Case 1

Jose’s Authentic Mexican Restaurant

I. Background of the Study

Jose’s is a small, 58-seat restaurant that offers a reasonably broad range of

Mexican food prepared and presented in a traditional Mexican style. It is located
in New England in a mature business district on the edge of a large metropolitan
area. The restaurant’s interior decoration promotes the Mexican theme: The
walls appear to be made of adobe and are draped with serapes, the furniture is
Spanish–Mexican style, and flamenco guitar and mariachi alternate as
background music. Upon arrival, patrons are greeted by a hostess and either
seated directly or apprised of the expected wait. Seating at José’s is usually
immediate except for Friday and Saturday nights when waits of as long as 45
minutes can be encountered. Because space inside for waiting is very limited,
patrons must remain outside until their party is called. José’s does not take
reservations. The typical amount of time needed to complete a meal once it has
been ordered is 12 minutes. However during peak times, it can take more than 20
minutes to get good meals delivered to the table. Furthermore, the cook has been
irritable lately due to the poor quality of some of the ingredients delivered by the
supplier. The cook is so busy preparing the food to be served while keeping the
inventories in check. A survey was conducted and the results was good in terms of
promptness in seating, waiter and food satisfactory, and dining experience.
However in terms of serving the food, the result was quite unfavorable.

II. Point of View

The manager of the restaurant.

III. Statement of the Problem

How can Jose’s fill the gaps in their processes?

IV. Areas of Consideration

A. Persons Involved in the Case
The persons involved in the case are Ivan Karetski, the cook, and the
manager.

B. SWOT Analysis
i. Strengths
a. The quality of food is very satisfactory
b. The ambiance is comfortable and pleasing
c. Good customer accommodation
d. Have skilled employees

ii. Weaknesses
a. Small dining space
b. Poor customer service in terms of delivering the food
c. Few employees especially in the kitchen
d. No reservations

iii. Opportunities
a. Located in New England in a mature business district on the edge of
a large metropolitan area
b. The site is adjacent to a central artery and offers limited free off-
street parking
iv. Threats
a. Poor quality of ingredients from suppliers.

V. Alternative Courses of Action

A. Hire more employees especially in the kitchen
3

B. Build a bigger and comfortable space

VI. Evaluation of Alternative Courses of Action
A. Hire more employees especially in the kitchen
i. Advantages
a. Improves the delivery services of food and it shortens the time
of waiting for the orders to arrive and be served.
b. Division of labor. Employees should perform the work
specifically assigned for them to improve efficiency and avoid
disorder of process that may lead to the delay of work to be
done.
ii. Disadvantages
a. Increase in training time and costs. To increase their efficiency,
training is essential.
b. There will be an increase in the cost of the foods sold. The more
employees you hire, the more money should be allotted for their
salaries. The money that will be given as salary will generally
come from the profit which will affect the cost of the foods you
sell.

B. Build a bigger and comfortable space

i. Advantages
a. All customers would be accommodated.
b. Will satisfy the customers for they will not wait outside
anymore.

Disadvantages

a. Costly. Acquiring materials are so costly and that these materials

should be a standard.
b.
4

C. Conclusion
As the manager and the owner, the ways that can eliminate the
problems in the processes of Jose’s Restaurant are hiring more employees
especially in the kitchen area and to build a bigger and comfortable space.
The alternative course of action that I chose to implement is to hire more
employees that would fasten the manufacturing of food to be served to the
customers. This will help avoid dissatisfaction from the customers because
of waiting for the food to be served.

D. Recommendations
Every part of the business needs to understand and manage processes
efficiently and effectively in order to have advantage against other
competitors, thus meeting customer satisfaction and maximize profit. As it
was stated above, the recommended alternative course of action will be
hiring employees especially adding some kitchen personnel. It will
improve the delivery services of food and it shortens the time of waiting
for the orders to arrive and be served. This way, complaints about the
services will be avoided. Employees should perform the work specifically
assigned for them to improve efficiency and avoid disorder of process that
may lead to the delay of work to be done. Though there is an increase in
training time and costs the result would be more beneficial for the
business in the long run. To increase their efficiency, training is essential
and there should be a time only for training the employees to bring out
their effectiveness. Also, there will be an increase in the cost of the foods
sold. The more employees you hire, the more money should be allotted for
their salaries. The money that will be given as salary will generally come
from the profit which will affect the cost of the foods you sell. However the
demand of customers for the commodity provided by the restaurant is still
increasing and the cost they have spent for hiring the employees will be
paid off.
5

After that, Jose’s shall use a systematic approach for analyzing a

process that identifies opportunities for improvement, documents the
current process, evaluates the process to spot performance gaps, redesign
the process to eliminate gaps, and implements the desired changes for
continual improvement.

iv. Threats
a. Price-friendly products from customers. There are many
competitors in the market and a lot of them sell goods for a cheaper
price.

VI. Evaluation of Alternative Courses of Action

A. Develop the website, hire the right personnel and invest more equipment.

easier website, accessibility will improve and customer’s need
will be addressed immediately. Having more hands and

easier and faster service.

investors the business get the more financial source the business
will have.
b. The investors can provide connections with other potential
investors.
ii. Disadvantages
a. We will gain less profit since investors are increasing and there
will be more partition in the profit of the business.
b. We cannot decide on our own without consulting the partners
and investors.

VII. Conclusion
As the manager and the owner, the alternative course of action that I chose
to implement is to develop the website, hire the right personnel and invest more
equipment. This alternative will greatly contribute to the expansion of the
business for it will strengthen the security of the customers and the service
quality will improve. This alternative will be useful in the long run that will give
us an edge from competitors. It is also a upgradable to go with the trend of
today’s market. Besides, we are not the only online business that exist and we
should surpass them.

VIII. Recommendations
Theorganicgrocer.com plans to expand their business through franchising
new products and maximizing their range to a wider scope. However, they
hesitate to proceed to their plan for there are many factors that they should
consider.
I would like to recommend to them to strengthen their website for it will
increase the customer's security. This will make the process of ordering and
catering all customers easy. Another is to hire the right and skilled personnel to
11

help in their technological facility. Expertise of the said personnel will transform
the website and make it more accessible for the customers. Lastly, they should
acquire dependable and durable equipment. Since they are an online seller,
computers and the internet will be needed the most to sell their products
efficiently.
The world is changing fast and as a business entity, customer satisfaction
is a priority. Theorganicgrocer.com will be a success and will generate more profit
if they continue to prioritize customer's needs, strengthen their technology and
provide quality product to the customers.
