the population to which we want to export our product is the United Kingdom
The consumption of chocolates in the United Kingdom went from being a candy
to becoming a daily necessity.
In addition, its manufacturers are promoting artisanal “bean to bar” production,
which basically consists of making sure that the beans are obtained before
processing them, carrying out the classification, drying, roasting and hulling,
grinding and other processes.

Another approach is characterized by the search for chocolate of particular

origins. In addition, multinationals and supermarkets have detected a growth in
consumer interest in innovative products and in learning more about how cocoa
and chocolate are produced.

Willie Harcourt-Cooze, representative of the Willie's Cacao brand, highlights

that sales of chocolate produced in small batches are growing. This company
founded in 2008 was the first British company to produce "bean to bar"
chocolate. At present, more than 10 companies produce this type of chocolate
in the United Kingdom. For Harcourt-Cooze, it is essential to know the raw
material with which the chocolate is made, because like wine, it is sought that
the chocolate can develop a designation of origin that has clear organoleptic
characteristics.

Likewise, the consumption of "bean to bar" chocolate is related to the desire of

consumers to acquire an ethical product, since, when making this type of
chocolate, the manufacturer is involved in each process to obtain the desired
product.

Exports of cocoa and its preparations exceeded USD11 million as of November

2016, among the main exported products are chocolate and other preparations
containing cocoa (87%), cocoa beans (11%) and cocoa butter (two%).

It should be noted that exports to the European Union represented 4% of the

total exported. Holland and Germany are the main destinations, however, it
should be considered that these countries are the gateway to this region, so they
can later be sent to other destinations.
Therefore, the behavior described on chocolate and cocoa derivatives in this
country must be considered by Costa Rican producers and exporters to offer
high-quality products and with some certifications of good practices in order to
expand participation in market niches. which can be catered for with small
batches and higher prices.
