Stations Timeline/Notes
1. Pre-closing should not start until 8:00 pm.
2. Serving Guests is the top priority. Team Members need to balance between completing tasks in a timely manner and serving Guests according to the
Introductory Requirements Team Member guidelines.
3. Team Members should only begin and complete tasks according to their assigned station and should not perform tasks in other stations. Only after all
Thoughts/ assignments in their station are complete can they help other stations.

2. When consolidating tea urns, move tea from drive thru to the front counter and take the urn shelf above the coke tower in drive thru back to dishes.
Notes 3. When clocking out, Team Members should “turn in” their station assignment card to the Shift Whiz/Manager to sign off on completed tasks.
4. Shift Whiz: Count registers as they are pulled, or as people leave, rather than waiting until the end of the night to count them all at once. This will help with
time management, office security, and restaurant security as well. The goal should be to get the cash into the Smartsafe as quickly as possible.
Station 1 - •8:00 p.m. - Break down and clean pop tower (Take rack back to dishes)
•8:15 p.m.
8:10 - Stock all cups and lids (all registers)
Station 3 - •8:00 p.m. - Change all trash cans (Front Counter & Drive-Thru); close cans designated by Shift Whiz/Manager
Register (#__) • screens, registers, and credit card machines and stands on Front Counter (including catering)
•8:30 p.m.
8:15 - Collect and clean trays-ensure all logos of trays are facing the same direction, and if lined, the liners are facing the same direction as tray logos
Back Counter
•9:00 p.m. - T/TH/S ONLYcounter

•9:15 p.m. - Stock black condiments, utensils, etc bins (if needed)
•9:30 p.m. - Break down and clean third coke tower (at register 4) (take rack to dishes)
Once all tasks are completed on this list help with any remaining tasks in Drive-Thru.
•8:00 p.m. - Stock condiments, utensils, etc bins
Station 5 -
•8:15 p.m. - M/W/F ONLY - Refill lemonade machine (if needed)
Bagging •8:45 p.m. - Clean and sanitize secondary & top-primary food chutes
This may change depending on when the kitchen closes secondary; please communicate with the BOH Manager.
•9:00 p.m. - Clean and sanitize bagging counter (Front Counter & Drive-thru)

In between tasks help headset area if needed.
• 8:00 p.m. - Stock sauces & ketchup bins
• 8:15 p.m. - Stock napkins, utensils, salad condiments, etc.
• 8:30 p.m. - Stock drink carriers
• 8:45 p.m. - Clean and Sanitize window sill and counter
• 9:00 p.m. - Stock bags - paper, salad & shopping
• 9:45 p.m. - Wipe down register screen, register, and credit terminal at window
•8:00 p.m. - Clean and sanitize dump sink; wipe down towel dispenser
•8:10 p.m.
8:05 - Ensure all coffee pots have been tabbed and wiped down (notify Shift Whiz if not)
•8:30 p.m. --
Clean and sanitize coffee pot holder and coffee brewer
p.m.
• M/W/F ONLY - Break down and clean DIET Lemonade machine
•9:45 p.m. - Wipe down register screens, register, and credit terminal
In between tasks help headset area if needed.
• 8:00 p.m. - Take all small dishes (Front Counter and Drive Thru) back
-Lemon/Cherry bins
• 8:15 p.m. - Clean and sanitize dispensing pipe inside of the ice machine
• 8:30 p.m. - Dump out and take one tea brewer bucket to dishes
• 8:35 p.m. - Stock cups and lids (styrofoam, clear, flat & dome)
• 9:45 p.m - Dump and take second tea brewer bucket to dishes
