1.1Background of the scenario
In the above scenario, the researcher have been employed as a
hospitality researcher for the company J and D hospitality group
who is planning to establish a five star hotel named Devon at

Dhulikhel about 35km away from the capital city Kathmandu,


Nepal where the researcher have been assigned for the following
objectives:
• To produce a presentation and essay as reference
materials which will help the group members
• To enhance the knowledge and understanding of the
hospitality industry in the area.
• To examines the purpose of different hospitality
organizations , exploring the size, scale and scope of the
hospitality industry

1.2 The introduction of


hospitality industry
Hospitality is the act of kindness in welcoming and looking after
the basic needs of customers or strangers, mainly in relation to
food, drink and accommodation. A contemporary explanation of
Hospitality refers to the relationship process between a customer
and a host. When we talk about the “Hospitality Industry”, we are
referring to the companies or organizations which provide food
and/or drink and/or accommodation to people who are “away from
home”. However, this definition of the “Hospitality Industry” only
satisfies most situations.
Simply, the hospitality industry is a broad category of fields within
the service industry that includes lodging, food and drink service,
event planning, theme parks, and transportation. It includes

hotels, restaurants and bars. The role of Hotel Industry stems


from a long history and development in the field of hospitality
provision.

1.3Overview
There is something about the scenic beauty and tranquillity of
the majestic peaks that just makes you want to stay there
forever and breathe in the pure fresh air. Dhulikhel in the
Kathmandu Valley is one such place, which offers picturesque
views of the high Himalayas and the range of peaks that it
comprises of, right from the Langtang Lirung in the west to the
Dorje Lakpa, Gauri Shankar and Melungtse, and then Numbur
in the east. You just have to be willing to climb a little over the
village to enjoy these panoramic views. Getting to Dhulikhel is
quite easy. The town lies on the intersection of the Arniko
highway and the BP Highway, only 32 kilometres to the east
side of the Kathmandu Valley. One can quickly get here by a
public bus, or by driving one's own car. Buses from
Kathmandu's Ratna Park frequently ply here and will take you
to your destination in only 2 hours, at a cost of mere INR 60.
Dhulikhel is a genuine Newari town and is thus the perfect
place to visit if you want to explore the authentic culture and
heritage of the area. This is perhaps why people often prefer to
stay here for about two nights so that they can thoroughly
explore this quaint little area and soak in the mountain
sunshine. Leisurely walks are also located all around the
village, and tourists simply set on foot to wander around.
Another famous tourist attraction here in Dhulikhel is the

mountain bike trip from Dhulikhel to Namobuddha, which is one


of the most loved activities by tourists. The three-hour trek
passes through the Kali Temple, then through the villages of
Kavre and Faskot, and finally through a Tibetan monastery on
the hilltop, below which one will find Namobuddha.

they offer?
Different types of business within the hospitality industry provided by
dhulikhel hotel. Hospitality is one of the biggest industries in the world
and contributes immensely to the global economic output. It is an
industry that connects different types of business with each other. Use
of digital technologies by both businesses and consumers and, an
increase in consumer purchasing power have propelled a rapid growth
in the global hospitality industry.

There are different types of business within the hospitality industry.


However, these businesses usually fall under four broad categories
i.e. accommodation, food and beverage, travel and tourism, and
entertainment. The discussion that follows aims to explore these four
types of hospitality businesses.

1.4 Accommodation in the hospitality industry


A broad sector of the hospitality industry is accommodation (lodging)
comprising of different types of hotels and facilities that have the
provisions of overnight accommodation for people in travelling.
Budget hotel, luxury hotel, spa hotel, hotel resort, boutique hotel, and
bed and breakfast are some of the most important players in this
industry.

The different types of hotel accommodation are: From camping


and caravan grounds to luxurious resorts and budget hotels, the
accommodation sector is incredibly broad, and has a wide range
of services. In order for accommodations and lodgings to thrive, it
relies on excellent customer service, comfort and high quality
amenities. It doesn’t matter if it’s a bed and breakfast or world-
class hotel and palace – they all rely on the same basics.

Other sectors of the hospitality industry overlap with


accommodation, especially the food and transportation
categories. Many hotels offer restaurant and/or bar services that
require skilled bartenders, chefs and service staff for it to
efficiently run during its opening hours.

• Resorts: Most popular for travellers and holiday makers, they


are often integrated with nature and give the customer a break
from their normal lifestyle.
• Suites: Many hotels offer expensive, grand suites that cost
more than a hotel room and have more amenities.
• Lodging: Lodging is much more basic and gives a person
somewhere to sleep in between their travels.

1.5Food and beverage in hospitality industry


Food and beverage is one of the largest sectors within the
hospitality industry. Services within this sector range from
preparing food to presenting it on the customer table. Fast food,
fast casual, fine dinning, and casual dinning are some of the most
popular types of restaurants in this sector.
The food and beverage industry is a crucial sector of the
hospitality industry, and has many different types of businesses.

From a greasy cafe to a luxurious michelin star restaurant, or a


relaxed coffee shop to a high-end cocktail bar and everything in
between, there are so many different types of establishments, that
they have their own niches.

• Quick-service Establishments: These are commercial


foodservice restaurants are also known as fast-food
restaurant that targets customers who want quick snacks,
drinks, and meals. Most fast food chains have fewer
employees in comparison to larger full-service restaurants,
as it relies on self-service. Some examples are KFC,
McDonalds and Burger King.

• Catering Businesses: Catering businesses offer food and


beverage catering services for any special occasion – from
weddings to conferences and all that’s in between.

• Full-Service Restaurants: Featuring course meals, drinks,


desserts and so many more services, you are usually seated
at these establishments and rely on a waiter to take your
order. From fine-dining to casual dining to themed
restaurants, there are so many different types of full-service
restaurants.

Because of the popularity and growth of Food service


establishments across the globe, many industry professionals
consider full-service restaurants an entirely separate category of
the hospitality industry. This is because people will always look
forward to food, and many choose to try local cuisines.

The food and catering industry starts at the food production stage
and ends when the food is in front of the customer – storage and
cooking steps resting in between. The processes and stages of

• Food Management: Food management begins with the


production of food. Many hotels and restaurants serve
naturally organic food. Food transportation and storage also
belong in this division.

• Food Presentation: A lot of focus is on food presentation, as


people like to eat food which is well represented.
• Beverages: Literally what it says on the tin.

• Restaurant Management: Restaurant management requires


proper skills to manage a restaurant – you will be required to
manage all of the above, so that customers will come again
to eat at your establishment.

1.6Travel and tourism in the hospitality industry


There are different types of business within travel and tourism sector
that include but not limited to trains, airlines, cruise ships, and tour
operators.
The Travel and tourism industry is a large sector of the hospitality
industry and has several key aspects across the globe. This also
includes trains, cruise ships, airlines, and several crew members in
their service. Many people consider tourism synonymous to
hospitality, but it is infact a different sector in the hospitality
industry.

All other sectors rely heavily on the tourist and travel industry,
because without profound levels of travelling and tourism in a
location, the hospitality industry in said region will not grow. This
is a massive domain and innovation, strategy, and novelty are
crucial for the success of any travel and tourism business at each
step.

This industry is not limited to leisure and travel for fun. It includes
formal and informal travelling, such as people traveling across the
world for business, education, entertainment, holidays, and more.
Customer focus is crucial for the success of this industry, along
with leniency, relationship management, and many other skills.

1.7Entertainment in the hospitality industry


The entertainment industry relies on its consumers having
disposable income. The entertainment thrives when it comes to
bringing laughter and enjoyment to customers, and overlaps with
all other sectors within the hospitality industry. It is also important
to remember that entertainment plays a significant role in travel
these days. A travel experience that lacks fun and entertainment
may feel empty and futile.

A successful hospitality business needs as many entertainment


activities as possible.

Here are some activity examples:

• Marinas: One of the most popular places for people to go


partying. Hop on a private yacht, dance, play games, and
live your best life in the sunshine.

• Sports and Gaming: One of the most basic entertainment


aspects that people look for when they travel. Swimming
pools, casinos, crazy golf and so much more are an
indispensable part of the hospitality sector.

• Nightclubs: Taking a break from mundane everyday life and


having a little boogie with a few drinks is a great way to
unwind

• Bars: Bars make an important part of the entertainment


sector of the hospitality industry as many people rely on
them for social and professional scenarios.

P2 Examine a range of operational and functional


departments within a chosen hospitality business
The researcher aims to examine a range of operational and
functional departments within a hospitality business. There
are different types of business within the hospitality industry;
however, researcher aims to explore the operational and
functional departments of a hotel. The four major operational
departments of a hotel are: housekeeping department, food
and beverage service department, food production (kitchen)
department, and front office department. In addition to these
departments, hotels usually have a number of functional
departments as well e.g. marketing department, HR
department, accounting & finance department, and purchase
department.

2.1Operational departments of a hotel


1.Housekeeping department
This is a very important department of a hotel that impacts
directly on guest experience. It ensures that guest rooms,
common areas, lobbies, hallways, restrooms, and any other
public areas are clean and ready to use. Housekeepers carry out
a deep cleaning of rooms once the guests check out to ensure
that the new guests come to pristine rooms or suites. In fact, the

main job of the housekeeping department is to ensure that the


hotel always maintains high standards in cleanliness.

2.Food production (kitchen) department


Food production department is also called kitchen
department. It is responsible for the actual preparation of
food items. Chef, sous chef, cook, kitchen porter, and
kitchen manager are some of the most important job roles in
this department. This department ensure that cooking of
foods takes place in a hygienic environment and the food
safety rules are followed strictly and appropriately.

3.Food and beverage service department


Foods made in the kitchen and drinks prepared in the bar
need to go customers. This is the responsibility of the food
and beverage service department. This department ensures
that the waiters, waitresses, and whoever else involved take
foods and drinks to the customer’s tables as per their
demands and serve them in a hospitable manner.

4.Front office department


Front office staffs are the first point of contact of a hotel’s
guests. Front office department is responsible to ensure that
the guests are welcomed in a friendly and professional
manner, and they are assigned with rooms according to their
bookings. Front office staff also deal with guests’ complaints

if any and provide them with any relevant information they


seek.

2.2 Functional departments of a hotel

1.Marketing department
Marketing is about understanding and satisfying customer
requirements profitably (CIM, 2019). Marketing department of a
hotel carries out a number of tasks. For instance, doing market
research to understand the needs and demands of guests,
developing new services, and carrying out advertising and sales
promotions campaigns are some of the responsibilities of the
marketing department.
2.HR department
Human Resource (HR) department of a hotel carries out a
number of tasks. For instance, designing jobs, developing job
responsibilities and person specification, advertising jobs on
appropriate media, hiring and training new people, and firing
underperformed ones are some of the major responsibilities of the
HR department of a hotel.
3.Accounting & finance department
This is a very important department of a hotel. Cost controlling,
billing and credit control, dealing with tax issues, preparing
financial statements, budgeting and budgetary control, managing
payroll system, and ensuring compliance with relevant laws are
some of the major responsibilities of the accounting and finance
department.
4.Purchase department

The purchasing department is also called procurement


department. This department of a hotel is responsible to ensure
that the company has access to the best quality raw materials,
equipment, and other required goods at the most competitive
prices to enable it to operate efficiently (Graduate Prospect
Limited, 2019).

local, national and international economies
The travel and tourism sector currently accounts for 10.4% of
global GDP.* Projections say that 72 million jobs will be added to
the tourism and hospitality sector over the next 10 years, and the
industry itself will grow 10%.

Hospitality generates revenue for local economies directly when


tourists spend money in hotels, restaurants and entertainment
venues. It also helps economies indirectly because tourists
purchase retail goods, pharmacy items and locally made
souvenirs and crafts. In addition, tourism can stimulate the
building of infrastructure such as roads and public transportation.

Also important economically are the jobs created by the industry.


In 2017, the hospitality industry accounted for 313 million jobs
worldwide, which translates to 9.9% of total employment and 20%
of all global net jobs created in the past decade.* Hospitality also
supports jobs in arts and culture industries, keeping theaters and
arts festivals thriving.
This industry is one of the largest and fastest-growing industries
in the world. It is projected to create 328 million jobs and support
10 percent of the work force of the world, by 2022.

It makes a significant contribution to the economies of the


local, national, international of the world in varied ways.(

1.Creates Employment
The biggest contribution that the industry makes to the economy
of a country is creating a host of new jobs. Direct job opportunities
are available as tour guides, tour planners and operators, travel
consultants and in hotels, restaurants and resorts. As Hospitality
and Tourism grows so do these jobs. Jobs are also created in
several related industries such as the cruise industry, airlines,
event management, amusement parks etc.

2.Boosts Other Local Industries


Indirect jobs are also created for instance in the agriculture and
food production sector, in retail industry and so on. In India, the
growth of the services sector has been largely due to the tourists
visiting different destinations.

Restaurants, trade and repair services stand third as a sub


segment of the services sector in India. This sub segment
contributed 12.5 % that is 187.9 billion dollars to the Gross
Domestic Product in 2014-15.

3.Generates Income
Hospitality and Tourism generates income in a variety of ways.

The Government earns revenue from the industry. The tourists


put in a lot of money in their travel plans these days. Tour
businesses and individuals involved in the sector also earn much.
They, in turn, put the money back for the further growth of the
industry.

Besides, income is also generated through the use of various


services like hotels, restaurants, monuments and other places of
tourist interest. These facilities are improved and better
maintained to attract more tourists. So the benefit is all round.

Money is spent by tourists also on many other human needs


when visiting a new place. They spend on medicines, clothes,
food, transportation, entertainment and also on souvenirs. This
supports global trade.

4.Foreign Exchange Earnings


This is the most important contribution the industry can make to
the economy of a country. All touring expenditure incurred by
foreign tourists is a source of foreign exchange earnings. Many
countries of the world make it mandatory for tourists from abroad
to carry a certain amount of foreign currency for the entire length
of their stay. So, foreign tourists are the best means of bringing in
foreign currency to the host nation.

In 2015 Foreign Exchange Earnings for India from the industry


were 16.94 billion dollars. This was 1% more than the previous
year.

5. Foreign Direct Investment

As Hospitality and Tourism in a nation, is strengthened by the


Government of the country investments in the sector rise, too.
Foreign direct investment is found more in economies which are
open and have excellent growth prospects.

India is witnessing a period of growth in FDI with many global


hotel groups establishing business in the country. This sector is
included in the topmost 15 sectors which bring in the maximum
foreign direct investment.

6.Preserves Traditional Industries


Another advantage that the Hospitality and Tourism industry
confers on to an economy is preservation of traditional industries
and handicrafts. Tourists all over the world take great interest in
the indigenous products of the places they visit. So communities
make all efforts to maintain any quaint industry or form of art they
specialize in.

7.Develops Diversification
In places where only a single industry predominates, Hospitality
and Tourism comes as a lucrative industry. Be it farming, mining,
manufacturing or any other industry an economy depends on, this
sector develops diversification and reduces risk.

8.Builds Infrastructure
This functions both ways. More and more tourists are attracted by
good infrastructural facilities. At the same time, when tourists

come, much development of infrastructure takes place with the


income generated.

Thus Hospitality and Tourism is an industry that benefits almost


every sector of the economy of a nation. Both developing and
developed nations of the world are working to promote this
industry to accelerate growth and development in their individual
nations and in the world as a whole.

Conclusion
By all counts, overview of the different types of business within
hospitality industry and exploring various types of products and
services that hospitality business provide. As well as examine
different parts of operational and functional department with
examples. At last contribution of hospitality industry in local
national and international economics
