Processing of prime quality and safe seafood product is vital in sustaining the countrys competitiveness

in the global fish trade. As the world population grows, demand for processed fish products increases.
Improvement of post harvest production is essential to achieve a sustainable developed process which
will contribute and enhance food security and income growth. However, the production of seafood does
not end after its capture. Understanding the post harvest changes that occur in fish/aquatic product is
important in developing appropriate measures to preserve the quality, ensure safety product of the
finished products to reduce losses.

Despite its success, Mega Global wanted to further innovate by exploring new types of packaging that is
not the usual canned or bottled container. They sought the technological expertise of the Packaging
Technology Division of the Industrial Technology Development Institute (ITDI), an agency under the
Department of Science and Technology (DOST).

By working with the center, they have created an easy to open stand-up pouch or retort pouch to store
sardines. When they launched the product in the market in 2004, it was regarded as the first of its kind
in the world.

The retort pouch packaging is made from flexible foil and plastic laminate. This type of packaging is an
alternative to traditional canning methods. The type of material used is able to withstand retort
processing, which involves heat and pressure to cook food and extend its shelf life.

DOST had a developed food processing equipment that provides an opportunity for food processors to
shift to using retort pouch as alternative packaging for thermally processed products at lower cost; the
use of retort pouches provides other advantages like; enables conformity to regulations for thermally
processed foods, increased convenience for consumers: packages are light-weight and easy to open,
better package presentation and readily available local expertise and technical support.

Among the identified value-added seafood products that offer the promise of future opportunities for
ready-to-cook and ready-to-eat seafood products are the burgers, fish balls, sausages and other
thermally processed ready-to-eat meals in cans and in pouches. Other companies have already been
producing them but still require some refinements to become commercially feasible in both local and
international markets.

Tuna and milkfish value-added products in the Philippines may be generally classified into product
groups, i.e. Frozen seafood products (ready-to-cook), ready-to-eat meals (thermally processed) and
smoked deboned milkfish.

Thermally processed seafood products in foil pouches are still quite limited in the local market. These
are presently dominated by the Mega, and the Citra mina brands, the former being more focused on
sardines whilst the Citra Mina brands are on tuna value-added products. The latter has recently
launched tuna adobo, sisig, burgers with mushroom sauce, and tuna in black beans sauce, and kare-
kare. Milkfish however, are processed mostly in fancy jars and served as gourmets.

Hampering demand for oven bags and pouches, on the other hand, is the concerns about the health
hazards presented by them on account of the migration of the volatile and non-volatile organic
compounds from the oven bags to the food items placed in them. Emergence of new products such as
stand-up ovenable pouches is however helping to overcome such challenges by opening up new
avenues of growth.

By sales type, the market is segmented into institutional sales and retail sales. By seal type, oven bags &
pouches market is segmented into adhesive seal and heat seal. By end use, oven bags & pouches market
is segmented into meat, poultry, seafood, ready-to-eat meals, and vegetables and others.
