Method of Preparation:
‐ Melt butter in heavy saucepan, add onions and garlic and brown slowly for about 20 minutes until they are very
soft, reduced and a deep even brown color.
‐ Stir in the flour and cook for one minute. Add the white wine and stir in.
‐ Gradually stir in the stock as you bring back to a boil. Stir constantly to avoid lumps
‐ Simmer for approximately 30 minutes. Season
‐ Toast the bread under the salamander and place one on top of each soup. Layer with cheese and finish by
gratinating under the salamander.
