Tips for Using the GT Xpress 1O1®
Potato Cheese Knishes
Please read all instructions in the manual that came with your unit
before using. Allow the unit to preheat before adding ingredients, 4 egg roll wrappers
unless otherwise indicated in the recipe. After the unit is plugged 1/2 cup prepared instant cheese or sour cream and chive mashed

Couscous Vegetable Medley Spinach Soufflé
Low-Carb
1 cup (1/2 of 5.8-ounce package) couscous mix
1 Tablespoon (1/2 bag) spice mix 1/2 (10-ounce) package creamed spinach
1 teaspoon olive oil 1 egg
1 Tablespoon chopped onion 1/4 cup milk
1 Tablespoon each chopped red and green peppers 2 Tablespoons chopped onion
3/4 cup chicken broth 2 Tablespoons grated Parmesan cheese
1/4 teaspoon pepper
Do not preheat. Combine all ingredients. Place half of mixture into each well. 1/2 cup low-carb baking mix

Chicken Tetrazzini

2 Tablespoons each chopped red and green peppers 4 ounces cooked chicken or turkey
1/2 teaspoon each salt and garlic powder 1 cup cooked spaghetti
1/4 cup shredded cheddar cheese 1/2 cup condensed cream of mushroom soup
Nonstick cooking spray 1/4 cup water
2 Tablespoons freshly made bread crumbs
Do not preheat. Combine all ingredients except cheese. Spray wells with 1 teaspoon melted butter

Combine all ingredients except bread crumbs, butter and cheese.

with cheese.
Cook 10 minutes. Serves 2.

Asian Chicken Salad
1 teaspoon soy sauce
1/8 teaspoon garlic powder
1 teaspoon hoisin sauce
2 (4- to 6-ounce) skinless, boneless chicken breasts
Nonstick cooking spray
Salad
2 cups mixed salad greens
1 cup baby spinach
6 water chestnuts, sliced
1/2 cup cashews or almonds
4 canned pineapple slices or 1 cup mandarin oranges
1/4 cup Italian dressing
1 teaspoon soy sauce
2 teaspoons pineapple juice
1/2 cup Chinese noodles
Combine soy sauce, garlic powder and hoisin sauce. Brush chicken
with mixture. Spray wells lightly with cooking spray. Place one
chicken breast in each well.
Cook 13 minutes. Remove and allow to cool for a few minutes.
Meanwhile, assemble all salad ingredients and toss well to coat. Top
with noodles. Serves 2.
Chicken Lo Mein
Leftover Makeover
1 cup cooked spaghetti
2 teaspoons soy sauce
1/4 teaspoon garlic powder
1/2 cup chopped cooked pork, chicken or beef
1 scallion, chopped
Nonstick cooking spray
Combine all ingredients. Spray wells lightly with cooking spray. Place
half of mixture in each well.
Cook 8 minutes. Serves 2.

Shrimp Scampi
Low-Carb
1/2 pound large shrimp, peeled and deveined
1 Tablespoon olive oil
1 clove garlic, crushed
2 Tablespoons freshly chopped parsley
1 Tablespoon lemon juice
2 Tablespoons flavored bread crumbs
Combine all ingredients except bread crumbs. Place half of mixture in
each well. Sprinkle shrimp with bread crumbs.
Cook 2 minutes. Do not overcook. Serve with lemon wedges.
Serves 2.
Steamed Dumplings
4 ounces ground pork
2 Tablespoons chopped onions
1 clove garlic, crushed
2 teaspoons hoisin sauce
1 mushroom, finely chopped
4 egg roll wrappers
1/3 cup chicken broth
Nonstick cooking spray
Combine all ingredients except egg roll wrappers and chicken broth.
Place 2 Tablespoons mixture into center of each wrapper. Gather up
edges and twist to close. Spray wells lightly with cooking spray. Pour
half of broth into each well. Place 2 dumplings in each well.
Cook 8 minutes. Serve with soy or duck sauce. Serves 2.

Steak au Poivre
2 (6- to 8-ounce) boneless rib eye steaks, 1-inch thick and trimmed to fit
wells
2 Tablespoons cracked peppercorns
Pat meat dry. Press peppercorns into both sides of each steak. Place one
in each well.
Cook 10 minutes for rare, 13 minutes for medium and 15 minutes for well
done. Serve with béarnaise sauce, if desired. Serves 2.
Empanadas
6 ounces ground beef
2 Tablespoons chopped onions
1 clove garlic, crushed
1 Tablespoon tomato sauce
1 teaspoon chipotle chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
2 Tablespoons shredded Monterey Jack cheese
4 egg roll wrappers
Nonstick cooking spray
Combine all ingredients except egg roll wrappers. Spray wells lightly with
cooking spray. Cook mixture until meat is well browned. Allow mixture to
cool before filling wrappers. Trim edges of wrappers to form rough circle.
Place 2 Tablespoons mixture in center of each wrapper. Fold over and roll
edges to seal. Crimp edges with fork.
Cook 3 minutes. Turn over and cook 3 more minutes. Repeat cooking
process with remaining empanadas. Serves 2.

Deep Dish Sicilian Pizza Boneless Oriental Pork Chops
Low-Carb
6 ounces pizza dough, cut in 2 pieces
1/4 cup tomato sauce 2 (6-ounce) boneless, center cut pork chops (3/4-inch thick)
1/4 cup shredded mozzarella cheese 1 Tablespoon hoisin sauce
2 Tablespoons Parmesan cheese 1 teaspoon ketchup
Nonstick cooking spray 1 teaspoon honey
1/2 teaspoon black bean and garlic sauce
Form each piece of dough into a 5x3-inch oval. Spray wells lightly with
cooking spray. Fit one oval into each well. Top with tomato sauce and Pat meat dry. Place one chop in each well.

Low-Carb 3 ounces cooked pork or chicken, sliced
1 teaspoon hoisin sauce
2 (3-ounce) Polish kielbasa links 1/4 teaspoon mustard
1 (3/4 ounce) slice American cheese, cut in half lengthwise 1 scallion, chopped
1/4 cup sauerkraut 1/2 clove garlic, crushed
1/4 teaspoon Worcestershire sauce 2 teaspoon sesame seeds
1/8 teaspoon each garlic and onion powder Nonstick cooking spray
Cut lengthwise slit in top of each link (do not cut through completely). Roll dough into 2 5x7-inch ovals. Combine pork, hoisin sauce, mustard

Ham and Swiss Frittata
Low-Carb
2 eggs
1 Tablespoon milk
1/8 teaspoon each garlic powder and onion powder
1/4 teaspoon salt
1 ounce ham, chopped
1 ounce Swiss cheese, chopped
Nonstick cooking spray
Combine eggs, milk, garlic and onion powder and salt. Spray wells lightly
with cooking spray. Place half of mixture into each well.
Cook 2 minutes. Sprinkle half of ham and cheese over semi-set eggs in
wells. Cook 3 more minutes or until eggs are puffy and set.
Serves 2.
Brats ‘n’ Beer
Low-Carb
2 (3- to 4-ounce) fully cooked bratwurst
1/2 cup sliced onions
1/4 cup low-carbohydrate beer
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
Place one bratwurst and half of onions in each well.
Cook 5 minutes. Combine remaining ingredients. Pour half of mixture in
each well. Cook 5 more minutes. Serves 2.
