March 2011 issue
Its official folks, spring is but a hop, skip and a 
jump away so welcome to a positively bulging 
March issue of ‘What’s On’ where we salute the 
new season with more features and attractions 
than ever before, bidding darkness adieu as we 
warmly welcome back the sunshine.  As the saying 
goes, ‘March comes in like a lion’ and never more 
so this month as the city has slipped off the shack-
les imposed by Winter  with a real buzz hovering in 
the air and much to look forward to.
Golf is often seen as a sport for those with too 
much money and time on their hands but as 
What’s On discovered, this is far from the case as 
there are more and more youngsters turning to a 
game once perceived as somewhat elitist and for 
the idle rich. In our specially commissioned Golfing 
feature we look at various clubs across the city, 
what they offer and where they see their future. 
We think you’ll be pleasantly surprised and hope 
that more of you will be tempted to get involved in a  Contents
sport that has much to commend for itself.
With the recent controversial TV series, ‘My Big 
Fat Gypsy Wedding’ a major talking point in homes 
across the land, we were thrilled to have the op-
portunity to interview two young newlywed’s and

from fiction
A tale of true love & the story of a real gypsy wedding

Love it or loathe it, the recent documentary series ‘My Big Fat Gypsy Wedding’ has caused quite a stir, not
least because of the disservice it has done to the genuine members of the travelling community. It seems that
everyone has an opinion about a culture few of us truly understand and despite the series now over, discussion
still rages on with no real sign of abating. How refreshing it was then recently for What’s On Bristol to have the
privilege of meeting a genuine Gypsy family and newly married couple Stephanie Jayne Williams (nee Jones)

and her lovely husband Anthony.
Stephanie and Anthony’s story began over just four years ago when he first espied the young woman of his
dreams and fell in love at first sight. Anthony (or Chang as he’s known to family and friends) was travelling in
Hereford an area they both know and like when he saw Stephanie’s family pull up onto the same field. Although
initially, he only saw her back and her lovely golden locks as she was cleaning the door of the family caravan, as
she turned to look their eyes met and with a captivating smile capable of melting a young man’s heart, the rest
as they say folks is history.
It’s plain to see that Stephanie and Chang are not only a gorgeous young couple, but also deeply in love. Keen
to distance themselves from some of the more sensational aspects of the recent Channel 4 series like the
notorious ‘grabbing’, Chang lets us know that this certainly didn’t occur in his own courtship and has sadly been
wildly exaggerated by television. Another myth is the lack of support for young girls leaving school. Although
Stephanie did leave school at 13 to help out at home, she is quick to point out how fortunate the travelling
community are in England with great support from the education sector in the form of a home school tutor and
strong back up from her Mum who would help her with her work to ensure she received a good education.
Chan and Stephanie’s wedding took just over a year to plan and took place at a beautiful Hereford location
where 300 guests were invited to a three course wedding banquet. With an exquisite gown from Hollywood
Dreams and a towering fairytale castle cake (specially commissioned from a Cake designer in Wales) it was
lavish affair by anyone’s standards, the difference perhaps being that it was a true love match with both families
involved in ensuring that two genuinely lovely people were given the greatest possible start.
As is the way of the Travelling Community it is up to the young man to provide the marital family home and Chang
has more than stepped up to the mark in a beautiful 2 bedroom chalet which he and his bride will live in before
using their caravan to go off travelling in the summer with Stephanie’s family. Finally, when asked about starting
a family, both Stephanie and Chang agree that it’s very much something they’re looking forward to, but for the
time being they are more than content in each other’s company and enjoying their lives as young married couple
who quite clearly, are very in much in love.

recipe of the month
Rack of lamb with a braised faggot, gratin potato,
salad of asparagus and broad beans
Ingredients
3 bone rack of lamb trimmed. 2 tbsp bread crumbs, 3-4 cloves garlic,
Faggot makes 4-5, 1 sheet pork caul fat, 1 sprig rosemary,
1 onion 2 cloves garlic, 500 ml chick stock, 1 egg. 500ml/17½fl oz double cream
200g lamb liver finely Gratin potato (makes 5 portions) (you may need a bit extra),
chopped, 1kg/2lb 4oz baking potatoes, Salt and freshly ground black pepper
150g pork belly minced, peeled and placed in a bowl of Salad
100g lamb mince, cold water to prevent them from Finely sliced leeks,
1 sprig thyme chopped, browning (use floury potatoes Bunch of asparagus,
1 sprig parsley chopped, such as Russet, King Edward, Handful shelled broad beans,
Handful chives chopped, Maris Piper or Desiree), Lamb jus
Method
1. For the faggots Chop the onion and 2 cloves of garlic,
add to a large pan and sauté with the meat mince (the
liver, pork belly and lamb).
Put on a low heat and stew for 20–30 minutes. Then
strain off the fat from the meat and transfer the mince
into a mixing bowl.
2. Add the chopped thyme, parsley and chives and mix
through. Taste to make sure the flavours are balanced

and season. Then add some breadcrumbs and an egg to


bind and help give it shape.
3. Roll the mixture into small balls or one big one then
stretch out the caul fat and put the mixture in and fold
over to seal to make your faggots .Place the faggots
in a casserole dish, cover in the stock and cook for 30
minutes, until coloured. If they need a little more colour after cooking, pan fry them in a hot pan for a
couple of minutes.
4. Preheat the oven to 160C/320F/Gas 2. Slice the potatoes into thin slices, about 2mm-3mm/0.13in thick.
5. Place the slices into a bowl as you cut them.
6. Trim the ends off the garlic cloves but don’t peel. Grate the cloves on a grater. The flesh will go through
the fine holes and the skins will be left behind.
7. Scrape the grated garlic flesh into the bowl with the potatoes.
8. Season the potatoes, to taste, with salt and freshly ground black pepper and mix well.
9. Bring cream to the boil with garlic and sprig of rosemary to infuse then mix well with potatoes.
10. Place the potato slices into the gratin dish. They should come to just below the top of the dish.
11. Press the potato down with the back of a spoon or your hands so it forms a solid layer. The cream should
come to just below the top layer of potato (top up with more double cream if necessary). Cover with flat
tray Place the potatoes in the oven and bake for 45-60 minutes. Then check it. If the cream looks like it’s
splitting, your oven is too hot, so turn it down a bit. When cooked, the gratin should be golden on top and
the potatoes tender. If necessary, give it another 15-20 minutes.
12. Trim and peel asparagus to spears and broad beans, blanch in salted water.
13. To serve pan fry the racks of lamb, finish in the oven until pink, reheat the other components and plate up.
