Melanie Lynn’s Flour
Blend Recipe
4 cups brown rice flour
1 cup potato starch
½ cup sweet rice flour
2 Tablespoons coconut flour

The easiest way to mix this flour blend is to mix

the coconut flour, sweet rice flour and potato
starch first. Make sure you can no longer

distinguish any of the individual flour.

Now mix in the brown rice flour. Using a round-

bottomed bowl will make sure that flours do not
get caught in the “corners” of the bowl. Stir all of
the flours together until fully combined.

Coconut flour is high in fiber making it very

absorbent. It is a great addition to these
recipes as rice flour needs heat to really open
up and absorb the liquid in the batter. The high
fiber content in coconut flour has also been
found to have a glycemic lowering effect.
Meaning that the sweeteners in these recipes
will not have the same impact on your blood
sugar as you would get with refined flours. It is
a good source of medium chain fatty acids and
has been shown to lower LDL levels. So if it is
such a power house why not use it as the main
flour? That is actually where my gluten free
baking adventure began. Using coconut flour
alone makes a very dense and often dry final
product and you will always have that very
distinct coconut flavor present. Again, coconut
flour is a whole food ingredient that I can
