1 USER INTERFACE

Switching the device on/off

To switch on the device, proceed as follows:

2 BAKING CYCLE

2.1 Introduction
Each baking cycle is preceded by pre-heating (on condition that it has not been set a Delta T”
baking).
During pre-heating the fan is running at maximum speed.
When the temperature detected by the room probe reaches the operating setpoint, the buzzer
is enabled for 3 s. The opening and closing of the door causes the starting of the first baking
cycle phase.
Each baking cycle consists of minimum one to maximum of six phases; at the end of a phase
the device automatically switches to the next.

For each step the device can manage the following settings:

· Baking type:
· Timed (the phase lasts the time set and the temperature remains at the set value)
· Delta T; the phase lasts until the temperature detected by the needle probe is reached at the
core and the operating temperature reaches the delta value set core; the phase lasts until the
temperature detected by the needle probe is reached at the core.
· The operating temperature (only in case the timed baking or core baking is set)
· The Delta T (only if the Delta T type baking is set)
· The humidification
· The phase duration (only in case the timed baking is set)
· Core setpoint (only in case the Delta T baking or core baking is set)
· The fan speed
· The duration of the automatic opening of the vent, intended as fore-end of the (the chimney
opens and remains so for the minutes set at the end of phase).

2.2 Setting the baking cycle


Proceed as follows to set the baking cycle:
1. Make sure the device is switched on and no procedure is in progress.

2. Tap the “manual” button:

2.2 Setting the baking cycle


To select/scroll the baking cycle phases, proceed as follows:

Note: The duration of a cycle set on non-finite time cannot be
modified during baking. START
The duration of a cycle set on a finite time can be modified during
baking, but it cannot be set on a non-finite value.

2.3 Starting the baking cycle


When the baking cycle is switched on the pre-heating starts.
The opening and closing of the door causes the starting of the first
baking cycle phase.

During pre-heating and during the baking cycle the value of the
variables involved in the process and the related setting will be
displayed.
During baking it is possible to blow steam by pressing button ;
the steam from the boiler is enabled below 140°C.

To change the settings, see paragraph 2.2 “Setting the baking cycle”.

At the end of the baking cycle the buzzer is enabled for the time set.

To extend the duration of the baking cycle, proceed as follows:

2.4 Interrupting the baking cycle


To interrupt the duration of the baking cycle, proceed as follows:
1. Make sure no procedures are in progress.
2. Tap for 1 s.

“My Recipes” function allows storing the settings of a baking MY COOKBOOK

cycle in a recipe; when a recipe is started, the device will operate

3.3 Activating a recipe


Proceed as follows to start a recipe:
1. Make sure the device is switched on and no procedure is in progress.
2. Tap the “recipes” button:

6. Tap to enter the recipe setting and modify the data it contains.

4 “SPECIAL CYCLES” FUNCTION

4.1 Introduction
It is possible to start one of the following operating cycles:
- core regeneration cycle
- timed regeneration cycle
- timed proving cycle
- cool chamber cycle
- washing

The following table lists the factory settings of the


core regeneration cycle.

4 “SPECIAL CYCLES” FUNCTION

4.1 Introduction
The following table lists the factory settings of the chamber cooling
cycle; opening and closing the oven door imply no consequences.

5 STARTING A SPECIAL CYCLE

Proceed as follows to start a special cycle:


1. Make sure the device is switched on and no procedure is in
progress.

2. Tap the button “special”:

Note: In the representative image on the left (Start a special cycle)


the special cycle refers to the proving, but the procedure is the same
for all special cycles: regeneration, cooling and washing. For washing
there are 3 options which vary on the basis of the time, quantity and
detergent used.
On starting a washing cycle, make sure there is detergent
in the two trays; align with the 2 drains present in the trays
compartment, beneath the oven.

6 “FAVOURITE CYCLES” FUNCTION

6.1 Introduction
The “favourite cycles” function allows starting one of the last 10
work cycles performed.
It is possible to start one of the following operating cycle types:
- baking cycles set by means of the procedure given in section 2.2
“Setting the baking cycle” (in this case it is possible to start the
last cycle performed)
- recipes of the “My recipes” function
- operating cycle of the “Special cycles” function.

6.2 Starting a favourite cycle


Proceed as follows to start a favourite cycle:
1. Make sure that the device is switched on and that no procedure MY COOKBOOK
is in progress.

7 FUNCTION “PROGRAMMED WEEKLY START UP”

7.1 Introduction
The “Programmed weekly start up” function allows programming up
9 weekly device start ups and the simultaneous starting of a recipe;
see chapter 9 “MY RECIPES FUNCTION”.

7.2 Setting the function Programmed weekly start up

Proceed as follows to access the procedure:


1. Make sure a recipe is stored, the device is switched on and no
procedure is in progress.
2. Tap the button.

Proceed as follows to set the start up day:

It will be displayed the “Planning” page on which it is possible to


carry out the setting. PLANNING

Proceed as follows to access the procedure:
1. Make sure at least one start up is set, the device is switched on and
no procedure is in progress.

2. Tap for 1 s.

10 USING THE USB PORT

10.1 Introduction
By means of the USB port it is possible to carry out the following operations:
- uploading and downloading the settings contained in the recipes of the “My Recipes”
function and in the operating cycles of the “Special cycles” function (hereinafter referred to as
“programs”)
- uploading and downloading the settings contained in the setting parameters.

The upload is allowed on condition that the firmware of the two devices match.

10.2 Uploading the settings contained in the programs


To upload the settings contained in the programs, proceed as follows:
1. Make sure the device is switched off and no procedure is in progress.
2. Insert the USB stick containing the the txt file named “prog.txt” in the USB port of the device
and wait a few seconds.
3. Tap “UPLOAD PROGRAMS”.
4. Tapto confirm.
5. After the upload has finished, remove the USB stick from the USB port of the device.

10.3 Downloading the settings contained in the programs


To download the settings contained in the programs, proceed as follows:
1. Make sure the device is switched off and no procedure is in progress.
2. Insert a USB stick in the USB port of the device and wait a few seconds.
3. Tap “DOWNLOAD PROGRAMS”.
4. Tapto confirm.

10.4 Upload the settings contained in setup parameters


To upload the settings contained in the programs, proceed as follows:
1. Make sure the device is switched off and no procedure is in progress.
2. Insert the USB stick containing the the txt file named “prog.txt” in the USB port of the device
and wait a few seconds.
3. Tap “UPLOAD PARAMETERS”.
4. Tapto confirm.
5. After the upload has finished, remove the USB stick from the USB port of the device.

10.5 Downloading the settings contained in the setup parameters


To download the settings contained in the programs, proceed as follows:
1. Make sure the device is switched off and no procedure is in progress.
2. Insert a USB stick in the USB port of the device and wait a few seconds.
3. Tap “DOWNLOAD PARAMETERS”.
4. Tapto confirm.

11 ALARMS

11.1 Alarms

If an alarm occurs, the buzzer is activated, the display shows the icon and an alarm code;
tap the display centre to silence the buzzer and restore the normal view.
The following table illustrates the meaning of the alarm codes.

All interventions have to be carried out with the device disconnected from the power an
gas supply.
Close the gas valve before disconnecting it from the oven.

ALARM CODE MEANING


ALARM Chamber probe alarm troubleshooting:
Chamber probe check the temperature of the chamber main
consequences:
if the alarm occurs when the device is running, no
baking cycle can be started
if the alarm occurs during an operating cycle, the cycle
will be interrupted
the temperature adjustment output will be disabled
ALARM Core probe alarm troubleshooting:
Core probe same as for the previous case but related to the core
probe main consequences:
if the alarm occurs when the device is running, no Delta
T baking cycle nor core baking cycle can be started
if the alarm occurs during a Delta T or core baking
cycle, the cycle will be interrupted
ALARM Steam suppression probe alarm troubleshooting:
Steam suppression probe same as for the previous case but related to the steam
suppression probe main consequences:
the steam suppression output will be switched off
ALARM Power failure alarm troubleshooting:
No power check the device-power supply connection main
consequences:
if the alarm occurs when the device is turned on or off,
after the power supply is restored the device will shut
down
if the alarm occurs during a baking cycle and the
interruption lasts less than the time set (240min), after
the power supply is restored the cycle will be repeated
from the beginning of the stage during which the
interruption had occurred (if vice versa, the interruption
lasts over than the time set, after the power supply is
restored the cycle will be interrupted)
