel.
 D7 leaves stainless steel mark free with a smooth lustre.
How to Dilute and use:
 Ready-to-use product and should not be mixed with water.
 Use only on non-food contact surfaces.
 Squirt onto a clean cloth.
 Apply on a clean and dry surface and polish.

Suma / Diversey D8: Silver Cleaner

  
Description and Benefits: 
Suma Silver D8 is a specially formulated product for cleaning of silver and silver
plated items. Like e.g.: EPNS and silver cutlery, serving dishes,
table decorations etc. 
Fast and effective de-tarnishing of silver and silver plated materials.
 Single items or large quantities can be de-tarnished in one operation.
 Soak or wipe application.
 Removes tarnish quickly.
 Quick and easy to use.
How to Dilute and use:
1. Suma Silver D8 is used neat.
2. Always use in a plastic container.
3. Fill a plastic container with Suma Silver D8.
4. Immerse items in neat product for 1-5 minutes.
5. Rinse thoroughly with clean water and dry thoroughly or wash in dish wash
machine using a detergent without bleach.
6. Replace the solution when exhausted. Clear up spillages to prevent
staining.
7. Do not dip knives blades for longer than 1 minute to avoid corrosion. 

Suma / Diversey D9: Oven / Grill cleaner

Description and Benefits:
Suma Grill D9 is a heavy-duty degreaser for the cleaning of ovens and grills. 
 ŒFoaming application.
 No hazardous misting.
 ŒAdheres to vertical surfaces – fast acting.
 A powerful blend of alkalis, solvents and detergents deposits.
 ŒRemoves even stubborn carbon.
How to Dilute and use:
Spray
1. Warm the oven/grill (70°C - 80°C maximum) before commencing cleaning.
2. Attach foaming sprayer to the Suma Grill D9 – 2-litre bottle.

3. Beginning at the top and working downwards, spray the neat product onto
the surfaces to be cleaned.
4. The product will cling to the surface as a foam.
5. Leave for 10 - 30 minutes then scrape with a scouring pad to remove
stubborn residues.
6. Rinse well with water and a clean cloth.
7. Allow to air dry.
Boil Out
1. Suma Grill D9 – 2L (ready-to-use) - ¼ bottle = 500 ml / 10 litres of water.
2. Drain fryer and fill with water.
 3. Add Suma Grill D9 and boil for 20 minutes then drain fryer, rinse and allow
to dry.

Suma / Diversey D10: Sanitizer / Disinfectant 

Description and Benefits: 

Suma Bac D10 is a concentrated liquid detergent disinfectant which cleans and
disinfects all surfaces in one step.
 Very effective against a wide range of micro-organisms, in all water
conditions.

How to Dilute and use:
Spray cleaning and disinfection:
1. Use at a concentration of 2 dosing caps (40ml) in a 750 ml spray bottle.
2. Remove gross soiling.
3. Spray onto surfaces.
4. Leave for at least 5 minutes.
 5. Rinse food contact surfaces thoroughly with clean water and allow to air
dry.
