Sesame Potato

Triangles
These sesame-coated triangles are piled high with a potato-peas mixture and
grilled. How do the peas taste so sweet? Find the secret in this recipe.

Serves 4
4 slices of bread

¼ cup peas - fresh or frozen

2 medium potatoes - boiled and mashed

½ cup grated mozzarella cheese

a big pinch of baking powder

½ tsp salt

½ tsp crushed black pepper

1 tbsp sesame seeds (til)

1. Lightly toast bread slices in a toaster and keep aside.

2. Boil 2 cups water with a pinch of sugar and ½ tsp salt. Add peas and boil
for 2-4 minutes till soft. Strain. Cool and grind in mixer roughly.

3. Mix mashed potatoes to peas. Add grated cheese, baking powder, salt and
pepper.

4. Mix well to get a soft paste. Check seasoning and keep the salt a little
extra as it has to be spread on bread.

5. Spread mixture over each toasted bread slices and cut each bread slice
into 2 triangles. Sprinkle sesame seeds generously. Press lightly with the
fingers.

6. Place bread on a grill rack in a hot oven. Grill for 5 minutes till golden from
the sides. Serve hot
