Welcome to the
March 2011 issue
Its official folks, spring is but a hop, skip and a 
jump away so welcome to a positively bulging 
March issue of ‘What’s On’ where we salute the 
new season with more features and attractions 
than ever before, bidding darkness adieu as we 
warmly welcome back the sunshine.  As the saying 
goes, ‘March comes in like a lion’ and never more 
so this month as the city has slipped off the shack-
les imposed by Winter  with a real buzz hovering in 
the air and much to look forward to.
Golf is often seen as a sport for those with too 
much money and time on their hands but as 
What’s On discovered, this is far from the case as 
there are more and more youngsters turning to a 
game once perceived as somewhat elitist and for 
the idle rich. In our specially commissioned Golfing 
feature we look at various clubs across the city, 
what they offer and where they see their future. 
We think you’ll be pleasantly surprised and hope 
that more of you will be tempted to get involved in a  Contents
sport that has much to commend for itself.
With the recent controversial TV series, ‘My Big 
Fat Gypsy Wedding’ a major talking point in homes 
across the land, we were thrilled to have the op-
portunity to interview two young newlywed’s and 
find out what life is really like for them and dispel  Diary of the Month  4
some of the unpleasant myths that often accom-
pany their rich culture. If this isn’t enough, we have  New Build / Developments  5

The Old Passenger Shed at Temple Meads
played host to what was billed as the biggest
cider festival in the country on Saturday 28th
and Sunday 29th January. Over 2,500 people
passed through the doors during the two day
event which organisers said was the best ever.
As well as over 100 ciders and perries on offer
live music was provided by the Mangledwurzels
together with hog roast rolls and cheese platters,
and a range of soft drinks for the drivers.

pring is nature’s way of
saying “Let’s party!” And
who am i to argue with
such a fine sentiment? Hold that
thought my friends as the
magnificent month of March
promises great things to all who
have a desire for gossip and
intrigue. Although the icy grip of
winter is behind us, there was no
sign of hibernation in the city as i
will shortly reveal and if that
wasn’t enough for all you who
thirst for tittle-tattle, just wait till
you find out what’s yet to come.
What do you get if you take
three of the biggest

businessmen in the south-west
and throw them in the
slammer? For all those who
piped up “three wise monkeys”
remove yourself from class
immediately and off to the
naughty step with you! if i tell
you that Mark Hands (gM of
Doubletree by roundtree
Cadbury House hotel), a
certain Mr Butcher of Cadbury
garden Centre and a Mr
Alistair Mead of puxton park all
recently found themselves
squaring up to the strong arm
of the law. relax folks. if i tell
you that it was all for charity
with proceedings going to
Weston Hospice, you can
perhaps breathe a sigh of relief
– unless of course you believe
it’s the best place for them?
The Whisperer would like to
doff his cap to all three who
recently took part in a charity

stunt which saw them arrested
by the local constabulary until
they could each raise bail
money of £1,000. Valiant effort
gents for a truly wonderful
cause – well done each and
every-one!
Another recent highlight i
had to mention was the launch
of Valentino Kitchen’s elegant
new kitchen range at their
showroom in West Harptree.
The gorgeous Sam (the most
stylish creature i think i possibly
know) had organized the
evening with great panache
and did i mention that celebrity
chef Dean Edwards was on
hand to cook for the assembled
guests? it was absolute
heaven, but don’t take my word
for it, make an appointment and
see for yourself. Just don’t be
surprised if you don’t come
away empty handed!
A little shout out must surely
go to Bristol Audi on their
beautifully appointed state of
the art showroom at Cribbs
Causeway – don’t hang about
people, check this one out as
soon as you can. if Audi’s not
your particular bag, don’t
despair as Wessex garages
have also recently opened two
new franchises so don’t fret
children as there’s more than
enough automobile to go round
for everyone!
now then, i fear i’ve shared
too much so time to sum up
with one or two more choice

snippets. it’s what we’ve been
waiting for and now its official
as Bristol finally has its very
own Jamie Oliver restaurant.
With the one in Bath always full
to capacity, i do of course
predict great things for Brizzle
and did i mention that the food
is out of this world? Well don’t
take my word for it…
Just time to tell you about an
event on Friday June 3rd where
if rumour is true (and i can of
course categorically confirm
that it is) that some of the
greatest ever Manchester
United legends are coming to
Bristol in aid of children’s
charity ‘Kicking out for Kids’.
Tickets will be on sale shortly,
so keep watching, keep reading
and remember people; you only
ever hear it here first. With the
circus shortly back in town and
Funderworld just a few weeks
away, it’s time to raise the roof
and celebrate the arrival of
Spring and the beginning of a

Roles, duties & responsibilities
Etiquette – simply translated means a set of customs
or rules which control accepted behavior in particular
social groups or situations. Weddings are steeped in
tradition, many of which have been lost in the mists of

etiquette is never to say anything that has even the
slightest potential to offend.
The Bride
Without a shadow of a doubt the most important day
in a woman’s life – the bride will always be the ‘star of
the show’. She is pivotal in the organization of her day

offered. having said that, ultimately it’s the couple’s big
day and they – and no one else should have the right to
take charge.
The Groom
Contrary to myth, the groom’s role extends far beyond
the obligatory acceptance of congratulatory drinks &
deciding what to wear for his stag party. Firstly, there’s the
critical matter of the engagement ring – where to choose
it and the all important how much to spend. he has equal
responsibility in the major decisions such as choice of
venue, photographer and reception and one could argue
that his biggest contribution is alleviating some of the
pressure from his bride to be.
On the day of the wedding the groom & his best man
should arrive at the wedding venue a good 20 minutes or
so prior to the ceremony. Following the formal signing of
the register he walks back up the aisle with his new wife
on his left to begin the formal photographs. the reception
then takes place where he and his wife will greet their
guests as they arrive. the groom is expected to introduce
his new bride to friends and relatives who’ve previously
not met her. Following the bride’s father’s speech the
groom should (with great enthusiasm) thank the bride’s
parents for his ‘new bride’ and all those involved in the
organization of the wedding. Finally, after the speeches&
cutting of the cake, it’s time for the all important ‘first
dance’. tradition dictates the groom will invite the bride’s
mother to dance; the bride’s father would then take over –
allowing the groom to dance with his bride.
The Best Man
A supportive, yet pivotal role and a responsibility not to be
lightly undertaken.

The Bride’s Parents
traditionally, the bride’s parents had the privilege
of paying for the lion’s share of the wedding expenses.
Although today the costs are more likely to be distributed
among both sets of parents and the couple themselves,
they are still the responsibilities the bride’s parents
maintain.
The Groom’s Parents
Although there are no traditional roles for the Grooms
Parents to carry out, by today’s standards it’s not at all
unusual for the groom’s parents to make a considerable
contribution. therefore, it is good manners to consult
the groom’s parents and include them in as much of the
planning as possible.

 Separating fact
from fiction
A tale of true love & the story of a real gypsy wedding

Love it or loathe it, the recent documentary series ‘My Big Fat Gypsy Wedding’ has caused quite a stir, not
least because of the disservice it has done to the genuine members of the travelling community. It seems that
everyone has an opinion about a culture few of us truly understand and despite the series now over, discussion
still rages on with no real sign of abating. How refreshing it was then recently for What’s On Bristol to have the
privilege of meeting a genuine Gypsy family and newly married couple Stephanie Jayne Williams (nee Jones)

and her lovely husband Anthony.
Stephanie and Anthony’s story began over just four years ago when he first espied the young woman of his
dreams and fell in love at first sight. Anthony (or Chang as he’s known to family and friends) was travelling in
Hereford an area they both know and like when he saw Stephanie’s family pull up onto the same field. Although
initially, he only saw her back and her lovely golden locks as she was cleaning the door of the family caravan, as
she turned to look their eyes met and with a captivating smile capable of melting a young man’s heart, the rest
as they say folks is history.
It’s plain to see that Stephanie and Chang are not only a gorgeous young couple, but also deeply in love. Keen
to distance themselves from some of the more sensational aspects of the recent Channel 4 series like the
notorious ‘grabbing’, Chang lets us know that this certainly didn’t occur in his own courtship and has sadly been
wildly exaggerated by television. Another myth is the lack of support for young girls leaving school. Although
Stephanie did leave school at 13 to help out at home, she is quick to point out how fortunate the travelling
community are in England with great support from the education sector in the form of a home school tutor and
strong back up from her Mum who would help her with her work to ensure she received a good education.
Chan and Stephanie’s wedding took just over a year to plan and took place at a beautiful Hereford location
where 300 guests were invited to a three course wedding banquet. With an exquisite gown from Hollywood
Dreams and a towering fairytale castle cake (specially commissioned from a Cake designer in Wales) it was
lavish affair by anyone’s standards, the difference perhaps being that it was a true love match with both families
involved in ensuring that two genuinely lovely people were given the greatest possible start.
As is the way of the Travelling Community it is up to the young man to provide the marital family home and Chang
has more than stepped up to the mark in a beautiful 2 bedroom chalet which he and his bride will live in before
using their caravan to go off travelling in the summer with Stephanie’s family. Finally, when asked about starting
a family, both Stephanie and Chang agree that it’s very much something they’re looking forward to, but for the
time being they are more than content in each other’s company and enjoying their lives as young married couple
who quite clearly, are very in much in love.

 Tikka Flame - something hot and spicy
M
iserable weather and grey
February days meant that
something hot and spicy was called
for to perk up our spirits so we strolled down
to Tikka Flame on the Harbourside. The
restaurant is streamlined and modern,
decorated in pale turquoise and dark woods
with the kitchen and its busy chefs on view.
There is a bollywood rhythm to the music
and a rather glitzy feel to the place.
They have a nice terrace outside
waiting for the spring, but we took
a table by the window, ordered two
Kingfisher beers and got down to
the serious business of looking at
the menu. To start we decided to
share a mixed platter of chicken satay,
vegetable spring rolls, chicken tikka
and onion bhaji, served with salad,
but the main courses weren’t so easy
to decide – too much delectable
choice! Would i have Karela Gosht,
lamb cooked with brown onions,

style Masala fish, cooked with freshly
grated coconut and poppy seeds, or
a biryani? Chicken biyani won the
day, to be served with a vegetable
curry sauce. Never one to dither, my
companion opted for the Tikka Flame
special grill, lamb tikka, lamb chop,
chicken tikka, tandoori chicken and
shish kebab, served with naan bread
and salad.
The starter was great, especially
the onion bhajis, that were two of the
freshest, put together and fried just
before serving, lightly crisped and
tasty onion bhahis that we ever had
the pleasure to eat. and i particularly
enjoyed the nutty satay sauce with
the chicken. The main courses
were delivered to the table sizzling
and piping hot and we could see at
once that the portions were more
than generous. My biryani tasted
lovely, full of tender chicken pieces
curry. The special grill was equally
pleasing, the chicken and lamb served
with billowing pillows of naan bread (i
affected not to notice my companion
turning these into a “naan sandwich”).
The cooking is well spiced, but not
harshly hot and the said companion
who had been suffering from a terrible
cold throughout the week remarked
that this evening was the first time that
he had been able to breath properly for
some days, so perhaps Tikka Flame
should hire themselves out as a winter
cold cure!
Tikka Flame is owned by shirley
and sohail elahi, and most evenings
you will find shirley always elegant
and charming, presiding over the
customers. We had a delightful
evening with the bill coming out at a
very reasonable £42.00, outstanding
value for such good quality food.

midst, James Horwood came a
glorious 2nd in the under 23 years
category of the Chef v’s Chef
Competition in association with
Bath College. James has been in
the industry just 18 months but is
showing great potential, beating
other young talent from the south
West.

annual competition is to promote
modern cuisine exploring the
use of local seasonal produce,
allowing young chefs to feature
classical and innovative kitchen
skills in their search for culinary

Born in Bath, Horwood grew
up in timsbury. He aspired to
be a chef from an early age, and
excelled in Home-economics
at school. Primarily influenced

Hunstrete House also thomas

Dear Editor,
I am writing to voice my disgust at the
planned proposals to increase the Pay &
Display tariffs in Bristol. Like many other
people, I work in the city centre and need
my car to get to work. This enforced but
unwarranted charge is yet another insult
to decent hardworking people who are
slowly being crippled by the government.
I understand that we all have to make
sacrifices in the current climate, but does
anyone else feel like they’re being ripped
off? It’s absolutely ludicrous!

 The Eldon House – a small country pub in town
A
jolly group of us was
looking for a small country
pub in town, with a homely
atmosphere and simple but reasonably
priced food. Does such an oxymoron
exist? Well, apparently so in the shape
of The Eldon House on lower Clifton
Hill. No need to have the hassle of a
long drive down wet and windy country
lanes, The Eldon House is a few
minutes from Queen’s road and offers
cosy comfort, a good range of beers
supplied by Bath Ales and a quirky
updated interior.
We gathered in a knot at the
bar daring each other to have a
pickled egg or pickled gherkin
from the large jars on the shelves
alongside the bar, but instead
retreating to the safety of a pint
apiece while we decided what to
eat. Happily the one vegetarian

with at least two or three things to
choose from.
Some drifted outside to the
thoughtfully placed benches either
side of the door there for anyone who
wants to take the night air (and that
means the smokers) and we perused
the menu, salivating over tender rib
eye steak marinated in Dark Side
Stout with caramelised shallots, the
Eldon beef and rosemary burger or
Mariners Fish pie.
The dining room has chunky
tables and chairs and the walls
are bare brick which all adds to
the charm and there was plenty
of room to spread out and chat
whilst we waited for our starters to
arrive. I had the country coarse pâté
with pickles and toast which was
delicious but a bit on the small side
(or was it that it was so nice I just
the sauce which had a lot to do with
the Dark Side Stout! our vegetarian
friend was bowled over by the field
mushroom, spinach and melted
brie burger, also served with chips
and salad and there were votes of
approval further down the table for
the chicken, mushroom and tarragon
pie on mash with roast vegetables
which apparently was not just a pie
but a “proper” pie. All the food was
attractively presented and the salad
accompaniments were crisp and
fresh.
We had a great time, the bar
was full of relaxed and happy locals
and the staff couldn’t have been
more helpful. Coupled with a very
reasonable bill at £29.00 per head
(including rather too many beers!) It
was the perfect night out.

 recipe of the month
Rack of lamb with a braised faggot, gratin potato,
salad of asparagus and broad beans
Ingredients
3 bone rack of lamb trimmed. 2 tbsp bread crumbs, 3-4 cloves garlic,
Faggot makes 4-5, 1 sheet pork caul fat, 1 sprig rosemary,
1 onion 2 cloves garlic, 500 ml chick stock, 1 egg. 500ml/17½fl oz double cream
200g lamb liver finely Gratin potato (makes 5 portions) (you may need a bit extra),
chopped, 1kg/2lb 4oz baking potatoes, Salt and freshly ground black pepper
150g pork belly minced, peeled and placed in a bowl of Salad
100g lamb mince, cold water to prevent them from Finely sliced leeks,
1 sprig thyme chopped, browning (use floury potatoes Bunch of asparagus,
1 sprig parsley chopped, such as Russet, King Edward, Handful shelled broad beans,
Handful chives chopped, Maris Piper or Desiree), Lamb jus
Method
1. For the faggots Chop the onion and 2 cloves of garlic,
add to a large pan and sauté with the meat mince (the
liver, pork belly and lamb).
Put on a low heat and stew for 20–30 minutes. Then
strain off the fat from the meat and transfer the mince
into a mixing bowl.
2. Add the chopped thyme, parsley and chives and mix
through. Taste to make sure the flavours are balanced

and season. Then add some breadcrumbs and an egg to

bind and help give it shape.
3. Roll the mixture into small balls or one big one then
stretch out the caul fat and put the mixture in and fold
over to seal to make your faggots .Place the faggots
in a casserole dish, cover in the stock and cook for 30
minutes, until coloured. If they need a little more colour after cooking, pan fry them in a hot pan for a
couple of minutes.
4. Preheat the oven to 160C/320F/Gas 2. Slice the potatoes into thin slices, about 2mm-3mm/0.13in thick.
5. Place the slices into a bowl as you cut them.
6. Trim the ends off the garlic cloves but don’t peel. Grate the cloves on a grater. The flesh will go through
the fine holes and the skins will be left behind.
7. Scrape the grated garlic flesh into the bowl with the potatoes.
8. Season the potatoes, to taste, with salt and freshly ground black pepper and mix well.
9. Bring cream to the boil with garlic and sprig of rosemary to infuse then mix well with potatoes.
10. Place the potato slices into the gratin dish. They should come to just below the top of the dish.
11. Press the potato down with the back of a spoon or your hands so it forms a solid layer. The cream should
come to just below the top layer of potato (top up with more double cream if necessary). Cover with flat
tray Place the potatoes in the oven and bake for 45-60 minutes. Then check it. If the cream looks like it’s
splitting, your oven is too hot, so turn it down a bit. When cooked, the gratin should be golden on top and
the potatoes tender. If necessary, give it another 15-20 minutes.
12. Trim and peel asparagus to spears and broad beans, blanch in salted water.
13. To serve pan fry the racks of lamb, finish in the oven until pink, reheat the other components and plate up.

he high street banks that
you and I paid for continue
to charge improper amounts
of dosh to borrowers, proffering
the small businessman not one
teeny glimmer of hope, whilst
savers and investors see returns
so miniscule as to make them
unworthy of a monthly statement.
These bloody people, who made
so much of my past life a misery,
continue their smarmy dishonest
offensive, seemingly unabashed
and unabated.
I’ve always loathed these
hypocritical high street robbers
and matters don’t improve as I
romp into the springtime of my
dotage.
They landed us all in the poop
by doing exactly what they told
a twenty year-old me not to do.

speak, even though I still pay him.
