I. Introduction

Dioscorea alata, known as purple yam, ube, or greater yam, among many other
names, is a species of yam, a tuber. The tubers are usually vivid violet-purple to
bright lavender in colour. Purple yam remains an important crop in Southeast Asia,
particularly in the Philippines where the vividly purple variety is widely used in
various traditional and modern desserts. Purple yams have edible tubers which have
a mildly sweet, earthy and nutty taste, reminiscent of sweet potatoes or taro. The
violet cultivars, in particular, turn dishes distinctively vivid violet due to the high
amount of anthocyanins. Purple yams are also valued for the starch that can be
processed from them. Purple yam is most commonly associated with traditional and
modern Philippine cuisine (where it is known as ube or ubi). It is widely used for a
variety of Philippine desserts, as well as an ingredient/flavor for ice
cream, milk, donuts, tarts, cookies, cupcakes, cakes, jam and other types of pastries.
It is often eaten boiled, baked, or as a sweetened dessert called ube halayá; the
latter being a popular ingredient in the iced dessert called halo-halo.

Mixing is a case where more is not necessarily better. There is usually an


optimal mix time, which must be determined experimentally. The experiment is
tedious because mixing is determined by measuring the standard deviation of some
critical component. This requires taking multiple samples, at least ten, from various
parts of the mixer at a succession of times. Often, mixing times are determined by
using an easy-to-analyze component, such as salt, but care must be taken that the
results apply to the material of most interest, since it may have different particle
size and density than salt does (Clark, 2005).
The main purpose of this machine is to cook the Ube while mixing
automatically. This machine is designed to cook a large amount of ube and it can sell
more products with one process only.

II. Background of the Study


This machine will formulate through application of knowledge and skills
in Mechanical Engineering Field. Researchers will develop a machine that can
operate a product automatically.
Ube thrives anywhere in the Philippines and in a wide range of soil
types and elevation because it can tolerate adverse conditions such as droughts,
and pest Infestations. However, it thrives best in sandy loam or silt loam fertile,
well-drained soil and at temperature ranging from 25°C to 30°C. Purple yam needs
ample moisture throughout the growing season. The crops can be grown anytime of
the year. But for best results, planting should be done at the beginning or just after
the rainy season when it can obtain all the moisture it needs for growth.
Ube halaya is a Philippine dessert made from boiled and mashed
purple yam. Ube halaya is a type of nilupak (mashed/pounded starchy food with
coconut milk and sugar) which has several variants that use other types of starchy
root crops or fruits. Generally, the term halaya is reserved for nilupak made with
ube, while nilupak is more commonly used for variants made with
mashed cassava or saba bananas. Variants made from sweet potato and taro can be
known as either halaya or nilupak.

One of the main reasons why we design this machine is that this
machine can make more profit and it can sell in Food Industry.

III. Objectives of the Study

The main purpose of this study is to design and fabricate the Ube Halaya
Cooking Mixer Machine. This study should aim:

IV. Scope

The scope of this study is design and fabricate Ube Halaya mixer and cooking
machine. This machine can be use for business purposes specially in San Pablo,
Laguna where Business owners can execute and perform fast, easy and reliable way
for cooking and producing an Ube Halaya. The machine can be operated in simple ,
hygienic and requires fast steps.

V. Conceptual Framework

The main purpose of this study is to design and fabricate the Ube Halaya Mixer
and Cooking Machine. The study should follow the different stages for the
accomplishment of objectives.

VI. Definition of terms

Ube.  A kind of bright purple yam used as a flavouring and colouring in sweet
dishes.

Temperature Controller. a process in which change of temperature of a space,


or of a substance, is measured or otherwise detected, and the passage of heat
energy into or out of the space or substance is adjusted to achieve a desired
temperature

Blender. mixes things together, in particular an electric mixing machine used in


food preparation for liquefying, chopping, or pureeing.

Induction Motor. an AC electric motor in which the electric current in the rotor


needed to produce torque is obtained by electromagnetic induction from the
magnetic field of the stator winding.

Ube Halaya. a Philippine dessert made from boiled and mashed purple yam.
