CHAPTER I

INTRODUCTION

1.1 Background

In general, sensitive understanding is a condition in which living things

(humans, animals, plants) or matter have a higher level of sensitivity than usual.
Food is a substance eaten by living things to get nutrients which are then
processed into energy. Carbohydrates, fats, proteins, vitamins, and minerals are
nutrients in food that are needed by the body. Liquids used for this purpose are
often called drinks, but the word 'food' can also be used.

Food consumed by humans is called food, and immunologists from New York
say that being sensitive to food is tantamount to food intolerance. sensitive food
for example is lactose or glucose intolerance. Symptoms such as bloating,
diarrhea, constipation, cramps, until nausea. But this cannot happen if our immune
system is strong.

So, if you have allergies or are sensitive to food, you should avoid it. One easy
way is to pay attention to food products to be purchased. Check the product label
again to find out what content it contains. Food intolerance, also known as non-
IgE mediated food hypersensitivity or non-allergic food hypersensitivity, refers to
difficulties in digesting certain foods. It is important to note that food intolerance
is different from food allergies. Food intolerance is far more common than food
allergies.

The onset of symptoms is usually slower and can be delayed for hours after
eating the offending food. The symptoms can also last for several hours, even up
to the next day and sometimes longer. Intolerance of some foods or groups of
foods is unusual, and it can be far more difficult to decide whether food
intolerance is the cause of chronic illness, and which foods or substances are
responsible. Food intolerance occurs when you lack the enzymes needed to break
down certain foods, triggering the digestive response. Examples are people with
lactose intolerance, which means they lack enough lactase enzymes to break down
sugar in milk, which results in digestive problems. Intolerance generally occurs in
families.

CHAPTER II

THEORY

2.1 Definition of sensitive food

Sensitivities Food include many different types of sensitivities to food

which may arise for a wide variety of reasons making it a complex, oftentimes
confusing and not easily defined area of study. Diagnosis can also be difficult
because symptoms may be delayed for up to two days after a food has been
consumed. In general, food sensitivities are the result of toxic responses to food
and are divided into two categories: allergic responses; and food intolerances.

Sensitivities Food and intolerances are more common than food allergies,
according to the British Allergy Foundation. Neither involves the immune system.

A food triggers an intolerance in your digestive tract. This is where your

body can’t properly break it down, or your body reacts to a food you’re sensitive
to. For example, lactose intolerance is when your body can’t break down lactose,
a sugar found in dairy products.

You may be sensitive or intolerant to a food for a few reasons. These include:

 reactions to food additives or preservatives like sulfites, MSG, or artificial

colors
 pharmacological factors, like sensitivity to caffeine or other chemicals
 sensitivity to the sugars naturally found in certain foods like onions,
broccoli, or Brussels sprouts

2.2 Difference between a food sensitives and allergies

Sensitivities Food (or intolerances) and true food allergies can have similar
symptoms, but they are not the same. A food sensitivity or intolerance refers to
the body’s adverse reaction to food but does not involve the immune system.
Food intolerance stems from problems with digestion or metabolism, often
involving a defect or deficiency in an enzyme in the body. The majority of
adverse food reactions are considered sensitivities.

A food allergy refers to a response by the body’s immune system to a food

or a component of a food, reacting to it as though it’s harmful and creating
antibodies to it. When the individual eats that food, the immune system releases
large amounts of chemicals to protect the body. These chemicals trigger
symptoms.

It’s important to understand the distinction between allergies and

intolerances because although food intolerances can be unpleasant, they rarely
pose an immediate threat to health. In contrast, food allergies can cause serious
health problems and even can be fatal.

2.3 Characteristics of Children who are Sensitive to Food

 Nausea and Vomiting

You will release the mysteries that accompany it, such as nausea and
vomiting. Under these conditions, you should look at the heart's diet, for example
they consume eggs or milk at breakfast, then ask for nausea and vomiting.

If this continues to happen, you should be able to consult a doctor.

 Asthma

This sign is generally shown in those who are sensitive to food made from
sulfite preservatives. These chemical compounds can be found in chips, dried
fruit, and baked goods.

 diarrhea and stomach ache

The most common signs shown in those who are sensitive to food are
digestive disorders such as diarrhea and abdominal pain. we often misunderstand
and assume that this happens purely because of disease. Therefore, we should pay
attention to daily eating patterns
 Headache

Food sensitivity can be characterized by headaches. This is in response to the

inflammation experienced by their body. Therefore, it is important for us to pay
more attention to foods that can be a potential cause of such sensitivity.

2.4 The symptoms of food sensitive

Signs of food intolerance are bloating, diarrhea, gas in the stomach, and stomach
pain. Some patients also have coughs and colds. Others present with itching.
These symptoms can show a few hours after consuming food that can not be
digested. Again, there are differences with allergies, because allergic symptoms
almost always appear immediately.

A sensitive Food may be to blame :

 Acne
 Brain Fog
 Eczema
 Dry and itchy skin
 Bloated stomatch after eating
 Fatigue
 Joint Pain
 Reflux
 Migraines
 Depression and Mood swings
 Runny Nose
 Headache
 Trouble sleeping
 Dark circles under eyes
2.5 The cause is the occurrence of food sensitive

A food sensitivity is a diffuse, and as yet poorly understood reaction to food that
may be associated with increased levels of certain IgG class antibodies that are
reactive to that food. Unlike a food allergy, the symptoms can be delayed for a
few days after ingesting the trigger food. An example of this is a gluten sensitivity
or peanut sensitivity. People who have food sensitivities can go a lifetime without
ever knowing they have one due to delayed reaction times and vague symptoms
that mirror common ailments.

Causes of food intolerance include:

 Absence of an enzyme needed to fully digest a food. Lactose intolerance is

a common example.
 Irritable bowel syndrome. This chronic condition can cause cramping,
constipation and diarrhea.
 Sensitivity to food additives. For example, sulfites used to preserve dried
fruit, canned goods and wine can trigger asthma attacks in sensitive
people.
 Recurring stress or psychological factors. Sometimes the mere thought of
a food may make you sick. The reason is not fully understood.
 Celiac disease. Celiac disease has some features of a true food allergy
because it involves the immune system. Symptoms often include
gastrointestinal issues as well as those unrelated to the digestive system,
such as joint pain and headaches. However, people with celiac disease are
not at risk of anaphylaxis. This chronic digestive condition is triggered by
eating gluten, a protein found in wheat and other grains.

- Common Culprits

While food sensitivities vary from person to person, there are some common
culprits often associated with food intolerance. These include:

 Egg
Gluten-containing foods( wheat, rye, and barley)
 Corn
Food additivies like sulfites or artificial color
 Dairy Products
Beef, pork and lamb(a lot of livestock is raised on corn and soy)

Here are a few examples: dried fruit, stone fruit, cherries, apples, mango,
papaya, sour cream, cottage cheese, yogurt, milk from cows, sheep or goats,
beans, lentils, squash, garlic, mushrooms, cabbage, broccoli, onions, coffee, high-
fructose corn syrup, agave and artificial sweeteners. Sorry, chocoholics, chocolate
unfortunately falls into this category as well.

2.6 Tips to help you steer celar of those trigger foods

 Educate yourself. Learn about ingredients in the foods you eat. It’s not
uncommon for eggs, wheat, milk and other reactionary foods to be called
by other names.
 Educate others. Depending on the severity of your symptoms, it may be a
good idea to tell anyone preparing your meals about your food
sensitivities. That includes family, friends and waiters. At restaurants, it’s
always smart to speak up about your sensitivities since many times, these
everyday ingredients can pop up on your plate without your knowledge
and navigating the menu can be confusing.
 Stock the pantry. For those who suffer from sensitivities to common
foods (like gluten), it’s important to stock your pantry with safe foods and
appropriate substitutes to keep you on track and to reduce cravings.
 Pay attention to labels. Manufacturers can change ingredients of their
products without notice, so double-check ingredient labels every time you
buy a food, even if it is something you buy over and over.
 Our customer service team is on hand to answer questions and help you
better understand your results. As always, we encourage you to share your
results with your healthcare provider.
 Join the conversation. Once you take an Everlywell Food Sensitivity test,
you are welcomed and encouraged to join our closed Facebook page to
share stories and helpful tips with others who also live with sensitivities.
